ARCHIVED Gluten Accident At School On FridayTCA replied to e&j0304's topic in Parents, Friends and Loved Ones of Celiacs This is a little off topic, but my husband and I have been discussing the possibilities of home schooling our kids just through 2nd or 3rd grade, whenever they get a good hold on the diet and accidents like this are less likely. anyone else had these thoughts? We've never thougth about home shooling before, but the health of our daughter is poor due to...

ARCHIVED How Many Of You Decided You Had Problems Despite Negative Tests?TCA replied to munchkinette's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms My son went through sooo much testing, which was inconclusive. The diet has been nothing short of miraculous for him!!! Clinically Celiac is the term our doctor used too. He has all the symptoms, but is so much better now. I'm amazed that after less than 2 mos. we see this much difference. My daughter also had symptoms, so I went on a gluten-free diet...

ARCHIVED Born And Raised... First Post....TCA replied to celiacuser12345's topic in Coping with Celiac Disease I'm interested in hearing how you were diagnosed. My daughter is 10 mos. old and a heart patient. She had surgery at 9 days old and got very very sick in the following months. The docs completely ignored my request to have her tested for Celiac. The only thing that saved her is me going on a gluten free diet and nursing her completely. It was amazing...

ARCHIVED Need A Food ListTCA replied to Laurazee's topic in Gluten-Free Foods, Products, Shopping & Medications I'm pretty new to this, but was thrilled to dind out that Kraft, Unilever, General Mills, Zaterain's all list Wheat Rye, Barley, and Oats on their labels. They don't hide the gluten, so it helps when shopping. check out Hormel and heinz too. Their websites have some great lists - french fries and tater tots!!!!!

I make mini cream puffs, fill with vanilla pudding and freeze. I freeze pie crusts, but they are delicate so don't lay anything on top of them in the freezer.

ARCHIVED New To Disease - Would Love Suggestions Or AdviceTCA replied to momandgirls's topic in Coping with Celiac Disease Just so you know, we went back to the Ped. GI last week and he was still hesitant to give our kids an official diagnosis of celiac disease. They didn't have the gold standard of a positive biopsy and an diagnosis can make it harder to get insurance and such. He wants to wait and only give one if we have to have it. He said he knew I would keep them on...

I have found that if I wrap the bread in plastic wrap right after removing it from the bread machine (still hot) the crust is very soft.

ARCHIVED Questions About EnterolabTCA replied to momandgirls's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms The gluten-free bread is very expensive, but I've found some good ones to make. Bob's Red Mill and Cause You're special are my favorite. I use the end peices to make the bread crumbs with so nothing is wasted. I have a 3 page list of CD101 that I made for my son to have with him for family who keep him. I'd be glad to send it if you PM me. I have...

I made the mistake of using sensodyne for a while too. Crest is great. I think the aquafresh sensitve is ok too. My teeth were also sealed as a teen. I didn't know about celiac then, just that I had bad teeth. My son has teeth with big "holes" in them where the enamel never formed. For now they are putting temporary fillings on them since it is such...

I do freeze the chicken in the marinade. I usually put the chicken in the bags and pour the marinade over it, close the bag, and distribute the marinade evenly over the chicken and pop it in the freezer. I got the idea from all the marinaded meats you can buy in the stores now. It's much cheaper this way. I do cook it after it thaws. I sometime pan fry...

ARCHIVED ChickenTCA replied to jtangema's topic in Gluten-Free Foods, Products, Shopping & Medications I called last month and they said they were. I got a list from Perdue, but Tyson didn't have one. I tend to use Perdue because of this.

I freeze soups, chili, gumbo (roux made with soy flour), rice, pepper steak, stir fry, just abot anything. I also buy hambuer in bulk and brown it all. Then freeze it in small bags to take out and make tacos, speghetti, or whatever in a hurry. I buy chicken breasts in bulk and marinade them and put them in bags. I use balsamic vinegar, garlic, and rosemary...

ARCHIVED Advice On Testing Or NotTCA replied to Kristie's topic in Parents, Friends and Loved Ones of Celiacs My 3 year old has had sooo many tests trying to find what was wrong with him before we found Celiac. He HATES needles, but gets over the trauma of getting stuck quickly. I don't think we give kids enough credit with how resiliant they can be. It might cause a few tears to get the blood draw, but I bet some ice cream would dry them quickly. It took me...

ARCHIVED What Does A Typical Day Of Eating Look Like For You All?TCA replied to BeccaM's topic in Coping with Celiac Disease I had just typ[ed up a list of gluten-free foods my son will eat for my parents. They are overwhelmed by his diagnosis, so I did a celiac disease 101 for them that was specific to my son. Here's the list. It's not a daily menu, but it's got about everything he will eat on there. He's 3 and very picky, so it's sometimes a challenge. • Delimex Taquitos ...

ARCHIVED Ever Had A Baby That Couldn't TolerateTCA replied to KayJay's topic in Parents, Friends and Loved Ones of Celiacs Just wanted to let you know that you can relactate with a pump. Not fun, I know, but sometimes it may be the only option. I'm writing this as I pump, so trust me, I know ! I know this may sound crazy, but I have a TON of breast milk in the freezer that I just can't bear to throw out... all those hours of pumping!!! We found out my daughter had...

I actually called Dr. Fasano's office this morning again. We're goindgto the ped GI here today to discuss these options. Dr. Fasano's office said he'd rather discuss things with our GI than me. I'm fine with that as long as we're making progress. I'll let you know what happens. Thanks!!!

We love these panckes! The bread is really good too. I love to cook, but hate baking, so Bob's mixes have been a life saver!
