  1. Oooh interesting. I was diagnosed with a penecillin allergy as an infant, I wonder if aspergillus niger is in the same family as penecillin or if they can be cross reactive? Citric acid is in a lot of stuff when you start to do some investigating. Of course as cornbread says, it is listed on the corn allergy websites as being derived from corn, or involving...
  2. Hi Ursula, I guess I am confused because I thought I read fruit and vegetables are treated with corn waxes and oils, and chicken is washed with a corn acid rinse. It was the hidden sources or added sources to the natural foods that made me think what in the world would I eat if I did go corn-free?!?!?
  3. I could have sworn I found a company that makes chocolate chips and white chocolate products with soy in place of the dairy ingredients. Of course that wouldn't be good for those who can't tolerate soy. I will look for them the next time I go to my little health food store and let you know.
  4. I'm very sorry about your news. I understand about the fertility issue, not knowing if it's a possibility. There are so many things that can be done these days and miracles do happen. Just try to keep your chin up!

    ARCHIVED Kissing

    Thanks Berneses!
  6. Homemade chicken soup, that's a good one! I also love to make cheeseless quesadillas for feel good food. I fill a Food For Life rice tortilla with homemade lime rice and cilantro, shredded beef, and carmelized onion and brown it in a pan with a little olive oil and top with guacamole.

    ARCHIVED Kissing

I didn't know what category this should go under, I figured here because maybe it involves recovery and treatment?!?! Can you get glutened by kissing someone who has eaten gluten containing foods? I would think yes. How in the world do you get around this?
  8. I have NEVER gone without eggs. I have blood sugar issues and need small amounts of protein throughout the day- beans don't work for me and I can't tolerate soy or nuts or cheese- so it has always been eggs, chicken, turkey, or beef to choose from for my protein source. Just curious as to what an egg allergy/intolerance might look like? After almost...
  9. Thanks jenvan for the reply. I am new here, only a couple of weeks, if that, and I guess I jumped into this forum backwards! I have been gluten-free off and on for about 10 years and strictly for 2 years so I had a lot to say about my experiences with different products, symptoms, allergies, etc. right out of the box. I did post about a test I had taken...
  10. You seem like the corn free expert! Not by choice, but at least you know what to eat for you not to be sick, so good for you. I have a question, what would a health food junkie eat to stay corn-free? I generally don't like to eat anything processed or in a package with lots of ingredients you can't pronounce, except for the occasional indulgence, but...
  11. I dug out the results of a food panel test I had done in 2001 through Meridian Valley, a combined E95 and A95 for basic and extended foods. I went to the Meriedian Valley website and from what I understand these tests measure IGg and IGe in response to the different foods in the blood. I am through the roof allergic to gliadin, gluten, rye, and wheat...
  12. Rachel, the information I read on the Avoiding Corn page at delphi talked about how tricky dairy products are. For example, I guess the packaging they put the cheese in is treated with corn starch, or a corn derivative, to make it easier to package. From what I understand the packaging is pretty much a national standard, from company to company. That...
  13. I'm looking into this corn issue and I agree Rachel, it seems very intimidating and a difficult task. I am going to take a small steps approach. I would like to first clean out my big offenders for a trial run and see what happens. This for me is dairy, sugar, eggs, soy, grains, as well as gluten of course- I have never eliminated all of these foods...
  14. I have been to several acupuncturists over the years for treatments related to allergies, hormones, and other health issues, as well as just for stress release. I find it to be relaxing and the needles don't bother me. Chinese medicine is a very different approach, based on balance (yin and yang) and the energy flow (called Qi) throughout the body....
  15. What makes me happiest about being gluten-free is knowing that it is totally do-able and possible as a lifestyle, and that you don't have to feel deprived of anything, there are fabulous substitutions, and that it gets easier and easier with time.
  16. No problem, I hope they turn out for you as good as they did for me. If you can tame the sticky dough and get it to cooperate that is half the battle Also, just a tip, if you have everything sort of assembly line and ready to go before you start beating the dough mixture I found it will make the process go more smoothly-preheat the oven, grease the...
  17. So sorry, I didn't notice the little cf in the topic line! A gluten-free/cf comfort meal for me would be the Alexia Yukon Gold Jullienne Fries, no cheese needed, all golden brown and salted just by themselves very good. I make guacamole and dip them into that, if I feel like a little heat I add Amy's gluten-free salsa . Pamela's brownies don...
  18. This doesn't happen very often because of my evil, completely out of line, dairy issue, but I will make cheesy fries. I take a bag of Alexia Yukon Gold frozen oven fries and bake them until golden brown and crisp, then I add some sea salt and some shredded cheese to melt on top, monterey jack or white cheddar. For something sweet I will make a batch of...
  19. Okay then, that leaves us with lemon juice to use as the acid ingredient in baking!
  20. You are right about Simply V, you should contact her because she has lots of information and was offering her help and support. She would be an excellent resource. About the baking powder and using cream of tartar as a substitute- just a thought, but give it a test run and see how it affects you. You seem to be as sensitive as I am to different foods...
  21. Haagan Daaz (I probably butchered the spelling) sent me out a list of their gluten-free ice creams. I don't believe they list allergy information on their packaging, I might be wrong, but I called the company and they said they send out allergy information to anyone who inquires about it. I have since lost the list. If I recall correctly there were quite...
  22. I don't really miss bread now after 2 years, but it was really hard the first several months for me after going gluten free- I craved bread and pizza with a thick crust like a crazy woman. I do like the Food For Life breads best out of everything that I have tried, but I just don't have it very often because I don't do well with so many of the substitute...
  23. Simply V and I were discussing this very thing the last few days in another thread under "Celiac Saliva Test" in pre-diagnosis and symptoms. Simply V suggested I look into a corn allergy because everything I eat makes me sick, even when I am staying away from gluten. Corn is in almost everything apparently and difficult to completely eliminate. Simply...
  24. I am a big fan of all Food For Life gluten free breads and products, but as with any product it comes down to personal taste. I like the brown rice bread and the Pecan, they have 2 new breads that don't have gluten or yeast- great for people who can't tolerate yeast as well- I think a nut, fruit, and seed variety and a nut and seed variety. I definitely...
  25. Ok, I totally made up this recipe for the cinnamon rolls. I just prepare Pamela's Amazing Wheat Free Bread mix according to bread directions: I dump the flour mixture, yeast packet and 2 c. liquid ingredients (this is 1/4 c. oil, 2 eggs and warm water all adding up to 2 cups total) into a large bowl. Then I beat with a hand mixer with the dough hook...
