  1. What did I do wrong? It only showed me 3 recipes, none of which look very interesting.
  2. You could just substitute gluten-free flour, with plenty of xanthan gum, for the flour in the dough recipe. I make pie crust and pot pie dough and meat pies fairly often and they turn out great. I'm sure they'd work deep fried too.
  3. I also have symptoms that point to Celiac, as did my father, but don't have either of the two genes. I know I can't eat gluten, no matter what any gene test tells me, so I stay gluten-free.
  4. Tonsils are actually an important part of your immune system. I had mine out at age 23 after a lot of problems, but now I see that they were diet related and it could have been avoided. You might want to consider changing your kids diet and seeing what happens with their tonsils before having them removed. You don't want to just remove a major symptom...
  5. It sounds like you need to increase your protein intake - beans (soaked overnight and then cooked), nuts, seeds, rice protein powder in smoothies, etc. You also might want to cook your veggies for a while (at least half of them) until your stomach calms down.

  7. The white cake recipe in the recipe section of this site is excellent. I've made it 3 times and served it to company. Everyone liked it. I used water once and rice milk the other times for the liquid. Twice I added a package of Dr. Oetker's coconut pudding mix to the flour and then increased the liquid by 1/4 cup.
  8. I know this is posted elsewhere on this site, but I've found that the easiest flour mix is 3 C Brown rice flour, 1 C potato starch, 1/2 C tapioca starch and 2-1/2 tsp xanthan gum.   13. Just a thought - Did you add anything to your diet when you went gluten-free? Like using more corn, soy, eggs or dairy? Maybe you have been eating more of something you're sensitive to that has intensified.

  15. Where was this board 19 years ago? I had my tonsils taken out then after numerous bouts of tonsilitis and courses of antibiotics. I had those "stones" and never knew what they were until I read this thread. I had wondered if it had to do with my diet later on (like, 9 years later) and now I'm sure of it.
  16. Just thought of something else. If he's not casein free, then butter is probably okay and you might try small amounts of raw goat cheese - it's better than it sounds. You can also get goat yogurt in a lot of places - our Trader Joe's has it.

  18. I'm sensitive (allergic? intolerant?) to soy. It causes digestive upset and joint pain for me.   19. The book Incredible, Edible Gluten Free Foods for Kids (I think that's what it's called) is great and has lots of easy and kid-friendly recipes. It's a good place for a "newbie" to start. A lot of the recipes have dairy, but many of them can use rice or almond milk.
  20. I don't know of a mix or jar, but I make gravy all the time by using rice flour. White rice flour works the best and tastes most like "regular" gravy, but brown rice flour works well too. I just use chicken broth or pan drippings and thicken it like I would any other gravy. I've even served it to company on Thanksgiving.

  22. I can't find the recipe, but another yummy way to eat millet is to cook it like Spanish rice - add tomato sauce, chili powder, garlic, salt and cumin to the water.
  23. I have an 11 year old son who has been off milk for his whole life and just recently we found out he is gluten intolerant. He has some behavioral issues, mostly attention problems rather than being "naughty" and a lot of negativity. He was very angry when he was told he couldn't have wheat/gluten anymore.
