  1. Scones were one of my favorite things to eat, so here is a recipe I tried out and loved! I got it from a cooking class at Central Market.

    2 oz of garbanzo flour

    3oz of brown rice flour

    pinch of salt

    1 1/4 tsp baking powder

    3 oz grated sharp cheddar

    1 oz butter

    6 tablespoons of buttermilk

    Preheat oven to 400 degrees

    Mix the dry ingredients and cheese together, then rub the butter in as though for a pastry.  Mix in the buttermilk.

    knead the dough lightly on a floured surface and then press it out at about 1.5 inches thick. Cut out rounds or triangles. Lay out the scones on a floured baking sheet. Place them in the hot over for 7-15 minutes (depedning the on the zise of the scones). They should be lightly tanned but not burned!

    They were delicious...at least to me! :)

  2. Rusla, I get the flu shot in Canada every year and I do ask, and have never come across one that has Wheat in it. I wonder where that one came from. Perhaps the normal ones ran out and they brought in a batch from somewhere.

    I am in western Canda too. I don't know but I know some have dairy in them which is equally as as bad. I ask every year what the fillers and base are, I won't take them again. That year there were other people who had reactions to that vaccine and they also had wheat and gluten sensitivities. I don't know maybe it was a bad batch but I made sure I ask from now on. Just like my dentist was going to try a new sedative on me. I was sick for three days, hives, migraine headaches they told me that the fillers were egg, dairy and gluten. I told them never to do that again without clearing it with me first.

  3. I just wanted to share this with all of you. My husband ate the gluten-free dinner I made tonight and liked it! I was shocked because he hasn't wanted to try anything new. I am Italian and already missing my old meals. So, when life throws corn tortillas at me, I make lasagna! It was so good! I am not a gourmet cook or anything but this came to me and I threw it together.

    I used all gluten-free ingredients, any brand would work fine. I call it Mexican Lasagna.

    In a casserole dish, I put some salsa (the jar kind) on the bottom, then layered corn torillas, refried beans, ground beef (browned), onions, cheese, salsa. I topped that layer with more corn tortillas, salsa and cheese, green onions and olives. I baked it at 350º for about 45 minutes. It was so good! Next time, I might add some green chilis or something. I used mild salsa and it was a tad bit plain but it was still very good.

    The great news was that my husband liked it and said I need to make that again.  :D

    There are rice pasta lasagne noodles out there, I have used them. I have a pesto lasagne recipe to die for, it contains no meat but you use tofu and I put mushrooms in it, sometimes I put in shrimps, instead of tomato sauce I use pesto sauce and no one even knows tofu is in until I tell them.

    Of course, I didn't even ASK about soy products. Here's MY response to them:

    Thank you for your prompt response, but I am not writing about soy products, I am writing about milk, cheese, yogurt and margarine and butter products. For example, does a 4L jug of homogenized milk also contain gluten? Does your chocolate milk contain gluten? Gluten is a protein found in wheat, rye, barley (malt), oats, triticale, spelt and kamut. My son cannot ingest gluten, he will get very ill.

    I am looking for a list of gluten free products from your COMPLETE line of products, including Astro and Beatrice yogurt, Lactantia spreads, Parkay spreads, Black Diamond cheese and cheese strings, Sargento grated cheese, etc.

    I would appreciate a gluten free list for ALL products falling under the corporate entity known as Parmalat. So, a gluten free list for all Beatrice products, all Black Diamond products, all Astro products, all Lactantia products, etc.

    We'll see what happens. They need me to buy their products after all. I am a Valued Consumer.

    I don't know how many of you know about Tofutti brand products butthey are totally dairy and lactose free. I have emaild them as to what of their products have gluten in them. So far from their site it appears that all entree's, and cakes and cookies do. Their hard cheeses don't seem to have casein in them which would be just grand. I am waiting for their reply back and will post it when it arrives.

