  1. Okay, I am interested in picking up a few more gluten free cookbooks/baking books. I am an excellent cook, so the difficulty level is not a concern. I do have one toddler in the house, so books should contain toddler friendly food as well as other recipes. I already have the following: Gluten Free Baking Classics by Annalise Roberts Gluten Free Family...
  2. Autumn, you may want to be tested for a casein intolerance as that can cause villous atrophy just like Celiac. However, many Celiacs are lactose intolerant in the beginning. If it is just a lactose intolerance, it may get better. Sorry I couldn't be of more help.
  3. Norah, how long have you been gluten free? If you just started the diet, you may be going through gluten withdrawal. That's relatively common, I believe, and I got horrible migraines in my withdrawal stage. I also get the sinus migraines. I used to think they were sinus headaches, but my Imitrex works to clear them, so apparently they're migraines. If you...
  4. Thank you for sharing, Evie. HAPPY BIRTHDAY!!!
  5. Sweetfudge, if you find a good potato bread recipe, please let us know. I used to be addicted to potato bread before Celiac. I absolutely love it. I would be in heaven if I could eat potato bread again.
  6. Ugh... Doctors... They make me wanna scream!!! Okay, it is extremely COMMON for someone of your age to develop Celiac disease. I developed Celiac at 27, my friend at 22. Also, your symptoms are CLASSIC for Celiac Disease. They mimic my symptoms almost exactly. It sounds to me that you may very well have Celiac. Negative blood tests are common. I've had negative...
  7. Chelsea, you always gave such great support and advice. I'll really miss seeing you around. I hope that you'll come back sooner rather than later.
  8. YES, YES, YES!!! Myself as a child and my daughter before going gluten free. I was extremely tactile defensive pre-diagnosis, though I never suffered from any academic or speech delays. I was destructively impulsive and hyperactive. Even as an adult I suffered from these things. I have also been diagnosed as ADD, though that has gotten much better since going...
  9. If you must eat at McDonalds I would suggest a side salad with dressing and apple dippers. The apple dippers come pre-packaged and are really good with the caramel dip. Also, the fruit and yogurt parfaits have never given me a problem.
  10. I think I remember reading that Aquafresh is safe, I've used it with no problems, but I didn't used to be very sensitive, so... Who knows... I would call the number on the tube.
  11. I'm not trying to scare you, but perhaps this post will give you some insight. I believe Evie went through what you're currently going through. Open Original Shared Link
  12. Someone on here has a recipe for powdered ranch dressing, maybe Elonwy. I don't remember. Maybe they will see this? Or you could put up an ISO post. Either way, that sounds fabulous with the ranch chips. I'm going to have to try it.
  13. If you tested positive for Celiac, then YOU HAVE CELIAC! Your second test, while gluten free, would come back negative because if you don't have gluten in your system, the antibodies won't show up. YOu have to be eating gluten regularly for a test to show up positive. It is absolutely possible to have your biopsy show no damage and still have Celiac.
  14. Nantzie, try adding some ranch dressing powder mix to the crushed doritos... See if that enhances the flavor. I may just have to try that. Sounds delicious.
  15. Have you guys seen this? Specifically this exerpt, but also all of the other proposed uses for wheat... www.wheatworld.org/pdf/NAWG%20New%20Improved%20Uses%20Report%20Final.pdf Sounds fishy to me... I don't think I'd ever trust any kind of wheat at all. I don't even really miss it.
  16. Okay, I know this sounds really gross, but the end result is actually quite tasty. I have a hard time getting my daughter to eat anything nutritious, so I often have to get creative. This evening, I crushed up Cheetohs and used them to coat chicken. I baked them at 400 until they were brown. They actually taste really good. I didn't use milk or egg or anything...

    ARCHIVED Any Ideas?

Well, if drywall can cause mystery glutenings, I imagine fiberglass/resin could too. I'd call the company and ask if wheat, barley, rye, or oats is an ingredient.
  18. I freeze chicken nuggets made with Kinnikinnick breading. They make a great snack for my daughter. I also freeze casseroles like rice/chicken/cheese/garlic. I generally make large dinners and then freeze the leftovers for future lunches.
  19. Ugh... My husband didn't understand the cc thing either so I ended up just making my whole house gluten free. Otherwise I would find crumbs everywhere. It wasn't until I made everything gluten free that I started really feeling great. Perhaps you could do the same? He may feel it's an inconvenience in the beginning, but it will be healthier for the whole...
  20. Glad to hear your husband is coming around. Sometimes that's the hardest part of the disease, getting others to understand and support you. Even if your biopsy shows no villous atrophy, I would still go gluten free. At least see how you feel. It may take a few weeks, sometimes even months, for you to start feeling better, so give it time.
  21. We use Sweet Baby Rays. It's spicy, but it's also sweet. Perhaps it may be too sweet for you. I hope I'm not sticking my nose into your business, and if this offends you, please accept my apology ahead of time... Have you also eliminated casein (milk) from your son's diet? I know there has been extensive research on gluten and casein free diets used as...
  22. I always call the morning after a glutening "the gluten hangover". To me, that's exactly what it feels like, except with a slightly lesser headache and a slightly more upset stomach.
  23. I have not personally had this problem with my daughter, but I have heard of that happening before. I think I saw it on a tv show on the discovery channel or something. It was about a 3 year old that would have accidents every time she was glutened. Hope it gets easier soon.
  24. Thanks guys, I really needed to hear that. I did check his feedback and it wasn't the greatest. I knew this going into the sale though. I was buying parts for our business that we can only get used, and often only from eBay. It wasn't a lot of money, so I figured if it was a bad sell, we wouldn't lose out on much. I just can't believe that he e-mailed me...
  25. For me, the gluten withdrawal was the worst part. It's horrible. I hope you give it another good shot and eliminate all gluten, not just wheat.
