  1. pick up some sweet potatoes if you can & bake one for dinner - I put mine in a casserole dish & poke a hole in it with a fork, put a glass lid on the casserold dish & bake in the microwave - time depends on size of potato. If you bake two, just put the other one in the refrig, then you can slice it & heat the slices in a skillet with some...
  2. 2tired, this is the way i cook my rice. Put a cup of rice in a round casserole dish, one of those bowls that has a glass lid, rinse the rice a couple of times, drain off the water, then put two cups of water in with the rice, some salt & put a papertowel over the top & then the glass lid, put in the microwave & cook for 10 minutes, I turn my...
  3. check the sour cream, also just because you can drink milk with no problems does not mean that you can eat sour cream with no problems. with food intolerances/allergies there is something about food combinations that can "do you in". So maybe you can do sour cream but not say sour cream with corn or tomatoes at the same time or all three at once is the...
  4. can you eat dairy? rice is a good stay with you food, baked sweet potatoes with brown sugar & butter on them, hershey chocolate bar? , scrambled eggs with rice & cheese I do not buy gluten-free foods except for Lundberg rice chips, I just eat regular food. when I could eat cheese, I would bake it with cooked rice like a macaroni...
  5. It seems to me that you are reacting to something in the bread. It could be one of the ingredients or cross contamination. I get sick eating any of the replacement grain things. It could aslo be dairy one or both could cause the symptoms you are describing
  6. Lister, I do not know anything about Prilosec. I do not take over the counter meds, or really any meds - nothing ever seems to agree with me. But maybe you could google it or someone else on here might know. I get my B12 at Walgreens, Nature Made brand, if you watch the papers they put it on sale buy one & get one free, somewhat frequently. If you...
  7. Mayflower, it does go away - really, some say it takes three weeks to get over a craving - so maybe you are on the edge you might also still be grieving for the change in life style. Do you have a hobby? Are you eating a variety of things? Have you found some new comfort foods? Are you indulging yourself in some good things - like some great...
  8. Lister I hope you are doing better. Yep you need to get out of that fast food place. also get checked for tape worms etc. I have had that gurgling stuff in my stomach, but I know that it is scarry when you feel & hear it! - it could just be your food moving thru the intestines. Because you are not eating properly & getting enough nutrition, it...
  9. Susan, I encourage you to go easy on those gluten-free treats at first. I hate to be the bearer of this news but with the runny nose stuff it might be dairy. You should probably give up dairy at the same time as gluten. Read Dangerous Grains book. But the good news with dairy is that you might be able to tolerate it later if it is a problem now. Also...
  10. I am not too familiar with this board but there might be a newbie place where it gives you all the information for the diet. But to start off you want to just start with all fresh foods - we call it eating "whole foods". All vegetables, all fruits, all nuts, all seafood, most all cheese, but not the cheese speads and stuff like pimento cheese that has...
  11. laura & Nancy I must repeat the Well Said from Patrick. Patrick, I think that they are going to find that it is in fact 30% of the population. In my office building alone there is me & a guy about 35 gluten-free for 2 years, & a lady in the office next to him (long curly red hair skinny as all get out) that kept listening to us talk...
  12. The personal experience with my family is that non celiac, if you will, DQ1 does cause automimmune illnesses just like "celiac". Really the only debate here is that "The Doctors" have a narrow definition of what is celiac which is you have villi damage as proven thru biopsy. & the doctors further believe that if you do have villi damage that you...
  13. Mike, I used to get tingling of the face (slightly) & the ends of my fingers (very aggravating) from black pepper. Check out the night shade foods re tummy ache when after eating something. My guess is that you are either getting cross contamination or you are eating something that you have an intolerance or allergy to. Sounds a lot to me...
  14. Hi Rachel, yes I am from that board, geez, are they not going to get it going again? That would be a shame if they do not. If they do not, they need to move their posts to the list serv. There were a lot of us DQ1 people on there. I have read that board everyday for the past 2 years. I am in withdrawal & yes, DQ1 comes with the potential...
  15. PJKR, about your mom testing negative. She might have gotten a false negative test. I suggest the gene test thru Enterolab.com I have read a lot about epilepsy & the gluten-free diet helping some of them, especially if your mom has DQ1 genes, which is a lot of neuro symptoms. Going on the gluten-free diet is really the best test, & yes...
  16. I cannot eat any processed foods like rice crackers, any of the "flours" or potatoes, plus I have some food allergies - but not as many as when I was eating wheat. I have just about given up on replacement type foods & stick to whole foods, & Lundberg Rice chips, which I use like a cracker. I seem to do okay with rice - I get Lundberg or...
  17. Mine came from Irish/ English, McCann & Webb (father side)- I have two DQ1 genes & can pinpoint celiac on both sides of the family. Mother side is English & a mix of Northern European. I have a half sister that is about 1/4 Cherokee, I think that is how it goes, anyway her father was 1/2 Cherokee. I think it is sad that she does not embrace...
  18. the level of your blood test does not mean that you are a little or a lot celiac. A blood test cannot tell which you are, celiac or gluten intolerant. A blood test tells you that you have antibodies to gluten. It is sorta like being told you have cancer in degrees. Either way, a lot or a little, you got cancer. If you want to know whether you have...
  19. Do not be misled into thinking that DQ1 is "only" a gluten sensitive gene. It is as bad or worse than DQ2 or DQ8. If you read the book Dangerous Grains it goes into the gluten sensitivity and really portrays it as worse than celiac as it the umbrella that celiac disease is under. re the son that has DQ8 & symptoms, I would bet that he also has...
  20. Guhlia re daughter's photo, I am continuously amazed when I see these photos on the boards that they all look like they could be in my family. I have the blue eyes, very fair skin & used to have brown hair with red highlights, now it is mostly silver others in my family have the blue eyes, reddish hair, or blonde, especially when they are young. There...
  21. Brain Talk had a hardware crash about July 20, 2006 & is repairing that and upgrading the software, or at least that is what I read. NancyM - nice to see you hear also How are you doing? Patrick, have a nice glass of wine & a shrimp cocktail & make a list of all the things that you can eat & also check the boards for ideas &...
  22. For the best brownies try the Truffle brownie mix by Gluten Free Pantry I like to add nuts and if I have a really sweet tooth I top with homemade powdered sugar icing. Everyone likes these brownies... You will not be able to tell that they are gluten-free !! forgot to say that you can wrap the leftovers in foil & freeze them for lunches etc.
  23. -Are bananas still considered one of the best ways to help “cure” a bad reaction? I can understand the K+ replacement aspect (I’m having muscle weakness and some neuropathies today), but is there anything else to the magic banana? Any other “remedies” other than time? -Taco Bell is bad? The ground beef contains fillers? Are the chicken or beef strips ma...
  24. Erica, I just read this thread and also hope you are doing okay. That was not a friend, & you do not need someone in your life that behaves so badly as to email a list of faults as they see it. I hope you have gotten into some activites that you like and found some new people to get to know & maybe find another friend or two. Wishing you the...
  25. Oh, the doctors are making such a mess with their spotty knowledge, as politely as I can put it Everyone here is right on with their information on genes. You only have to have ONE gene to be celiac and yes, there are several celiac genes they think that are not identified yet. You can also have DQ1, which only two labs in the U.S. tests for. (Enterolab...
