    My symptoms will peak at around 4-5 days, and last for about 2 weeks or so. It can be really tough sometimes when you feel the symptoms coming on and realize what has happened. It's definitely a learning experience to know how careful you need to be. It gets easier with time!

    Hi johno, Concerning your "not feeling anything" the next day after eating gluten - it can take days to weeks to months for your body to react to gluten, depending on how quickly your immune system works. For me personally, I don't experience the flare of symptoms until about 5-10 days after eating gluten. Then it'll hit me like a train. And the symptoms...

    I have not been diagnosed Celiac yet, but when I do gluten challenges, my mouth will chronically burn. It feels like a sunburn in my mouth! My tongue will also get chronically swollen and inflamed and will sort of peel off (similar to glossitis migrans) and I will also get aphthous ulcers at the same time.     First off, you're right. Something is not right in your body, whether or not the doctors have figured it out. During my past two gluten challenges, it has taken about 7-15 days to get symptoms from gluten.     I've found that the majority of my symptoms will hit the hardest about 1.5-2 weeks after gluten consumption. From the research I've done, it seems that NCGS seems to have more immediate symptom onset, whereas celiac seems to be more delayed (since it is a delayed hypersensitivity reaction). I was doing some reading that sometimes the delay of symptoms can be years. So crazy how our immune system works!     Thanks for the help! And actually when I first saw my new GI doc he asked me quite a bit about gluten in my diet, but I think he was mostly concerned about IBD considering my fluctuations of blood in my stool. So, I think he would be eager to explore celiac if I went back to him and told him how I reacted to gluten.
