  1. Please forgive me if this has already been posted. I couldn't find anything on it in a search. I was at our local health food store this evening and got a coupon book on my way out. On the front, at the bottom, is a little blurb about October being Celiac Awareness Month. There is a coupon in the book for Glutino/Gluten Free Pantry items and it states...
  2. I ate mostly salmon, halibut, sardines, tuna (fresh and canned) and whatever I could get for as inexpensive as I could get. I also took 1 tbs flax oil every day. Good luck - I hope it helps you!
  3. We had taco salad with seasoned ground turkey, avacado, tomatoes, salsa and sour cream. Usually we have chips, but I'm carb watching, one daughter is boycotting chips and the others just did without.
  4. Sandwiches on gluten-free bread or rice tortillas, deli meat rolled up in lettuce leaves or corn tortillas, rice cakes and peanut butter or almond butter, leftover dinner food, chips and bean dip in a little thermos, salads, soups, and cheese and crackers all make good entrees. Carrot sticks, fruit, fruit leather, gluten-free cereal bars (Envirokidz),...

    ARCHIVED Teeth

I had horrible teeth the whole time I was growing up - cavities galore. I had 12 at one time once and I wasn't allowed to eat candy, drink pop or eat much sugar. I brushed my teeth twice a day. I continued to get cavities into adulthood. When I found out, 10 years ago, that I have food allergies/intolerances and quit eating wheat, eggs, soy and dairy...
  6. Most varities of Bush's baked beans are gluten-free. I'm sorry I can't remember the one that isn't. There's another thread on this topic if you do a search.
  7. I was diagnosed with psoriatic arthritis, in almost every joint in my body, at age 32 - THAT was way too young. I had to eliminate almost everything from my diet - gluten, dairy, eggs, soy, red meat, poultry, beans, peanuts, tomatoes, potatoes, peppers and several other things. Actually, all I ate for a year was fish, most kinds of vegies, sunflower seeds...
  8. I'm gluten intolerant, don't have the main celiac genes, so no official dx. I'm not as sensitive to small amounts of gluten as some on this board are, but I am sensitive. Getting glutened will cause major stomach cramping within an hour or so and then D for several hours and then on and off for 3 days. Then I'm usually fine. I don't seem to be as sensitive...
  9. It definitely SHOULDN'T be on their gluten-free list. I've gotten sick from this flavor before, when I didn't know about hidden glutens and didn't read labels carefully. After I got sick I read the label and realized it was the wheat in the cookies.
  10. Wait, this says that Cookies n Dream is gluten free? It has wheat flour listed in the ingredients. The cookies part of the coookies n dream are wheat cookies. Edit - I have eaten most of the other flavors of Rice Dream with no problems. I wouldn't boycott them because it's about the only ice cream substitute I can have.
  11. In a pan, over the fire or stove. You could also wrap stuff in foil and put it over the fire or on the edge of the coals.
  12. Hmmm, I'm not trying to argue, just to clarify what you're saying and make my point. You're saying that the recipe or technique of baking bread was the same thousands of years ago? This sounds strange to me, because I know from my own grandparents (born in the very late 1800's) that they didn't have commercial yeast available to them and my grandmother...
  13. Yes! I had 3 kids in less than 3 years and started getting really sick right after my last was born. Looking back on my life I realize I had problems with my stomach, (everyone just said I had a "sensitive stomach") and a few minor things which got worse after having mono in college. But after my 3rd was born I got REALLY sick - no energy, psoriasis out...
  14. I usually use raw goat cheese (this might still be considered "cheating"), but tonight I tried Buffalo milk mozzarella - you gotta love Trader Joe's for their wide variety of cheeses! I only have the cheese a couple of times a month, but I did avoid ALL dairy for about 9 years first. Yeah, I do miss Asian food...
  15. Did you use Kinnikinnick's "All Purpose Mix"? If so, it has leavening in it already. Did you by any chance put more leavening (baking powder or soda) in? A lot of extra leavening could make it "erupt".
  16. Pizza! Just made another one that looked just like my avatar for dinner tonight. YUM!
  17. This is just my guess, but I think that wheat and barley in bible times were made into bread through a sourdough/fermentation process - they certainly didn't just go buy yeast at the store. There is evidence that the fermentation process does something to the gluten that makes it easier to digest or just plain breaks it down. So, people who consumed all...
  18. I have a yummy recipe that is egg-free, dairy-free, gluten-free, soy-free and chocolate-free! It's really a brownie recipe, but I have used it for my, my mom's and my son's birthday cakes. You can substitute cocoa powder for the carob, but we like the carob the best. I double it for a 9 x 13 pan. Carob Brownie Cake 1 C Br. Rice flour 1/8 tsp. xanthan...

ARCHIVED Celiac Sprue & Doctor Too!

Yeah, either that or seviche made with octopus. (Seviche is raw fish or octopus that is soaked in a very strong acidy liquid like lime and lemon juice.) We had a house guest from Peru once and he made us seviche from octopus as a way to say thanks for our hospitality .
  20. Soy will cause worse reactions than gluten for me, at least it used to. I don't know if it can cause neurological problems. I'd cut the soy and try rice milk or almond milk.
  21. I don't have DH, but I have psoriasis and excema. (Eating gluten-free doesn't clear it up.) I have noticed that when I eat a lot of sugar my skin flares up all over - arms, legs, stomach, scalp, inside of ears, etc. I always thought that it might be related to yeast somehow - that they were getting a feast on the sugar and were multiplying and causing...
  22. I use my old pie crust recipe, with a few modifications. No one complains about the taste at all and it has a good texture - just not quite as flaky as with poison white wheat flour. I've made chicken pot pie, berry pies and apple pie with it, as well as just sprinkling cinnamon sugar on and baking it flat. I'm sure it would work for quiche. Crust for...
  23. A couple of things jump out at me. It doesn't seem like you are getting enough protein - you should have some at each meal. Also, have you had problems with candida or yeast? Your diet doesn't look too high in sugar, but if your "intestinal flora" is out of whack it could cause D. I went through something similar and I had good results by eliminating...
  24. I'm not good at writing down measurements - I kind of throw things together based on taste, but I use balsamic vinegar in salad dressing and for marinating chicken. I think it would overpower most fish. Here's basically how I use it: Salad Dressing 1 C Ex. Virgin Olive oil 1/4-1/3 C Balsamic Vinegar Garlic powder to taste (or toss a minced garlic...
  25. A few more suggestions about naturally gluten-free food that they both might like: Tacos Taco salad Nachos with bean dip Spaghetti or Lasagne with Tinyada pasta (I dare your son to be able to tell the difference) Beef or chicken stew Chicken and rice soup Meatloaf and mashed potatoes (use gluten-free bread or crispy rice cereal instead of bread crumbs...
