  1. My first taste of gluten-free bread was rice bread. First I put it in the toaster, then I had to take the toaster apart to get all the burnt crumbs out. Then I tried to butter it, well that piece of bread disintegrated as I spread it on it, so I melted it and poured it on. When I tried to eat it, it fell apart and all down the inside of my shirt into my bra.

    I can honestly say that gluten free bread is the only bread that I don't have to worry about Thor (cat) trying to eat. I bring it in, he sniffs it and then looks at me like I am nuts.

  2. i feel your pain for years doctors told me that it is in my head. finally called doctor and told him he had to do something i ended up having dermatitis herpetaformis which is an allergy to gluten. had biopsy of stomach and also have sprue. so keep on your doctor till you find out. good luck!!!!

    I saw the dermatologist who said I couldn't have DH because it was in other places and not the normal places, he was suprised I was gluten intolerant because of my weight. I informed him I know other people with celiac disease who have the same problems right down to the weight. He stood there shocked. I then asked him to do a skin biopsy. We shall see, what becomes of this. I so wonder why doctors can't look outside of the box.

    I will not go back on gluten again. Even being back off gluten for one day the itchiness has considerabley subsided. I am so sick and tired of the medical profession. Last week when I had to be on gluten, I felt so sick and cried for the first two days because I was back on it and the only reason I don't feel great yesterday and today is because of gluten residue still in my body.

  3. I do not eat a lot of meat, never have. I am allergic to what they are shooting into the critters and the red dye in the beef. Not only that but I only really like seafood or poultry. When I get my poultry it is from a man whose chickens are free range, no antibiotics etc.

    I would have been the worlds worst farmer because I could never kill anything I raised or looked at everyday. On rare moments I will eat ham or back bacon. I love certain types of seafood but it is so expensive I can't eat it all the time.

    Many times I do a vegetable stir fry with tofu, or a seafood lasagne with goat cheese in it.

  4. I find when I have been gluten-free or not glutened, I have no interest in sweet things. Actually they taste so vulgar I have tossed it out. Soon as I have been in the gluten or glutened by accident I go wild for the sweet things. I am never so happy as when I have my test on Monday then, I can be gluten-free again and I never want to go back to gluten again. I have gone wild this week with the sweets etc.

  5. I agree, you don't have to starve. The bread may cost a little more but you can get some good bread mixes. You can get vegetables, frozen shrimps, chicken ( I pay a little more for my chicken it is free range no drugs or antibiotics). I make stir frys all the time and have rice with them. I use Tamari soy sauce check to make sure you get the wheat/ gluten free. Check some of the chinese sauces and many do not contain wheat/gluten. Lots of nice fresh vegetables. fruit, refried beans. I make enchiladas with my own sauce on corn flour tortilla's and tacos. I find no problems staying gluten-free because I do have lots to choose from. As long as you aren't into the prepared foods you will do fine. I have celimix pancakes and they are great. Old Tyme or Behive syrups are all gluten-free.

All my life I have had health issues, kidney etc. When I was 20 I got asthma, allergies etc. The last 6 years were the years of my anemia, and other weird things along with skin things which is probably DH. My burning stomach started 6 years ago and so did a great deal of my teeth, hair and stomach problems. So this could have been an underlying thing my whole life.

  7. Right now I feel like one big itch machine. I thought perhaps it might have needed to be on both calves but then that is fine. Sometimes I itch without a rash. My face, back and chest always get it the worst, right now I look like an adolescent with zit face but it is not pimples. I never started having any of this till 6 years ago when I had the anemia, then a strike at work, then thyroid etc. I can't wait till this week is done.

  8. Has anyone ever had a nasty itchy burning rash on their calves or one calf. This is a new happening. I am on my one week of gluten, which I never want to repeat again. This is so the dermatologist can get a good look a these things and do a skin biopsy. This is the first time I have had a reaction on my calves, but it is only one calf. So, I was wondering if anyone else has gotten this on a glutening.

    When this week is finished I will not have gluten again. I have never felt so awful in my life. There isn't one part of my body that doesn't itch, my head aches and everytime I have had gluten I feel a half hour or such later so very sick.

  9. Yes, Earth's Oven is great. I have the cranberry bread and the carrot and zucchi bread. I have decided the save the cranberry bread for stuffing the turkey at yule. They also have killer cookies and muffins and the pizza crust is great. I spent a killing there last time. I also shop a lot at amaranth, I find them less crowded and more stuff than Community. Community is on my way home from work and Amaranth is close to home. Welcome to the group. If you haven't been to the Celiac Association, they have a great info package they give out.

  10. It depends on what I have eaten. Yesterday it took no more than 20 min for me to get so tired and have my face break out with just one cookie. If I eat bread it can be very drastic and fairly quick with crackers it can take an hour or so, and some times less. So times it takes longer with more extreme longer lasting effects and some times it happens fast with either minor or nasty effects that can last longer than two weeks or last two days. It also depends on what I eat the next day on how bad the breakouts get. I also get the brain fog and get very nauseous and sometimes dizzy.

    I have noticed extreme fatigue very quickly and instant relapse with washroom issues.

  11. I don't consider having this a good thing. I do know, even after being gluten-free for two weeks how horrible I feel on gluten and how my skin breaks out instantly with the gluten. Is this positive or negative. In some ways negative there will be things I miss, but it is positive because I know how good I can feel without gluten and horrible I feel with the gluten. It is positive because we are not alone and we can educate others and that includes the medical profession.

    When this week of gluten is over, I know I will not go back to gluten. I had no problem staying gluten-free, and I attribute that to having people who support me and to living alone. It is easier living alone and doing this than living in a house full of people and trying to do this.

    This in a strange way is like a person who has been an alcoholic or drug addict. They can never stay clean if they are in a house full of people still doing those things. For a person who is celiac disease or gluten intolerant they stand the chance of being glutened when others in the house have glutenous products.

    We all need people we can talk to and vent to who understand what we all go through and how we all feel.

    I will never be happier than when this week is finished and I can go back to being gluten-free. I have to do this so the dermatologist will be able to get a proper skin biopsy.
