ARCHIVED Convenience And The gluten-free Diet
Fiddle-Faddle replied to elfkin's topic in Gluten-Free Foods, Products, Shopping & Medications
Do you have a copy of Annalise Roberts' Gluten-Free Baking Classics? There are some marvelous recipes for breads, cookies, and cakes in there. I make her breads and they taste just as good to me as any gluteny bread I've ever had. All the prebaked breads I've tried taste like dried sponges. Anyway, I make 2 loaves at a time--they keep very well wrapped... -

I am so grateful that my husband sees things in the same way: he dislikes makeup, and hates pantyhose. Must be his chemistry background--first time he touched my leg when I was wearing hose, he sort of recoiled and said, "Ugh, you have polymer on your legs!" So if real men don't like make-up, why do so many women wear it? -
ARCHIVED Gluten Free Meatballs?
Fiddle-Faddle replied to NicoleAJ's topic in Gluten-Free Recipes & Cooking Tips
I use dried potato flakes or rice (cooked) instead of bread crumbs. I just substitute cup-for cup in regular recipes. Once when I didn't have enough potato flakes, I threw in some corn meal, and it still tasted good. -

Patak's is the brand she mentioned. They have it here in Pittsburgh, which tends to be about 30 years behind the rest of the States, so it's probably available where you are. Or maybe you can mail-order/ -

ARCHIVED gluten-free Matzo Balls
Fiddle-Faddle replied to Fiddle-Faddle's topic in Gluten-Free Recipes & Cooking Tips
Sorry--even substituting oil for the fat turns them from fluffy floaty heavenly delights to hockey pucks. But somehow, even thought it's animal fat instead of olive oil, I do think it's healthy. I mean, this is enough matzo balls for at least 5 people! Better than eating Cheetos! -
ARCHIVED White Sauce In Chinese Restaurants
Fiddle-Faddle replied to BostonCeliac's topic in Gluten-Free Restaurants
Definitely ask, as it's supposed to be made from cornstarch. Of course, if youa re sensitive to cc, you need to know that even without the sauce, it'll probably be made in the same pan that wheat noodles were stir-fired in two minutes before they made your General Tso's chicken. There are also dozens of recipes for General Tso's chicken on the internet... -

Hang in there, Autumn! They say bad things come in threes. You've had your three--you're done now, and ready to pick up the pieces and go forward. Prayers winging their way toward you (and upwards, too)! -
Time for comfort food! gluten-free Matzo balls This recipe is from someone named Sara who used to frequent the glutenfreeforum. 4 TBSP chicken fat (save a little in a tub in the freezer every time you make soup. You can also take chicken skin and/or fat from any raw or baked rotisserie chicken, put it in a frying pan, and cook it til the fat renders...

ARCHIVED Gluten Free Soup?
Fiddle-Faddle replied to linds's topic in Gluten-Free Recipes & Cooking Tips
I get rotisserie chickens from Costco that are gluten-free. I don't know about Wegman's--you'll have to ask for an ingredient list. I know that Giant Eagle rotisserie chickens are marinated in soy sauce (thekind that has wheat starch), so those are out, but Costco's taste better anyway! So I take all the meat off the bones, serve the meat or make chicken... -
ARCHIVED Best Gluten-free Baking Book?

I've never liked any of Bette Hagman's recipes very much--not sure why, they just don't taste good to me. Annalise Roberts has my vote--every recipe so far that I've tried has been superb--absolutely no compromise on flavor or texture! Roben Ryberg gets my #2 vote. Flavor is very nice, texture not quite up there (her breads don't rise, and the cookies... -

ARCHIVED Tailz Tests Positive For Lyme.
Fiddle-Faddle replied to rinne's topic in Introduce Yourself / Share Stuff
Just wondering --why is igenex the only lab who can correctly diagnose Lyme disease? (I'm not being argumentative here, I really want to know why!) And if this is true, then, nini, was your Lyme disease ruled out by igenex? (Just wondering, not trying to say that anybody has Lyme instead of celiac.) -
ARCHIVED Lara Bars
Fiddle-Faddle replied to mookie03's topic in Gluten-Free Foods, Products, Shopping & Medications
Did I just get a bad batch? I tried the chocolate coconut chew, and I thought it was horrible. Really. It had this very strong metallic/alcohol flavor. Not sure where that came from. I checked the ingredients, and couldn't find anything to explain that. I tried a bite from 2 different bars ( I had bought a bunch) and threw the rest out. I was very disappointed... -

Does anybody know what chemicals are in hair dye? (I don't ) That green makes me wonder if there's some kind of heavy metal action going on (no, I don't mean the music)? I remember reading a long time ago that beauticians have a very high miscarriage rate, but that was before the days before everybody wore latex gloves for everything. Hmmm...I just... -

Can you spike it and pretend that you meant for it to look that way? On a more serious note--is it possible that hair color can cause the immune system to freak out? I've been wondering because I did highlights a month or two before my thyroid went kaflooie, and then I stopped with the highlights. fAst forward 19 years: I started with all-over hair... -

ARCHIVED Meat Loaf!
Fiddle-Faddle replied to Fiddle-Faddle's topic in Gluten-Free Recipes & Cooking Tips
The worcestershire sauce in our cabinet is Heinz brand, and it contains wheat--haven't yet checked any others at the supermarket, though. I just tried to approximate the taste and components of worcestershire sauce by mixing soy sauce ( La Choy) and fish sauce (which contains anchovies, which is also in worcestershire sauce). Susan--I LOVE the fresh onions... -
ARCHIVED White Sauce In Chinese Restaurants
Fiddle-Faddle replied to BostonCeliac's topic in Gluten-Free Restaurants
"White sauces" at Chinese restaurants are always made with cornstarch. The breading for General Tso's chicken and other deep-fried breaded items is also supposed to be cornstarch. I suppose it's possible that somebody decided to use wheat, though. Either that or cross-contaminaiton, if you are sensitive to that. It's certainly possible that wheat noodles... -
I refuse to monkey around with gluten-free breadcrumbs--I'm stubborn! 1 1/2 Cups crushed Doritos Cool Ranch (use regular corn chips if you're avoiding dairy)(or 1 1/2 cups cooked rice) 3/4 Cup ketchup 1 envelope Lipton dry onion soup mix (generic has gluten, be careful!) 1/2 Cup hot water 2 eggs 1/2 teaspoon soy sauce 1/2 teaspoon fish sauce (original...
