My reactions have shown up anywhere from 30 minutes to 6 hours later. I have no idea on if the amount of gluten affects how severe or how soon the reaction shows up. I hope you get to feeling better soon. -

As long as I haven't gotten sick from a neighbors gluten free cooking before and the neighbor really understands cross contamination issues and what we can and can not eat, I would feel safe eating it. Since you have made things in the past and they have had no problems, the casserole should not be a problem. -

Get your own toaster. I bought me a cheap basic one at Target for under $9. My mom has DH, and I had not had it until I was gluten free and got glutened somehow. I don't know, but I know my hubby (43) had his testosterone checked about 2 weeks ago and it was 249, when 240-1150 is the range. Our general practitioner sent him to a urologist (why? this is an endocrine problem), and the urologist has sent him to an endocrinologist. Sometimes Giardia can be very resistant. My daughter (adopted from Russia) had it when we brought her home and the doctors at Texas Children's used Alinia on her. Alinia is newer than Flagyl and is much stronger. It usually kills the Giardia in one course. I would get tested for Giardia again. It tends to go in cycles, so you may test negative sometimes... -