    In Canada, you do not get to read flu serum packages you have to haave doctor or nurse at a health clinic administer them to you. I had the flu shot once because I am severe asthmatic. The next time the serum changed and it was a wheat/egg base and I was sick for months and my arm swelled up, was red and itched the whole time. I would ask your doctor or pharmacist what is in the vaccine. Needless to say I take my chances on getting the flu now because the cure was worse than the ailment and if I have another allergic reaction who said it won't be bad enough to kill me.

  6. My mom swears by this diet as truth - she is an O. My doctor, an osteopath, also refers to it often. My sister, a biochemist, thinks it's a bunch of hooey. I know a good bit about it, but I don't follow it. I think there may be a connection as to what foods are better with a blood type, but I think it's more likely got to do with the levels of pro-bacteria and enzymes in my belly.

    My husband and I are both type A+, CMV negative. We eat like night and day. Meat is very difficult for me, but he would eat it only if he could. I would probably be fine never eating it. He loves high fat, manly food. I like lighter foods. It goes on.

    Genetic make-up, digestion and general population that Dr D'Adamo studied play a big roll in this. When I was on it I never broke out in blisters on my face, my hair and skin were never better, my stomach didn't burn, I lost weight and I ate gluten free bagels. I felt great and I did not eat any wheats or gluten. I kept to the rice pasta and used pesto sauce. The A diet is me for most of it, with the veggies and seafood, poultry. After this weekend I will go gluten-free again and follow that diet to see what happens.

    Unfortunately here if you have to do a special gluten free diet you can not deduct it off of income tax however if you are celiac you can. The gluten free food is very costly but if it is suffer or pay and not suffer. I will take the latter.

    My daughter-in-law did this diet and she said she has never felt better in her life and lost weight etc.

  7. Methinks your family doctor is confused. That's not surprising - most are.  If you are positively not celiac now you won't be celiac in 3 months. If you go gluten free only genetic testing or stook sample testing can tell anything for sure. Blood work will be a negative.

    Maybe you need to go higher up the medical nerd chain.  Claire

    The problem here is I had a GI 5 years ago who only wanted to do bone marrow tests,he refused back then to believe my thyroid and pernicious anemia were a problem when they did show up in tests, he dumped me and made sure no other GI would see me in the city. My doctor tried to find me another GI but none would see me. When the thyroid showed nodules in my ultrasound and

    extreme high antibodies no endocrinologists would see me because they wanted my nodules to get bigger instead of trying to shrink them. My family doctor did try to refer to another GI this week and had listed the fact I have lost 11 teeth in less than 5 years, gained 175 lbs, burning stomach the things that breakout on my face, wrists and upper arms, etc.etc. they said to notify them if the test show something different.

    I am so angry with doctors, they don't care and then one of them said I would have to wait more than 24 months to get in to see them.Of course they have tried to blame this constantly on my being post menopausal.

    I did not have gluten for two days prior to the test and I wonder if that had anything to do with it, I didn't plan it that way and it just happened that way.

    My family doctor is frustrated with them and so am I. If anyone has any other suggestions, I would love to hear them but going to GI or even Endocrinologist is out of the question. They want to see me grow three heads then they will maybe see me.

  8. I eat the Envirokidz Corn Flakes (I think they have Lemurs on the front) -- they are fine for me.

    I also enjoy Cocoa and Fruity Pebbles -- those are my favorites!!!

    My favorite of the Envirokids is the Gorilla Puffs or whatever they are called. They have the gorrilla on the front and I love them and no problems with them either. I often just eat them out of the box.

  9. You might be alergic to RAW eggs. Some ppl are allergic to raw eggs and not cooked eggs. Sounds silly, I know, but its true acording to my son's doctors.

    I never equated the eggs in there. I do have egg problems, I can't eat them when I am depressed because by the time I am finished eating them I want to jump off a bridge, that usually applies to soft boiled or poached ones. I can't have any medications with dairy or eggs in them such a s flu shots, I am sick and swollen for weeks. Thanks for reminding me of that. I could never figure out why the dough made me sick.

