You can certainly make gluten-free pies, and my daughter made apple crips with buckwheat flakes instead of oats the other day, and says it was delicious. For the apple crisp just substitute buckwheat flakes for the oats in your recipe. -

It depends on your level of damage. I was completely unable to eat anything raw for six months when starting the gluten-free diet. Do get a copy of the blood test results. Who knows what at your lab they consider a celiac disease blood test. In order to get an accurate diagnosis there are five tests for celiac disease as far as I know. If they didn't do them all, then you may be right. Besides, there could have been a mix-up of your blood with somebody else's. It happens. Can you... -

Somehow oats don't agree with me. The protein in oats is very similar to gluten, and some people aren't just having a reaction because of contamination, but rather because they are intolerant to the protein in oats as well.

Maybe wearing socks would help? I found that when I had hives, and I scratched, they would spread and get really inflamed, red and terribly swollen. And of course, that would be awfully annoying and drive me crazy! I still sometimes get that, but not nearly as often.

You might be right. But I found that finally my allergies are getting better because of treatment for Addison's disease. Apparently low aldosterone causes allergies and intolerances. It sounds like you have adrenal fatigue and/or hypothyroidism. Which are both quite common with celiac disease. The added stress you are under now will make it worse. It isn't possible to clean a plastic strainer completely of gluten, as it is just too sticky (they make industrial strength glue from gluten - glue comes from gluten). In your recipes you can just substitute gluten-free alternatives, and your soups will turn out the same, nobody will even notice the difference. Good substitutes for flour are light buckwheat flour (my choice), corn starch. You can use rice or corn noodles instead of wheat noodles. -
I don't know if it could be DH, but it certainly sounds like an allergic reaction to the hay (those may be awful hives, that would happen to me). Yes, it is absolutely possible. There are people here who's only obvious symptom was anemia, yet their villi were completely destroyed. Some people have no obvious symptoms at all with celiac disease. You might feel lethargic, have brain fog, aches and pains from gluten, yet never connect the dots and suspect celiac disease. Well written! I could somehow make that apply to my doctor and Addison's disease as well. In fact, I had to self-diagnose everything I've got, as she is incapable of looking past lab numbers. I also have never heard that lung cancer could be caused by gluten. It is cancer of the intestinal tract that is associated with gluten. Sara, the macrobiotic diet is very unhealthy. Linda, when you say you used Enterolab for the stool test, what were your results? Are those negative tests you tell about a blood test, or were those negative at Enterolab? I am a little confused. -
Have you eliminated dairy? Those symptoms sound like a dairy and/or soy intolerance to me. If you are diligent in avoiding gluten (including in your personal care products) and avoiding cross contamination, then it is probably another intolerance that keeps you from feeling better.

Everybody needs a family doctor for emergencies, and to get referrals to specialists if needed. Other than that, I see no good reason to have a doctor telling you that you need things you don't.
