I just wanted to reiterate the magnesium issue. There have been a couple of studies on the need to make sure celiacs, in particular, are getting enough magnesium (and vit D) for the body to use the calcium in building bone. Vit D shouldn't be overlooked either, particularly in light of the recent studies that the overuse of sun-screen in some populations... -
When I share my recipes, I note that they're gluten free. I talk freely with coworkers, friends, random strangers (in real life) about what it is and what the ramifications are. That's about it - I'm a word of mouth machine. :-)

the california rolls are made with fake crab (so, not safe) but they have a very interesting vegetable roll that's good. (and the plain shrimp nagiri is fine too, of course.) but you can still have chicken noodle soup if you make it from scratch (though I find chicken rice works better for leftovers). I don't know if you've had any trouble finding a good chicken soup, but I can post my "recipe" if you like. -

There may be other causes of intolerance to gluten than celiac disease, but the genetic cause of celiac disease, and the variation in the immune antibodies it produces, has been well researched. There's a reason there's a genetic test for it. -

peanut butter should be nothing but peanuts and salt. it's called 'butter' because it's ground to something that has the consistency of butter. (same thing for other nut butters like almond and soy.) Food allergy testing won't necessarily find food intolerances. (IgG intolerances aren't picked up by IgE testing.) Can you give us more information on the testing you did have? Alternatively, sometimes testing just isn't sufficient, and you have to try an elimination diet (that's how I found out about dairy). But yeah... if you told the doc that your...

Have you tried identifying other food intolerances? You say you did see some improvement in some symptoms going gluten-free, so the change in diet likely made a difference, but not feeling well is a problem! You might want to see if dairy is giving you a problem (it gives me similar problems to gluten) or soy or other foods. BTW, that does NOT sound...

The yeast and water temperature may have been part of the problem, particularly the water temperature. The water should be warm (I believe right around 100F) but not too hot. (If the water isn't in the right range, it won't activate the yeast.) You might find it helpful to bloom the yeast before putting it in by mixing it in and letting it sit in the warm... -

Depends on what you're going to do with it. Mixers are much more multipurpose than breadmachines, but mixers won't do all the steps of making bread. Are you going to only be making bread with this, or are there other things you make that a mixer would be nice for (other baked goods, mashed potatoes, custards, oooo... anything you'd use a hand mixer on... -
If you feeling better while smoking is related to the celiac disease, then hopefully now that you're gluten-free, you won't feel worse when giving it up this time! :-) Good luck!

I'm afraid that's a bad idea - and incorrect information. Spelt is closely related to wheat (same genus, different species - it's still a triticum), and it still contains the protein sequence that celiacs react to. Some people with a wheat allergy (which is different) may not react to it (the reaction involves, to my understanding, a different peptide sequence... -

Take a look at the Celiac.com list of Forbidden Ingredients. It'll list all the other names of wheat or wheat-related grains. From what I understand from reading around here and other sites, grain mills vary as widely as cars - and that includes having different purposes.