  10. I haven't found any yet, unfortunately. Beef jerky might be an alternative (if you can find any that don't have forbidden things). You can buy jerky guns, and make your own jerky in your oven. I'll have to look into that, as homemade jerky seems like a great snack to take along when going places.

    First, on the jerky matter. I use a food dehydrator and make turkey jerky, you can make beef jerky in them. I have a special recipe for the jerky which is so much better than any that is store bought.

    Now excuse my ignorance on being "glutened" I am still not sure where I fit in this with wheat allergies and high gluten intolerance. However, the question is: how long were you gluten-free when you realized that when you got even slightly glutened that you felt that way? Prior to being diagnosed did you feel the same before as now when glutened or do you feel worse than you did prior to being diagnosed? Does each accidental glutening make you feel worse than the time before?

Thanks for listening, I am sorry to hear that many of you have had such bad experiences, I wish it were different in the medical community :( I went ahead and called this morning and the nurse called me back within 20 minutes, apparently the doctor put in the order on Tuesday and the nurse was supposed to call and advise me that I could go in and get my blood drawn-UHG!! Oh well, I went in today and had blood work done and am hoping to know the results within 2 days!! I asked what tests the doctor orderd and she said a Celiac Panel ( not sure what that all includes???) But am hoping it will provide some much needed answers for me and then for my daughter.

    Best of luck. In some way it is a let down being told you are high gluten but not celieac but retest in three months, which I was told today. I feared I did not have enough gluten in my ssystem when the test was done. I am going gluten-free after this weekend. I have events I have to be at this weekend and it is too late to get the menu changed. So I will live with it this weekend and then I will quit gluten until it is time to test again.

    We can all understand your frustration with the medical profession.

    I agree with you about the veterinarian! :) My cats go to a clinic with multiple doctors - not one has ever not taken the time to do a thorough evaluation, explain to me any problems, medicine, possible side effects of medicine, etc. I don't get one tenth of the attention from my doctors that my cats get at the vets. I've told a couple of the vets that if they ever start treating the human animal, I'm their first patient!

    I told my vets the same thing but I made a stipulation, they may not take my temperature the way they take the cats.

  13. gluten-free Icing Sugar

    1 cup granulated sugar

    1 cup cornstarch

    With a blender process until sugar has been ground to a fine powder and keep in air tight container.

    gluten-free Baking Powder

    2 parts cream of tartar

    1 part baking soda

    2 parts cornstarch

    Sift all ingredients together so that the mixture is well blended and keep in airtight container.

    gluten-free Chocolate Chip Cookies

    1/2 cup brown sugar

    1/2 cup white sugar

    1 egg

    1 tsp. vanilla

    1/2 cup + 2 tbsp margarine or butter.

    1/2 cup potato starch

    1 cup soya flour.

    3/4 tbsp baking soda

    1/2 tsp gluten-free baking powder

    1/2 tsp salt

    1/2 cup chopped walnuts (optional)

    1/2 cup semi-sweet chocolate chips

    Heat oven to 375 F. Grease baking sheets. Sift together flours, salt baking powder, and baking soda, then set aside. Cream margarine, add sugars, and blend well. Beat in vanilla and egg. stir in sifted dry ingredients, chocolate chips and nuts. Bake at 375 F for 10 -12 minutes. Makes about 3 dozen cookies.

    Note: I have a problem with eating cookie dough. However, even though the cookies themselves are great and don't cause me any grief. I do not eat this dough because the dough itself causes me to feel ill.

    Chianti's Italian restaurants have rice pasta, and if I remember correctly all their sauces are gluten free also, they use corn starch.

