ARCHIVED Need Advice
Guhlia replied to blossom's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
It sounds to me like you already have your answer... However, if you need proof (positive testing) I would probably go through Enterolab. Their testing is much more sensitive than the blood tests that doctors will give. If you need an official diagnosis to stick to the diet, then go get it NOW before you're off gluten for too long. BTW, with Enterolab you... -
ARCHIVED Jenny's First Glutening...
Guhlia replied to Nantzie's topic in Parents, Friends and Loved Ones of Celiacs
It sounds like you and Jenny had a really stressful night. I hope you both woke up refreshed this morning with no risidual symptoms. -
That sounds EXACTLY like Celiac to me! If I were you, I would just go gluten free permanently and see if you feel better. Doctors don't always know what's best. If your body is telling you that you shouldn't eat gluten, then don't.

ARCHIVED Can I Blame Gluten Or Is It Something Else?
Guhlia replied to ElizabethN's topic in Coping with Celiac Disease
I've been sick from a glutening for over a week. Sometimes it just takes a while. I hope you're feeling better soon. -
ARCHIVED Is It Really Possible To Avoid Trace Amounts?
Guhlia replied to rutland's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Please also keep in mind that just because it's not making you physically sick, does NOT mean that it's not doing damage to your intestines. -
ARCHIVED Pizza Sauce Alternatives?
Guhlia replied to jayhawkmom's topic in Gluten-Free Recipes & Cooking Tips
I've found that if you put a lot of moist toppings on pizza, you don't really miss the sauce too much. You could also try doing a white sauce. I do a wonderful crab pizza using ricotta, garlic, onion, and crab meat. Mmmmmm.... Olive oil and spices make a great base for pizza, almost like a bruschetta without the tomato. Horseradish (I don't know... -
ARCHIVED Celiac's And Chewing Tobacco
Guhlia replied to Jarrett's topic in Gluten-Free Foods, Products, Shopping & Medications
Hmmmm.... I know that on a previous post oat flour and wheat flour were both listed as additives to smoking tobacco. Perhaps the same is true of chewing tobacco? I'd stear clear. -
ARCHIVED Italian Ices
Guhlia replied to justme's topic in Gluten-Free Foods, Products, Shopping & Medications
last year we asked Rita's if their italian ices were gluten free and they said all flavors including the custard were gluten free unless there were cookie bits in them. It may have changed since then. I would contact the company. -

ARCHIVED Hidden Valley Ranch Dressing
Guhlia replied to Sweetfudge's topic in Gluten-Free Foods, Products, Shopping & Medications
It has been on the don't eat lists in the past. I'm assuming it's still not gluten free. I wouldn't risk it. -
The Kraft cheese powder is gluten free, BUT YOU WILL LIKELY CONTAMINATE YOUR PASTA WITH THE WHEAT POWDER ON THE OUTSIDE OF THE PACK!!! It only takes one crumb to make your body sick (even if you don't get any symptoms). If you have a Wal-mart near you, they sell the cheese powder in a canister. I'm sure that you could order it online somewhere as well. ...

www.kinnikinnick.com has excellent bagels and other baked goods. They even have donuts. If you can't break the "on the run" habit, then get some of this stuff. It's delicious. As far as eating out with your family, do you have an Outback Steakhouse nearby? They have a gluten free menu. As does Carrabba's, Bonefish Grill, PF Changs, Cheeseburger in Paradise...

ARCHIVED Kids Lunches
Guhlia replied to happy4dolphins's topic in Gluten-Free Foods, Products, Shopping & Medications
My daughter isn't in school yet, so we haven't personally addressed this yet. However, I believe that because Celiac disease is considered a disability they have to accomodate your child's special needs. Again, I could be very wrong about this and I have not looked into it yet. If your school is reluctant to help out, I would probably stear clear. There's... -
ARCHIVED I'm Still So Tired - What Is Going On?
Guhlia replied to aprilh's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Soy is in most store-bought spaghetti sauces... Just a thought. It could be that you've developed an intolerance to soy. Many of us develop other intolerances after Celiac surfaces. -
ARCHIVED How Much Gluten To Test Yourself?
Guhlia replied to Mopsiehoney's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
www.enterolab.com If you have private insurance, or may need to get private insurance in the future, you probably DO NOT want celiac on the record books. Many, many people are denied private insurance because of things much less than celiac. I was denied insurance because I had ear infections as a child (26 years ago). Insurance companies are really funny... -
ARCHIVED Kids Lunches
Guhlia replied to happy4dolphins's topic in Gluten-Free Foods, Products, Shopping & Medications
Lunchables nachos w/ cheese and salsa are gluten free and delicious... Corn tortilla sandwiches, celery with peanut butter, lunchmeat wrapped around cream cheese (pinwheels), veggies and Kraft ranch dressing, Lays Stax (most are gluten free), cold chicken with BBQ sauce and/or honey, Envirokidz bars, hot dogs (no bun) in a thermos of hot water w/ a side of... -
ARCHIVED How Much Gluten To Test Yourself?
Guhlia replied to Mopsiehoney's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
If you want a diagnosis I would recommend going through Enterolab. It's not cheap, but at least then you'll know AND so long as you don't give the results to your doctor or try to get insurance reimbursement, it will stay off your medical record. Plus, you don't need to eat any gluten before the testing. It will still be accurate so long as you haven't been... -

ARCHIVED Lunchmeat?
Guhlia replied to a topic in Gluten-Free Foods, Products, Shopping & Medications
I would stick to prepackaged lunch meat to avoid the risk of CC by the deli counter slicers. Oscar Meyer will clearly list any gluten on the label. There are others that are safe as well. Maybe someone else will add those brand names. -

ARCHIVED Looking For A Recipe For Doritos?
Guhlia replied to SuperCharm95's topic in Gluten-Free Recipes & Cooking Tips
That's interesting. I eat them all the time with no problems and I check the ingredients every time I open a bag. Maybe the little bags are different? I guess that's possible. Check the date on the package, maybe Wal-mart had some old bags sitting on the shelf. -
ARCHIVED All After Having The Last Baby
Guhlia replied to thenamesbabe's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I too became ill after delivering my daughter. I also suffered from fibromyalgia, nerve pain, anemia, etc... Mine all got better after going gluten free and some things (like the depression and the fibromyalgia) have disappeared completely. I've only been gluten free for two years, but my body is definitely thanking me for it. -
ARCHIVED Looking For A Recipe For Doritos?
Guhlia replied to SuperCharm95's topic in Gluten-Free Recipes & Cooking Tips
Cheetohs used to contain wheat, I'm pretty sure of that... However, all of the new bags I've gotten appear to be safe and I haven't gotten sick from them. Maybe you just have an old bag??? -
ARCHIVED Incredible Edible Gluten Free Food For Kids
Guhlia replied to Guhlia's topic in Gluten-Free Recipes & Cooking Tips
Okay, this is a long one.... This recipe is from The Incredible Edible Gluten Free Food for Kids cookbook by Sheri L. Sanderson. I highly recommend getting this cookbook as all recipes that I've tried have turned out beautifully. Chicken Biscuit Surprise 1 Buttermilk Biscuit Recipe 2 cups cooked shredded chicken (2 12.5 ounce cans, drained) 2 cups...
