  1. Cycler, Cornbread is easy, just use corn Flour in place of wheat flour, no need for any gums etc, or other substitutions. I have been making this for years before I even knew about celiac, because I was mostly wheat free, and totally barley & oat free. I do not use rice flour in anything - I hate the grit taste. let me know if you need a recipe....
  2. Jestgar, I made my fudge like your mom makes with the marshmallows & it tastes wonderful, only thing was I made one third of my usual recipe which makes 5 lbs, and I guessed on the coconut milk & put a little too much, it might not harden perfectly. So, darn I might have to make it again before Christmas to test out the recipe For those that...
  3. for ones that do not seal can you just put parafin wax on the top of the jelly, like they used to do a long time ago? You sound like a great mom, those are the things that kids really remember when they grow up.
  4. I have never done a mission trip, but I travel & have no problems. Of course I can practically live on trail mix for a week. I do not eat cereal or bread. I eat a lot of veggies & fruit. You can take canned or packaged tuna, canned soup, taste of thai meals, (there are microwaves everywhere) Lundberg Rice chips & rice cakes, peanut butter...
  5. I forgot to add that I am so sorry your college buddies are acting like that, ignorance is no excuse but those girls have no clue about anything I am sure. But you know they will look back on this time & regret it, wait a few years till they have gone thru childbirth & have sick kids & then start getting sick themselves etc. It might be best...
  6. how about trying a soak in the tub or a warm shower to see if that helps anything in your throat relax?
  7. Some of us have a swallowing problem that crops up from time to time. I forget what it is caused from, sorry, there was a huge thread on this topic on brain talk & they are not up & running yet after their hardware crash. Mine has not happened in a long time, I have been gluten-free 2 years & 3 months. Are you sure you are not getting cross...
  8. tailz, it is sorta like having jet lag without going anywhere. I am not up on all the latest, but one of the main things it that you need to expose your body in the mornings to sunshine. Somehow that is supposed to reset the pineal gland that is in the center of your brain. I did a term paper on that once, but have forgotten most of it... That was a lot...
  9. Good for you, I jsut read this in the paper this minute & thought I needed to share it with you. Also, how about getting yourself some mint plants, that stuff will grow anywhere, if you have a yard, be careful where you plant it, because it will spread like wildflower. I have some plants & love the stuff in my foods, & mint tea etc. "Scientists...
  10. Take B12 Exercise get a minimum of 8 hours sleep a night
  11. This is very interesting, I have no info to add except my own experiences that I wish I understood. But a lot of the times when I eat something I get a runny nose, immediately. At the moment I am eating an apple, which does not cause a runny nose. Also, a while back I ate one all fruit frozen bar, commercially made, & I got a pain in the back of my...
  12. Josh, I hope you can convince your wife to also go gluten free. Has she had her genes checked? I like Enterolab.com because they also test for the DQ1 genes, a real baddie. I think almost all people with cancer should be on this gluten-free diet. Especially if they have the genes & cancer. I see that in my family & others that i know that have...
  13. be sure to take a B12 everyday. jknne, a complete blood work up would be a good idea, you might have some deficiencies. Be sure you get a copy of the test, do not just take what they say over the phone etc.
  14. sorry I have not read your bio, I never said sugar caused diabetes, I think you misread that, Is english your first language? I did refer at the end of a jest about a diabetic eating sugar, not the cause of the diabetes, the diabetics that I know cannot eat sugar, maybe the ones that you know can. even those comments were offhand & not to be taken in...
  15. I would advise you to stay gluten free & forget additional medications whether natural or not. your body will heal if you feed it the right foods & give it a chance. Are you getting 8 hours of sleep a night, at least? are you eating nutritious healthy meals with lots of fruit & veggies? have you checked the Specific Carbohydrate Diet? ...
  16. Dan, I have not read this book yet, but I do know that a lot of sick babies were put on the banana and rice diet during WWII. They used to think it was a children"s disease and that you grew out of it. A lot of people still think that, just two years ago a school nurse friend of mine, could not believe that I had celiac, she looked at me funny & said...
  17. For those making your pizza from scratch: when you find the recipe that you like and are using, line up about 10 of those square disposable containers & go down the line & put each dry ingredient in every container. Label the top with the directions for the wet ingredients & bake time etc, & wahlaa you have a mix that can be ready in minutes...
  18. I would also like to mention for those new to the allergy problems that it is also food combinations. Like if you eat rice that day you might not want to eat corn. For me a corn & potato combination is disaster. Combination problems are different for each person.
  19. One more veggie hint, I keep a tupperware container in the freezer & i add any little bits of leftover cooked veggies to it, you know that 2 tablespoons that is too little to keep but you hate to toss it, then when the container is full, I make a pot of soup. Note: potatoes do not freeze well, they turn mushy.
  20. Chocolate Cupcakes 1 Cup Brown Sugar 1/2 cup butter (1 stick) 2 eggs 2 teaspoons vanilla 1/2 Cup Buttermilk 1/2 Cup Milk PLUS 2 Tablespoons milk Dry Mix: see note: 1/2 cup Soy Flour 1/2 Cup Potato Starch 1/2 Cup Tapioca Flour 1/2 Cup Cocoa Powder 1 1/4 teaspoons baking soda 3/4 teaspoon salt 1 scant teaspoon Xanthan Gum...
  21. I let my chicken broth cool, then pour 1 cup in a baggie & freeze. you can freeze them flat, takes up little room. When I bring the veggies home from the market, as I am prepping them, everything is well washed etc, I put a pot of water on the stove & throw in all the veggie pieces like the ends of the onions - peels & all, the ends of the...
  22. Everyone, please remember to get a hard copy of any test. Do not just take the answer that is given to you. Get a hard copy for your file, even if you cannot read it - someone can !!!! Plus it is just a good record to keep to compare to thru the years.
  23. Re "eat right for your blood type", I love that book and it was right on for me, well except for the no gluten that was not mentioned, but hey, I take a little knowledge here & a little there & come up with something that works for me. To those not feeling good yet, please factor in how sick you were to start off with & how old you are. I...
  24. Jayhawkmom, yep do not worry about later, just take care of today... re dairy, if you are dairy sensitive you are not supposed to have it period, do not take lactaid etc. that is like eating gluten and taking antacids!!!! Now that does not mean that you cannot ever have dairy again, you have about a 50% chance of that going away, but it is not...
