  1. Rachel, I feel I'm kind of in the same boat as you so I am following with interest your path. I don't really know if I have celiac but I know wheat and gluten is not something I can eat on a regular basis. I've taken out almost everything at one time or another and still haven't gotten well, or even at least stable. I really don't know what kind of diet...
  2. Hi RBC, thanks for sharing your fears. I'm 33 and I have been ready to have children since I was in my early 20s!! But with all of my health problems and food intolerances, you said it so well, I am constantly thinking how can I fully nourish a baby?? I am trying really hard to eat really well, pretty much a whole foods diet and I still struggle with so...
  3. Hi Diane, have you considered tai chi, or Qigong, as a form of exercise? It's another option for a gentle non-impactive type of movement that you could look into.
  4. Hi everybody, I've made major mistakes the last few days and I've been soooo sick. After my Cinco de Mayo corn fest, I kept eating foods to to test my system, I had only been eating fruit, veggies, and meat and I need more to eat -I'm hungry, like Chris Farley H -U -N -G -R -Y. So, it turns out there is corn starch in these crackers I ate that I get...
  5. As far as I understand, nightshades are a group of foods from the same family that include potato, tomato, eggplant, bell peppers and tobacco. Some people with arthritis notice improvements when they avoid this family of foods.
  6. omg Rachel, yep it probably was the xanthan gum. I have a package in front of me and here are the ingredients exactly as they read: Brown rice flour, Filtered water, Tapioca flour, Safflower oil, Rice bran, Vegetable gum (xanthan, cellulose), Sea salt I think xanthan gum is a real problem, it is in everything, and especially in health food products...
  7. jersey, you aren't sticking your nose in! We are all in this together! I'm glad you're GERD has been reduced, that is nasty stuff.
  8. dlp, it got my attention too, lol! I am convinced now it has to be the hidden corn and corn derivatives. I had cleared out all of the usual suspects for GERD, spicy foods, tomatoes, etc. and I still was having symptoms. I was so depressed because I was getting GERD after just eating rice and chicken, but it was the other things in the day I was having...
  9. Rachel, that is SO true. I am a complete believer. If you are ingesting a food continually you might have bad symptoms but it's really hard to tell what is what. I have always eaten vegetables and meats and pure fats, etc. but I was having a Food For Life Rice Tortilla every day for lunch (has xanthum gum in it). It wasn't until I eliminated the tortilla...
  10. I think it's good to investigate all of the options that are available to you in health care, and I agree with having some kind of professional guidance whatever you do. I wish you the best of luck Berneses!!
  11. I went off all my supplements, except for magnesium citrate and only eat fruits, vegetables, meats, and avocados and olive oil for the time being. I haven't had GERD once since and I had been having it really bad lately. I've lost my inflamation, and weight (I was really bloated and inflamed). I'm sure there has been other benefits but I can't think of...
  12. Hi Diane, I was diagnosed with CFS and Fibromyalgia about 10 years ago, and although I haven't been officially diagnosed with celiac, I now follow a gluten free diet as well. Diet has been 'key' for me for dealing with fatigue and the pain of fibro, unfortunately that has meant a LOT of cooking, preparing each and every meal for the day and when...
  13. This is great news dani!! Congratulations to you for figuring your personal health mystery out, and better yet for getting positive results and finally feeling good
  14. Berneses, yeah, exactly what Alexandra said! I don't quite remember how it all works but if one hormone is low or high it throws the whole balance off. So in my case the theory was to take supplemental progest in an attempt to level everything off. Sorry for the third grade explanation. I have to say though I was under strict supervision of my naturopath...
  15. I have a similar situation. My hormones are out of control, I was the picture of pre-menopause/menopause at age 17. I have been trying to figure it out all these years. I don't really do main stream, or western medicine anymore so I don't know the technical terminology, but I heard things in those circles like Polycystic Ovaries, not enough testosterone...
  16. Pizza, chocolate cake, and cheesecake, my weaknesses once upon a time...
  17. I agree. Pamela's Products seem like they really try to accomodate people with celiac or gluten intolerance, as well as other food allergies (dairy, corn, egg, nut, soy, etc.). On the website they have an entire link to allergy information and you can see what product is free of what allergen, or what product has what allergen. I do hope they take...
  18. If you are talking about the Dark Chocolate Chocolate Chunk, omg I completely agree with you. Totally divine! My problem is I can't have too many at a time or I get a caffeine rush with the dark double chocolate whammy.
  19. I tried it, but it was several years ago. If I remember correctly, it is a very very tiny grain, unlike rice or millet as far as size. When you cook it with water it makes like a cream of wheat/rice texture. I have a direction booklet for cooking grains and legumes, and etc. It says: Add 1 cup of teff to 4 cups boiling water and cook for 15 minutes...
  20. I like to cook my millet in a pressure cooker. It gives it much more flavor in my opinion and I prefer the texture, it comes out a little softer than crunchy. I also add a little shredded carrot and chopped onion and about 1 tbsp (or less) of coconut oil to the millet and water before cooking.
  21. This sounds yummy broncobux, I will have to try this one too! Mango, that might be tricky to not use the cheese. The cheese and dairy holds it all together and melts and makes it all creamy, gooey, and yummy of course. Darn that dairy! I don't know if you could mix in some olive oil and seasonings or herbs instead? It might be a little dry...
  22. Very good news about the Desert Essence Organics all gluten free line, thank you for sharing jenn! I have used their toothpaste and floss and really like their products. I will look for the hair line next time I go to my health food store. I'm just going to try everything until I find something that works for me and my big hair! Carla B,...
  23. Sounds really good, thanks for sharing! I will have to try this soon, the sky's probably the limit with what you can top them with.
  24. I heard, or read, somewhere that Pamela's Products was going to change their one and only gluten filled product, Oatmeal Raisin Cookies, to a gluten free cookie taking out the oats and changing its name to Old Fashioned Cookies. This would make Pamela's Products a completely gluten free line and a dedicated facility. Anybody heard anymore information...
  25. As far as mixes go, I keep on hand: Pamela's Amazing Wheat Free Bread Mix Pamela's Chocolate Cake Mix Namaste Vanilla Cake Mix and other pantry items that I have: Spectrum Olive Oil Mayonaise Amy's Ketchup, Original BBQ Sauce, Family Marinara Pasta Sauce, and Salsa Native Forests Organic Coconut Milk Pacific Rice and Almond Milks Maranatha...
