I made the above recipe and it came out pretty good! DD really liked it. I also made the matzah balls with Barbara's potato flakes and the first time I made them I made large balls and they came out great - they even froze well. DD liked them so much she ate all 8 before Passover and I had to make more. Unfortunately, I figured I would be clever and make...

ARCHIVED Celiac Traveling Bear
junieb replied to mrsnj91's topic in Parents, Friends and Loved Ones of Celiacs
We did this in Dec - my daughter loved it! The bear went everywhere with us for 3 days. He even did yoga with her and came with us to one of the GFRAP restaurants! After we sent the bear back I went to build-a-bear to buy the same one that visited her because she was so sad to see him go and wanted to keep him with her. It was a great experience and gave... -
ARCHIVED What's Your Favorite Cereal?

My dd actually loves the amaranth snaps in cocoa and cinnnamon. She didn't like the plain ones, unfortunately - those are the ones with hardly any sugar. -
ARCHIVED What's The Scoop On Chocolate Bars?
junieb replied to elye's topic in Parents, Friends and Loved Ones of Celiacs
Plain Milk Chocolate Hershey's Bars in the 1.55 oz size are made on dedicated machinery (ONLY that size). The other sizes share lines. Plain kisses are ok too. -
ARCHIVED What Is The Problem With Bob's Red Mill?
junieb replied to junieb's topic in Gluten-Free Foods, Products, Shopping & Medications
Hmmmm.... dd is at the beginning stages of healing, so I wouldn't want to trust a product just because it doesn't make her sick; I don't think we can gauge by that yet......especially since some people can have damage without any external symptoms. That's what makes me nervous. I hadn't heard of any specific problem with them - I know they produce lots... -
ARCHIVED Mi-del's
junieb replied to GlutenFreeAl's topic in Gluten-Free Foods, Products, Shopping & Medications
If you look at the back of the bag you will see not only gluten-free varieties listed, but a "wheat-free" one as well - this wheat-free-but-non-gluten-free flavor is run on the same lines as the gluten-free ones. -
ARCHIVED What Is The Problem With Bob's Red Mill?
junieb posted a topic in Gluten-Free Foods, Products, Shopping & Medications
I see a couple of people have mentioned below that they are nervous about using Bob's Red Mill gluten-free flours. Is there a problem with their gluten-free line? I thought their gluten-free line was totally separate from their non-gluten-free line. Was there an issue at some point in the past? Thanks. -
ARCHIVED Baker Baffled By Bean Breads
junieb replied to Mike12345's topic in Gluten-Free Recipes & Cooking Tips
I think something that helps me tremendously is that the loaf pan I use is the stoneware one from pampered chef. The breads stick horribly to my pyrex no matter what I do to grease and flour it beforehand. One option if the breads are not cooking through is to just remove some of the batter before you bake it (put it in another pan, a mini-loaf pan, etc... -
ARCHIVED Guiltless Gourmet Products

I spoke to them on the phone and was told the same thing - all the chips are gluten-free. Same thing with Lundberg, btw (actually, all their products are gluten-free except a couple of the risottos, so we do not use any of the risottos but love all their other stuff). -
ARCHIVED Do You Like Hershey's Bars?
junieb replied to danikali's topic in Gluten-Free Foods, Products, Shopping & Medications
The only hershey's bar I will use is the Milk Chocolate 1.55 oz bar - it's made on it's own machinery - nothing else is run on there at all. According to them the plain kisses, syrup and baking cocoa are also safe. I will call on monday to re-check but I have a feeling the products that are supposed to be safe are. One of the definitions of celiac disease... -
Are you making the large loaf? Try the medium size - hopefully the middle will cook better.

