  1. Plenty of good responses here. I can say, that from all my gluten-free baking, that blending the flours does work best for the majority of things. Rarely does a single flour work alone. This is because some flours result in a very dry and brittle texture, while others stay moist, or get rock hard, or gummy, etc. So blending the various flours properly can...
  2. Well, anyone with health issues simply NEEDS the Internet, I'd say. She's doing herself a terrible disservice. Anyway, aside from books, my first thought is to search the board for some posts about fibro symptoms going away on a gluten-free diet (I'm sure you've seen a bunch of them as I have), and use the lo-fi version link at the bottom of the page to...
  3. I agree with the suggestion of B12 - Open Original Shared Link to be exact. You cannot overdose, so I'd say try it and see. But from all your symptoms I'd have to believe there are other issues. No doubt there is much healing required, so it will take time, but there is probably a lot you can do to help your body along. Anemia is a good guess too, though...
  4. I agree with the recommendation of B12, and since there is no level of overdose, you don't need to trust a test. Just buy some and see how it goes. There are actually energy boost products designed around the fact that B12 helps a lot with energy. The best form to take is methylcobalamin, such as the one from Open Original Shared Link. The other nutrients...
  5. What happens with other sugary things? It seems to me that there is a distinct possibility that the problem is something other than sugar.
  6. Wow, I think your son is indeed overdue for some growth and development! I began a major growth spurt at around 13-14, and up to that point I was so tiny! All the kids at school towered above me. For years I ate tons of food, and I'd have to say peanut butter was my body's favorite. I could not get enough of it. I now know it was because of the nutrients...
  7. I've read it takes months of eating gluten just for the tests to have even the expected range of accuracy, which we all know isn't so great anyway. So it seems to me that if you had been gluten-free for two months, then only two weeks of eating gluten, the chances of a positive test would be pretty low. So glad you know that gluten makes you ill, and not...
  8. Where do you get chia seeds economically enough to use in place of other binders? I wanted to try it, but last I looked I couldn't find them cheap enough to make it worth even trying them. On the Stevia, I guess not everyone can taste it the same way. I saw something on TV about a flavor which only 40% of the population can taste (I don't recall what...
  9. Well, I like it when a company can state gluten-free, but what about buying 100% juice in a large bottle, and fill a thermos for your DD? Cheaper, and it stays cold. Healthy too!
  10. How about lemon, lime, raspberry, or pineapple? For frosting, it's gotta be coconut, or lemon or lime would be good too.
  11. Given the connection between Celiac and the adenovirus, I wonder if the trigger might always involve the virus in some way. The adenovirus is what causes a number of illnesses, including pink eye, mono, croup, various intestinal disorders, and more.
  12. Wow, this thread is certainly "lively". I haven't read every word, and I for one have no intention of stepping into the middle of any debates which cannot be reasoned and settled, and conducted with logic and cool heads. So I'm just adding my support for whomever might be asking if vegetarianism and Celiac is doable. In short, yes. I discovered that meat...
  13. Do you take any supplements? Specifically, do you take magnesium, B12, or zinc? A deficiency in B12 is my best guess, but the others might also be worth taking. Make sure it is a sublingual methylcobalamin, NOT cyanocobalamin. Take a minimum of 3mg per day. There is no known level of overdose, and studies suggest that the body can't assimilate more than about...
  14. In my opinion, yes I think your son should be tested, but either way try the gluten-free diet. I had all sorts of odd symptoms when I was little. Looking back, I can see that there were all sorts of things which should (but aren't) thought to be indicative of anything important. Besides, being skinny and not gaining weight ARE common symptoms, and do indicate...
  15. I hadn't really looked into the whole lectin thing in-depth, but I find it interesting how lectins and gluten are so intertwined. Aside from the very informative link Ursa Major posted, here's one I just found: Open Original Shared Link The only word I have right now is: Amazing!

    ARCHIVED Guar Gum?

I think that statement is simply not true. There is no relation between corn and guar gum. There is however, a relation between corn and xanthan gum, since the microbes which produce xanthan are often (but not always) grown on corn. However, the purification process would presumably remove all but a very tiny fraction of the growth medium (and the microbes...
  17. I find cookies almost always turn out well, though I have found that making a sugar-free peanut butter cookie is tricky unless I use far less peanut butter than I'd like. Apparently the fat content keeps them from holding together, probably because I don't use sugar (I use pure Open Original Shared Link powder). So I think I'd suggest starting with cookies...
  18. Best I know is good diet and time. Avoid sugar, alcohol, caffeine, artificial stuff. Simple foods which are easier to digest would probably work better, while things like meat and soy might sit in the gut too long. Beans, nut, and peanut butter might not work well either. I know whenever I ate meat, it just made me feel awful. Intestinal yeast seem to love...
  19. I heard it was zinc, but it seems iron is the one most doctors associate with it. Apparently a deficiency in either nutrient can cause such a craving. Open Original Shared Link Many on this board find it helpful to take a few supplements, especially at first. The intestinal damage usually results in malabsorption. Among the most common nutrients to...
  20. Well, I think you already feel ashamed, or you wouldn't have posted. That said, shame on you! Maybe it would help to think of it like a savings account - if you blow it now, there won't be anything left for when you need it. If it took twenty servings of gravy to cause cancer, how many would you have? Suppose it took two hundred? Another way to view it...
  21. I believe Ursa Major will be able to address your question quite well. Although I have done some poking around on the subjects in question, I concluded that most of what I cannot eat I already know about. I do know nightshades are toxic to everyone though, and that it is only a matter of how much a person notices the effects. Some of us are simply more sensitive...
  22. Of course, trying the gluten-free diet would be the best way to tell. All the current tests are still very inaccurate, not to mention often misinterpreted by doctors. Many find that also cutting dairy out at the same time is necessary, but can sometimes add it back in later, once sufficient healing has taken place. Hope you feel better soon!
  23. It just hit me that Puff the Magic Dragon was Celiac. Let's review part of the song. Puff the Magic Dragon (of course he was puffy, and a little bloated too) Lived by the sea (spent a lot of time in the bathroom) And frolicked in the autumn mist (used a vaporizer to clear his sinuses) In a land called Honah Lee (in a land called Gluten-Free) And...
  24. I have found coconut oil to do wonders for the skin, including dry, "alligator skin". Just be sure it is a high quality product. The only one I found to work is a Open Original Shared Link, which is not exposed to damaging temperatures during processing. No other type has come close to this. Applying it to the skin is said to work, but eating it will not...
  25. If I'm understanding correctly, you are outside the USA, yes? Please do be aware that gluten-free foods as defined by the European CODEX can have up to 200ppm gluten content. Many people find this level too high and react to it. Either way however, it is easier to stick to foods which are normally gluten-free, like veggies, fruits, legumes, nuts, seeds, etc...
