  1. If you haven't already, check this for foods and ingredients: https://www.celiac.com/st_main.html?p_catid...-35105194997.81 Now, as for the tests, I've not done any. Like you stated, I feel I already know what I have to do - totally gluten-free for me! All the doctors I ever went to didn't have a clue, but many did steer me wrong and made things worse...
  2. I agree. I know I'm doing far better by not eating gluten. I have not had any tests done, and I doubt I will. Not unless the cost is affordable to me, which right now it's not. I think that might explain why I feel better and things seem to run smoother in my gut when I eat spinach, brussell srouts, broccoli, etc. It seems that part of the chlorophyll...
  3. Looking back, it seems I always had some sort of health problems, which I can now see were probably gluten related. However, I also know that things were getting worse over time. That was probably the damage taking its toll and so forth. There were various things along the way which I believe contributed, worsening the whole thing. Though the symptoms...
  4. I see. That's interesting. But I am also in the "It's not nice to fool mother nature" crowd. I figure it's better to work with it than against it. Now, that brings up a related issue: I have read that in "the old days" wheat didn't have the amount of gluten it does today. It seems that they have been cultivating/pollenating or whatever to make it have...
  5. Yes, that's a common symptom. It really doesn't matter where it shows up though. Everyone is different in that way. Once you go gluten-free, any glutening you get can manifest more pronounced symptoms than before. I think it's because the body now has a lower "point of reference", so the gluten can make a larger impact. Like putting one cup of water into...
  6. Well, I have recently been having pain in one leg only. So much so that I could not stand on it. It was also very weak, but since you didn't mention extreme pain, I'd guess it's not exactly the same thing. It would spasm at the slightest change in pressure as I tried to get around. There was noticable numbness too, but not the entire way down - mostly above...
  7. I saw a thread recently about gluten-free burger buns that are apparently very light and fluffy. A search should turn it up for you. The poster even supplied a video to show the "spongyness" and stuff.
  8. I know I haven't been getting all the proper nutrients. I eat loads of veggies every day, but the malabsorption is of course a factor. One thing I found that seems to help is RealSalt. When I'd use "regular" table salt, I would get fluid retention in my legs and feet if I used the amount I prefered. I tend to eat things very plain too. I don't like a lot...
  9. Was that with or without the wings?
  10. Good! Like I said, I make the instant ones often - with water, so there's no dairy either. That can help you keep to safe foods while you pinpoint all the no-no's. Sprinkle some sprouts on top if you like. As has already been stated, you need the protein too. When I first had to cut out foods, I was going bananas trying to fill out meals. But it got easier...
  11. I once had wild moose meat. It was the best tasting meat I think I ever ate - put all beef to shame.
  12. When I used to eat meat, I'd make my own turkey sausage. Just so I could be sure what was in it, and because most premade seem to have stuff I can't eat or don't want. Like yeast - they seem to put that in everything. Then there's sugar, and preservatives, and too many spices... I like homemade...so nice to know how to cook my own stuff. It just takes...
  13. I'm surprized how many actually would take a drug. I mean, it would still be for life, and the drug would cost more than a change in diet I'm sure. Then there are inevitable side-effects. Even if the gluten doesn't make it through into the rest of the system, what about the immune system? If they inhibit such an immune response, that will lead to other diseases...
  14. There sure are strong indications that celiac disease and yeats problems can go hand-in-hand. There are a number of threads on this. Here's just a few: Open Original Shared Link Open Original Shared Link Open Original Shared Link I know there are more. Try a search and see what you get. I've posted in a few of them besides those above.
  15. I really liked oats for baking things. Carrot bread, oatmeal raisin bread, etc. Then of course oatmeal in meatloaf, along with which I'd make a large portion of mashed potatoes. Now that's yummy! Heck, plain oatmeal with margarine and a few raisins was nice too sometimes. But, now that I'm gluten-free, I haven't dared try oats yet. It would be nice to...
  16. Well, it seems everyone reacts differently, so I doubt there will be a general rule. However, I don't think it matters much since the intolerance means being gluten-free for life. celiac disease (the actual damage) is the result of the intolerance, so it depends on how long the problem went unchecked. If the intolerance is discovered early in life, the...
  17. Thanks once again. I have used corn meal to dust the pizza pan, which adds a nice flavor IMO. Obviously not for those who are avoiding corn though. I have just started looking into gluten-free flours, so I haven't made any pizzas yet. I am planning to try soon. I don't want to take the thread off topic, so do you know of a thread for good pizza doughs...
  18. Well, I don't want to give you poor advice, but if it were me, I'd stop the gluten since I know what it is doing. Then just make up the log for the rest of the week, filling it in with whatever will get the doc to listen to you. It might not be totally honest, and I don't like suggesting that at all, but heck, this is your life we're talking about here. The...
  19. None of the doctors I went to my whole life ever figured out the problem(s) I was having. I figured it out myself from research/trial and error. So yeah it's self-diagnosis. Oddly, my knees have been a bit worse lately. Only thing I had different was some soy cheese I'm experimenting with for the first time. I guess that might be a new no-no No...
  20. Hmmm...Thanks. Looking it up, it appears to be essentially the same ingredients as the one I use (Imperial), though I much prefer the stick. I'll switch in a heartbeat if I find out it's part of the problem, though being off of it for months didn't seem to make any difference. Being that I don't eat any animal products, I don't think I have anything to worry...
  21. Wow! I can't hardly believe how many symptoms I relate to in this discussion. Makes me wonder just what I may be overlooking, if anything. I do know there is quite a bit of misdiagnosis going on though, and many illnesses are just not well understood. I would not be surprized if one leads to or promotes another, and that several are directly related...
  22. Yes, I think so. I've experienced all sorts of body aches, and they even seem to travel around. One week it's here, the next it's shifted to there... after a few months it's traveled half way down my body...I do think it's part of the whole gluten thing, since the gut has taken quite a beating. You already have my input on the yeast thread, so I won't go...
  23. Ah, ok. I need my veggies for sure. I eat literally pounds of them per day. Like at least three or four, unlike most people I know who barely touch any in an entire week. No wonder they all have chronic issues... I couldn't get any more restrictive without seriously crippling my overall mood. So many things off limits already. If I have to strike anything...
  24. Good for you!! I have the same basic reactions from various family/friends. But as Rachel--24 noted, you have to take care of yourself first. You alone are the best person to say how you feel on any diet. Some people I know would not even take a doctor's test results as proof. Total denial is the reaction, and this is usually from those whom eat more of...

    ARCHIVED Picazzo's In Az

I can honestly say this is the first time I've ever wished to volunteer as a guinea pig. Post some pics of them if you can...please? At least we can use our sense of sight on that, and let our imaginations fill in the rest. Boy, sure is a large gap to fill...