    We went there for dinner a while ago with my celiac son and he had the rice pasta, it was sort of a rice vermicelli, kind of asian looking, not like the Tinkyada spaghetti sized/shaped rice pasta. The thing that bothered me, although I didn't say anything at the time, was the waiter said they had to charge more for the gluten-free pasta. In the end, it was the same price as the other meal off the children's menu. The other thing was that he wouldn't let my celiac disease son have the ice cream, although he only mentioned two ingredients that he thought were suspicious, but in fact are safe and he wouldn't let me look at the label myself. (But I agree with not giving him the ice cream--better safe than sorry, but he could've let me check for myself!)

    The Mongolie Grill (4th St SW, I think) and Dalhousie Station both have gluten-free sauces, let them know at the time you get seated and they'll bring you a list of stuff you can/can't have.

    The Celiac Association here had a list that said Outback has a gluten-free menu and the Keg will cook something to your specifications. The website has some useful restaurant info on it.

    I do know that the Calgary Celiac Association has dinners periodically that we don't go to because they are mostly for grownups, and in our house it's our six year old with celiac disease and I don't think he wants to hang out with a bunch of "old people" who aren't his parents.

    Yes, there are numerous things I have to watch out for besides gluten and one is msg. It was the Swiss Chalet and Moxies where the only thing I could have was steamed vegetables and it was just noodles at Lucianos.

    I shall give the association a shot also. Yes, I am sure your son does not want to hang out with what he would consider a group of fossils. Just think in a few years he won't even want to hang with his parents. They seem to do that younger now than when I was a kid.

    I always watch. It was no big whoop. When they dig then there is problems they are lucky they don't get punched especially because I always say don't dig. It was just blood not like they were coming for a kidney that time.

  16. Rusla .. I don't live in Calgary, but I do know they have a large Celiac population and a group that meets fairly often. You can easily find their web-site. Just pop in Celiac Disease, Calgary into your search engine. I'm pretty sure there is a Celiac friendly Restaurant list on the web too. Type in Travel, Calgary, Celiac. You should be able to get together with quite a few Celiacs through the Calgary Celiac Ass.

    My daughter lives there and has sent me several pieces of information. :rolleyes:

    The restaurant thing is tough. One restaurant which was supposed to be celiac friendly , well actually three of them for two of them all I could get was steamed vegetables. That was all they could guarantee hadn't been near anything gluten the other one all I could have was rice noodles with nothing on it because all the other stuff was in contact with gluten. It was pretty sad experience.

  17. I've picked up the book and looked at it. Doesn't make any sense to me, and the foods he notes for my blood type are all wrong. For instance, supposedly I AM supposed to be able to eat wheat. Well, with one celiac gene and one gluten sensitive gene, that's not the best advice, even if I hadn't "triggered" the celiac. There were several other foods "advised" that I know I have problems with. And many of the "avoid" foods are the ones I show no reaction too. Anyway, he might accidentally get some people right, but it's more guess work than science.

    I have done this diet and liked it a lot. The thing is he is basing his findings on the general population of people he tested with this, not us select and unique individuals. I know for type A it says that wheats and glutens are neutrals and that we shouldn't have Halibut fish. Well I love halibut fish. Because I have a wheat allergy and high sensitivity to gluten I eliminated those. He is right on saying we are primary vegetarians and enjoy vegetables because I do enjoy them. I do like poultry and seafood but do not eat red meat because of an allergy to it and what they inject intothe cattle and meat . I love dairy, but as he says it is our enemY and it is mine and three of my type A siblings enemy. My daughter-in-law and grandaughter are A's and just like me and my son and grandson are O's and they are the O's he describes. From what we know in our family at the moment I am the only one with wheat allergies and gluten sensitivities except my sister has problems with rice, and some beans. I have problems with some beans also.

    Basically his ideas are sound and most fit me but then some don't . With his "avoid" foods he doesn't necessarily say we will have reactions to them just internally they are not that good for us. When I did the diet and before i gained the copious amount of weight I have on me now. I was only 20 lbs overweight and I lost it by making sure I did not touch wheat, gluten or dairy.