ARCHIVED Baker Baffled By Bean Breads
junieb replied to Mike12345's topic in Gluten-Free Recipes & Cooking Tips
I made the Bette Hagman Touch O' Bean bread (Bakes Bread) and the consistency came out great. DD was not so thrilled with the taste though. I have not tried gluten-free breads in the bread machine yet but I'm having a lot of luck with the regular hand making. I use my Kitchen-Aid mixer. I have to say, I found a GREAT bread - Tapioca Rice Bread (GFG revised... -

Ok - I actually don't use this product so I don't even know if it's gluten-free - so please check on it first - Vance's Dari-free. I don't remember what it's made of - maybe potato? -
ARCHIVED Anyone Know If Quaker Oats Are Safe?

We were told by the celiac center at columbia university that McCann's & Country Choice were both safe brands to use. -
ARCHIVED Lays Chips
junieb replied to lizzy's topic in Gluten-Free Foods, Products, Shopping & Medications
Now I'm very confused. When I called Frito-Lay they told me not to use any of their products because of possible CC issues...... I wonder if maybe the regular machines could be in close proximity to the gluten-free lines and there could be a problem there, due to the non-gluten-free flavorings on some of their products. Maybe they are dusted on on something... -

Wellshire Kids - same brand as the dino nuggets. Applegate Farms can be found at Whole Foods / Fresh Fields (I think their other name is Bread & Circus.). Perhaps a local health food store would order a certain item for you. -
ARCHIVED Taco Shells?
junieb replied to junieb's topic in Gluten-Free Foods, Products, Shopping & Medications
Thanks everyone! Carrie, I would love to have that recipie. Thanks again! I'm psyched - I found Bob's Red Mill TVP - it's made on their gluten-free line - veggie tacos, here we come! -
So far every company I have found makes wheat tortillas also. Even Bearitos told me not to use their products . Does anyone know of a company that makes taco shells that does not also deal with the wheat tortillas/enchiladas? I wish Lundberg or Guiltless Gourmet made them! Thanks!

ARCHIVED Typical Symptoms In Young Kids?
junieb replied to a topic in Parents, Friends and Loved Ones of Celiacs
Wow - "pasty", as you described it, is EXACTLY how I would descrie dd's poop when she was in diapers (when she potty trained at 3 1/2 I described them as "mushy". They were never formed by any stretch of the imagination. She had at least 5 poopy diapers a day. The smell could have killed an elephant. And, as luck would have it, she didn't like the rice... -

You're right in thinking it's not just a GI disease, and the researchers seem to be finding this out too - there is a lot of talk about the neuro symtptoms in the newest research. Also stuff about other areas in addition to neuro. -
ARCHIVED Self-diagnosis Of Celiac Disease In Young Son
junieb replied to T-Beth's topic in Parents, Friends and Loved Ones of Celiacs
Yup. Awful, nightmarish mush poops since birth (formula). More symptoms were apparent as she got older. Finally at 7yo, after complaining for years to several of her drs about the several symptoms that were indicative of celiac disease, I really figured it out when someone else I know was dx and that little girl had the same bloated belly. I asked them... -

junieb replied to cherie012's topic in Parents, Friends and Loved Ones of Celiacs
LOL!!!! I had the same feeling when dd just last month, at 7y, had the same thing!! I couldn't believe there was just 1 big poop in the toilet. I didn't realize how gross it always was until I saw this 1st normal one.....36 hours after eating her last bite of gluten. And, the horrible foul smell is no longer there! Her belly is noticably less distended... -
ARCHIVED Question For Parents With School Age Kids
junieb replied to Smunkeemom's topic in Parents, Friends and Loved Ones of Celiacs
Hi! A 504 can insure that your child's needs are taken seriously and sometimes this pushes the staff to pay a bit more attention. It's kind of like a legal backup for you. There are many things that could lead a child to having a 504. It makes sure you have a team of administrators meeting with and listening (hopefully) to you and the info that you bring... -
Hey Jillian - I'm right near you, in Bergen county! I would love to know which restaurants! We are seeing Philip Kazlow at Presbyterian. We have Whole Foods near us. DD's metabolic dr is at WCMC so I sometimes go to Mrs. Green's. We used to live in Hartsdale. Talk to you later!
