ARCHIVED A Question About Enterolab
daffadilly replied to IMResident's topic in Coping with Celiac Disease
Right on Cara !!!!!!!!!!!! especially for children the blood tests are not accurate. sometimes I wonder how many of those blood tests are actually run or if some lab person just wants to go home early. I talked to a lot of celiac people yesterday (in person) & I had more than one person that repeated my saying - test for the genes - if you have... -
ARCHIVED Want To Buy A Bread Machine
daffadilly replied to Suzie-GFfamily's topic in Gluten-Free Recipes & Cooking Tips
yesterday I was at a talk given by Beth Hillson, the creator of Gluten Free Pantry, that she has recently sold to Glutino & is now promoting their products & working on new things for them & she recommended the Zojirushi, becasue it has "more surface" for the bread to cook, is horizontal, has two paddles, & can be programmed manually. ... -

ARCHIVED A Question About Enterolab
daffadilly replied to IMResident's topic in Coping with Celiac Disease
my son yes, but when they are in denial they are into it. They would rather blame me - the mother as being all kooky etc. & then the docotrs back them up, so you know it is a losing battle. I do have a glimmer of hope that he will come around. He is super smart so how long can he keep his head in the sand? It is just so hard for some people to... -
Lister there are exercises that you can do that help move a "lazy bowel". For one you can get on the floor on all fours, your knees & elbows, then take one leg & stick it straight out back & draw it to your chest, do those a few times & then with the same leg lifted off the floor & bent, lift it sideways, then repeat with the other leg...

Justme, I feel for you. Yep, it is going to hard for you to understand but you are getting gluttened in your kitchen. IMO, That is what is causing the gas & bloating. It is almost impossible not to be getting gluten in the kitchen, if it has not been deglutened!! I bet if you ate at my house for a week you would be fine. I do not allow anything gluten...

ARCHIVED A Question About Enterolab
daffadilly replied to IMResident's topic in Coping with Celiac Disease
Andrea I think if you have one celiac gene they call it celiac disease, it only takes one gene. But with the added DQ1 gene I think that the chances that you actually have symptoms & are sick etc. is much greater, and those symptoms are worse than if you just have one gene. This is just my opinion & what I have observed among those of us that post... -
ARCHIVED A Question About Enterolab
daffadilly replied to IMResident's topic in Coping with Celiac Disease
Thanks Andrea, yes I have read "dangerous grains" - I love that book & have given it to a couple of people & recommended it to a bunch of people. I am really worried about my grandchildren, I just found out yesterday that they were all sick, but I know that my daugher in law will take good care of them, she knows in her heart that they need... -
ditch the rice crakers & check the milk stuff, some of it has barley some of us cannot do grains I believe that all grains are cross contaminated. It does not bother some people but it really bothers some of us. Unfortunately we do not get to choose which ones we will be !!!! I do not know what athenos hummos is. What is it? just my personal...

ARCHIVED A Question About Enterolab
daffadilly replied to IMResident's topic in Coping with Celiac Disease
I already knew that I was "allergic to barley & Oats" for 30 years, in addition to that I had been mostly wheat free for 10 years, thinking a wheat allergy. When I was researching Hemochromatosis, that runs in our family (we found a relative & my father's brother died of it), it linked me to celiac disease. I read about celiac disease & it... -
ARCHIVED Need "fancy" Dessert Recipe
daffadilly replied to lonewolf's topic in Gluten-Free Recipes & Cooking Tips
Lemon curd mixed with frozen non dairy creamer (forget what you call that stuff), & some powdered sugar, spoon into individual containers, top with any berries, garnish with fresh mint leaves, serve on a saucer with a white doily, garnished with mint leaves dipped into non dairy chocolate, with a curl of lemon peel, or candied lemon peel (homemade is... -
ARCHIVED Easy Coconut Pie Crust
daffadilly replied to Fiddle-Faddle's topic in Gluten-Free Recipes & Cooking Tips
I would not add a beaten egg, the amount of butter really sounds fine, I have made something similar a lot. Sometimes I just use whatever cookie crumbs I have in the freezer, add butter, chopped nuts & or coconut. But the favorite of my office is: (measurements are not exact because I really do not measure) 1 cup of almond flour, about 1/2 stick... -
I do not know anything about Lithium. Have you had a recent blood work up for all your vitamin & mineral levels? And be sure to get a print out of the test results yourself. Do you take a B12 everyday regardless of the levels of B12? Are you eating a healthy diet? ie gone on a computer site where you can plug in the foods that you eat each day &...

ARCHIVED Going Crazy - Help Me Find The Gluten
daffadilly replied to tsomo's topic in Coping with Celiac Disease
Sorry you are having problems, I also think Penguin was just trying to help & I agree with Carla that when you do not have voice & body language, especially for us women, you miss a lot. But, I thought your outrage was very healthy & well written especially considering how terrible you must feel right now. I read it & got the picture of... -
ARCHIVED Coping With Relatives That Don't Understand
daffadilly replied to LonelyWolf307's topic in Coping with Celiac Disease
Lonely Wolf, Yes, you are doing a great job. Re the dad, well you could humor him & say you know you might be right dad, maybe in a few years when I am all healed up... (& no need to mention you will be out of the house by then) & you know I also like the idea of asking his opinion on other stuff etc, I think maybe he wants to be the great... -
Dear Justme, I agree with Carla, for one thing skip the cereal, IMO you should not add cereal to your diet until you are at least 6 months gluten-free - well unless you are so healthy that you have excess energy etc. For breakfast try fruit, scrambled eggs, ham, bacon, or turkey For lunch how about a homemade chef salad with lots of spinach,...

ARCHIVED Dairy Free Fudge?
daffadilly replied to daffadilly's topic in Gluten-Free Recipes & Cooking Tips
Artgirl, you will love the fudge & Amdrea's recipe sounds great. I have another candy recipe that I will post for you. It is dates & sugar boiled together with nuts added. I will have to look it up. How long have you been gluten-free? Is your glycemia (sp) getting better? Andrea, I have not gotten the Enjoy Life Chocolate chips yet, but... -
Thanks, I am already planning my next batch, & have the jars all ready!! I am thinking that would be a good thing to share with my celiac group.

My old standby tortilla filling for breakfast is to heat up the tortilla in a skillet (still soft) & put peanut butter, jelly & bacon & roll up. Today I branched out & heated up some prosciutto in the skillet, then topped my tortilla with prosciutto, minced red onion, cilantro, diced red cabbage & a dap of mayo, rolled up & oh my...

ARCHIVED Dairy Free Fudge?
daffadilly replied to daffadilly's topic in Gluten-Free Recipes & Cooking Tips
Andrea, thank you so much for that recipe, I am putting it in my file, it sounds wonderful. Since I cannot eat chocolate bars anymore - because of the dairy, I am thinking I will have to make my own candy & this sounds more like something I would like on a regular basis. The casien free gluten free chocolate chips are wonderful, this is the first... -
ARCHIVED Ever Gone On A Mission Trip?
daffadilly replied to KayJay's topic in Coping with Celiac Disease
oh, almond butter is divine, also at the grocery you can get that Hormel lunch meat in a pack that says it is all natural & it is labeled gluten free - the stuff is good. If you can do dairy cheese is good for picnics Have a great trip -
banana smushed up with some ice cream - not sure where you are but here in the south we do Blue Bell Ice Cream. BUT, on second thought with the post nasal drip it could be dairy & really that is probably it, very common - in my family at least. So you might go with applesauce, you could thin with apple juice if needed. another easy healthy mushy food...