I ran into this problem 24 yrs ago when I was so sick and the doctor told me I had the flu.  Well, I got pregnant and found out it was the birth control pills making me sick and that doctor told me that the pill is 99% safe and I just had to be the 1%!  Of course then, doctors never looked for celiacs.  Might I add that my daughter, that pregnancy, was born with a birth defect also and I am sure it was because of my celiacs.  Keep on the doctors back--keep calling or find a new doctor.  I just had an appt with a doctor I really liked and he still failed me.  He did a blood test--said he would test for everything--he didnt test for the genes--he didnt have me fast--had a nurse call and tell me my cholesterol is too high, to watch my diet and come back for a repeat bloodwork up in 6 weeks.  That wasnt a true test for chol without a fasting--I am very disappointed in him.  I will return in 6 weeks and I will tell him what test I want ran.  Doctors!!!!!    And------I work for a doctor--he is an optomitrist, but when I tell a patient he will call back, he does.  To bad he isnt a regular doctor--his patients love him.  Deb

    The unfortunate part is that this doctor dilema seems to be universal in North America. My family doctor is Hindu, he was the one to discover my pernicious anemia when lazy bugger went on holidays. I got my celiac disease test results back which they said they consider non celiac disease but very high gluten sensitivity. My doctor who is not fond of many doctors because he said they never look at the big picture has recomended I go gluten-free for three months and then he wants me to go back on gluten for 3 days and take the test again. He was the only one who never doubted me on the thyroid when the others said it was in my mind and wouldn't even see me when the nodules had appeared they declared they were too busy or didn't see "this type of patient." I wanted to know what type of patient was I, seeing as how they hadn't seen me and did not know me. I go to my family doctor and tell him what kind of tests we should do and he does them. I am so pissed off at specialists and their arrogant ways, they make me ill. I figure maybe I should start goingto a veterinarian.

    This may sound strange but for over 20 years I can not drink any alcohol unless it was vodka or tequilla. Now a few years ago we did an allergy mark-up and I was allergic to the majority of wheats. Well, pretty well all of them. Now a my tests have come back not celiac disease but high gluten sensitivity and my doctor wants to repeat the test in three months and have me go Gluten free.

    I can only drink tequilla, vodka and rum made in Cuba because they don't use wheats. Now I have found problems with some vodka coolers in the past and looking on alcohol bottles you don't get a lot of info. I would suggest emailing the different vodka producers, as I believe I will do the same.

  20. I understand any food intolerances can irritate the gut wall or cause leaky gut but I have never read anything that says Type II food reactions can damage the villi as seen in the biopsy. I've read some rare cases of casein intolerance causing villi damage but I think its pretty specific for celiac disease and gluten is primarily the problem. I'm not aware that other foods can cause visible villi damage.

    Well I just got back from the doctor he said they are considering the test non posiitive for celiac but extremely high gluten sensitivity. Now, a couple of years ago my allergist showed that I tested positive on wheats for allergy and gluten sensitivity then. However my doctor told me perhaps I should go gluten free and in 3 months we will test again for celiac and to make sure I eat and give gluten a chance to digest for that test. He believes it is entirely possible that I am celiac.

    I have bought all the separate ingredients and it runs up to a truck load of money. You need to keep all of the flours in the fridge too or they go rancid. This magnificent group was raving about Anna's breads which they say are killer good. So, next pay day I will order up a case from the US. as she ships to Canada. I have encouraged for us Canadians on the group to email the two biggest natural food stores in Calgary and to get her friend who has a store in Toronto to carry it and do shipping in Canada. I hope they all jump on the chance. I have a bread maker and some recipes but I did not like the recipes that much and buying the ingredients are costly. I do have smalll quantities for making gluten free cookies which are to die for, especially the chocolate chip.

    I suggest trying Anna's breads and she has different types. As I can't have dairy she also has dairy free and much more. Good luck.
