  1. Nikki, that is something I didn't know, that they really let you know if it is actually gluten-free or has codex approved standards. That makes the choice much easier. I know the bread I bought in Germany said gluten-free, and it didn't contain wheat starch. Otherwise I wouldn't have bought it.

  9. Why don't you just bring in some gluten-free cereal that contains nuts and milk (or rice milk) as well as some fruits? You could get disposable bowls and spoons if the school won't supply them. It won't be cheap, but it would be easy.

  13. Debbie, personally, I wouldn't eat anything with wheat starch in it. Too many people with celiac disease react to it. It is entirely your choice if you want to take the risk. After being gluten-free for a few months, you would need to eat the equivalent of four slices of bread a day for at least three to six months to even have hope of getting an accurate test.   19. I will use lard (melted) for a lot of my baking, because of intolerances to most oils. It all comes out tasting great. You may also want to try non-hydrogenated coconut oil. There is a casein free butter out there, I think it is called 'ghee', but have never tried it (I have no idea where to find it).

  21. I believe that all the treatment she might need is the gluten-free diet, rather than medications. Celiac disease can cause constipation, not just diarrhea. You will need to eliminate dairy as well, at least for a few months, in order for her to heal. Dairy is well known for causing constipation as well. And soy is no good, either.     You may not have been glutened. Rice and beans sometimes (not always, strangely) give me similar symptoms as gluten. Gluten is a lectin, and lectin foods include all grains (rice is a grain) and beans, amongst others.
  23. The Enterolab tests will be accurate up to a year after starting the gluten-free diet. So, you don't need to wait until after you get test results to eliminate gluten. Yes, corn chips, tortilla chips, potato chips (make sure they are gluten-free, only plain ones are safe) can be used with hummus. I hope you get it figured out and you both feel better...
