Thanks for all the replies!!! Rachel, I know for sure that I have a dairy intolerance and a fat intolerance (I have to be careful how much I have). I started keeping a food diary last weekend and from what I can tell, the pepperoni and rice were the only "new" things added to my diet on Monday. Thanks for the quick reply, Ursula. I never noticed a problem with rice before. I ate it maybe 3 times a week and never had any of the symptoms I am having now. Do you think it was because I was eating it so frequently? Thanks! -
I started the elimination diet last monday night and had a rough few days and then felt great. Yesterday, I had two small bowls of steamed white rice and felt great when I went to bed. I don't really have problems reheating my gluten-free pasta. I just microwave it for several minutes until it gets really hot and has a normal texture. -

You are very fortunate that you had no horrible symptoms from baking with gluten-y products. I admit to being rather b*tchy if I have to be - gluten-containing flour will not be entering my house ever again. Then again, I have rather long glutening episodes - it takes me at least a week to feel better.

Thanks Leah! I'll definitely keep trying. I can tolerate fruit purees - I usually cut out the oil or butter and use unsweetened applesauce, which usually works well except the bread then has no flavor. I will definitely try her 4 flour bread. -

Count me in for one that gained weight unexplainably. I wasn't obese (I went from 137 at 5'7" to 159) but as a triathlete that was working out several hours a day, the steady weight gain made no sense. Even cutting calories down to an obscenely low level for my activity level didn't help. I've since lost all the weight and am hoping to lose another 5-7 lbs... -

Yes, I have her book. I've tried the french bread and a few other recipes. They aren't bad, but they don't taste similar enough for me to switch from my beloved english muffins. Her english muffin recipe calls for 1/4 c. of nut butter. That much would KILL me! Thanks -

I'm spending $15 a week on Kinnikinnick english muffins. I love them - they are the closest thing I've found to the taste and texture of french bread and they don't have an enormous amount of fat in them (I have trouble digesting fat). I'm so sorry to hear that your husband is not being as considerate as he should be. I finally realized why I've been feeling so sick this past month - my husband had been making bread each week!
