ARCHIVED Cereal Recommendations?
eKatherine replied to katrinamaria's topic in Introduce Yourself / Share Stuff
Erewhon makes a safe crisp rice cereal and Nature's Path makes a couple of varieties of safe cornflakes. I am under the impression that the Codex requirements are more for the convenience of the manufacturers than the safety and health of celiacs. -
ARCHIVED Tortellini And Ravioli

I had some fried once. Everybody around me loved them, but I was, eh... -
ARCHIVED Poll: How Many Have Celiac And Sleep Apnea?
eKatherine replied to Janine's topic in Related Issues & Disorders
I wonder how many people would have chosen the option "I have neither" if it was offered.I know this is a celiac board, but I consider myself to have a gluten intolerance that is not (yet) celiac, and probably won't be so long as I don't consume gluten. -
ARCHIVED Hair Dye Products
eKatherine replied to Judyin Philly's topic in Gluten-Free Foods, Products, Shopping & Medications
The henna reacts with the metallic dyes to form new and stunning colors, like deep blue-green. And it can't be filxed, you have to grow it out. -
Looked it up. Dang. I was hoping it was a chain.

ARCHIVED Interesting Article On The Potential Progress Of gluten-free Foods
eKatherine replied to jkmunchkin's topic in Publications & Publicity
It sounds like it has the potential for being a good thing, depending on what the regulations they propose will be. Or, it could be no help at all to have "gluten-free" foods that contain too much gluten for celiacs. -
ARCHIVED Social Behavior -add, Aspergers Etc.
eKatherine replied to gfp's topic in Coping with Celiac Disease
Gosh, Ursula, for every story you tell I could match it. What memories this is bringing back...but I don't want to hijack this thread any more than I already have. -
Why are they telling you you need an endoscopy if they have already given you the celiac diagnosis?

Shortening has a higher melting point than butter, so it will have less of a chance to spread before the surface of the cookie is set. If you were to try two batches side by side it would be easy for you to see the difference. Back in my gluten days, I would add rolled oats to a cookie recipe that was a spreader to make it into a thick and chewy cookie...

ARCHIVED Are These Symptoms Possibly From Gluten?
eKatherine replied to Lymetoo's topic in Coping with Celiac Disease
I used to get foot and leg cramps that calcium didn't help. It turned out that they were cured by taking vitamin E caplets (d-alpha tocopherol only). If the calcium supplementation doesn't do it, you might want to try that. -
ARCHIVED Funny Breakfast
eKatherine replied to BRUMI1968's topic in Gluten-Free Recipes & Cooking Tips
Fill a nonstick pot about 2" deep with water and bring it to a simmer. (You can use other pots, but they are more likely to stick.) Add enough salt to make it taste as salty as soup. (Some people add vinegar at this point, but to me it makes the eggs taste like a chemical factory.) Break the eggs into a dish to make sure they are perfect... -
ARCHIVED Social Behavior -add, Aspergers Etc.
eKatherine replied to gfp's topic in Coping with Celiac Disease
As birthday or Christmas gifts I used to get used appliances that people he worked for didn't want anymore, so they offered them to him instead of throwing them out. We were supposed to go on a getaway together, but he was totally opposed to planning in advance, which would spoil the spontaneity of it. Came the time, and he had not put in for time off... -
ARCHIVED Social Behavior -add, Aspergers Etc.
eKatherine replied to gfp's topic in Coping with Celiac Disease
This is giving me flashbacks. When my now ex-husband and I went to the marriage counsellor, he brought his list of "demands" that I would need to meet to keep our marriage together, things like giving the baby a haircut and buying her more clothes, mostly silly things. I just wanted him to give up his girlfriend, which clearly was unreasonable in his mind... -
ARCHIVED What's In Your Olive Oil?
eKatherine replied to penguin's topic in Gluten-Free Foods, Products, Shopping & Medications
There is a brand of oil sold mostly to restaurants that contains 10% olive oil and 90% some other vegetable oils. It is commonly used in places like that. PRODUCT DETAIL La Spagnola 10% Pure Olive Oil Blend An exclusive master blend of soybean oil, canola oil, corn oil and 10% pure imported olive oil. INGREDIENTS: Soybean Oil, Canola Oil, Corn... -
ARCHIVED What's In Your Olive Oil?
eKatherine replied to penguin's topic in Gluten-Free Foods, Products, Shopping & Medications
I'm a little skeptical of how prevalent some of this is. First, hazelnut oil is more expensive than olive oil, so it makes very little sense to use it as an adulterant. Isn't canola oil a product of North America? Lower grade, yes, I can see that is easier to do, but even pomace oil would need to be processed before it could pass as extra virgin.... -
A sales pitch based on a testimonial from someone who was originally misdiagnosed.

ARCHIVED Grinding Flax Seeds In A Pepper Mill?
eKatherine replied to RiceGuy's topic in Gluten-Free Recipes & Cooking Tips
The reason you need a ceramic mill for salt is because salt will corrode away any metal it is exposed to in a short period of time. That mill is specifically designed to broadcast pepper, grind it and spread it evenly over the top of a dish. It may be used for other things. It's a work of art, but that's not how you are intending to use your ground flaxseed... -
It is possible to find some free ones on the web, although I don't recall where I saw them. I saw a couple of different types. One was less detailed than I've heard the Triumph ones are, and was available in fewer languages. the other was just a template where you put in your dietary requirements yourself. You can even make your own up and print them out...

A lot of chocolate chip recipes - like the ones on chocolate chip packages - are designed to cook up deflated and flat. Adding xanthan gum to a recipe like that won't change that. You will need to reduce the sugar and fat in the recipe (probably by 1/8) and use shortening or spectrum instead of butter. Chilling the dough will help the spread, too.

ARCHIVED Grinding Flax Seeds In A Pepper Mill?
eKatherine replied to RiceGuy's topic in Gluten-Free Recipes & Cooking Tips
A Open Original Shared Link shouldn't cost more than $30. It really is what you need. These specialty items are lower-volume and more likely to break down, not less. You definitely don't want a mortar and pestle. It takes a lot of work, and still won't grind as fine. It crushes, so you end up with whole husks in your meal. -
I have heard women who had been anorexic say that even after they recovered their health with proper eating, their hair remained thin. It did not grow back as thick as it had been before their eating disorder.

ARCHIVED After Three Years, I Need Some Outside Help
eKatherine replied to a topic in Parents, Friends and Loved Ones of Celiacs
I know you mean well, doing all these things for him, but it's also possible that he hasn't really accepted responsibility for his own health, which you seem to have done singlehandedly. He may be transferring his resentment at the diagnosis onto you. -
ARCHIVED I Need Documentation Of Possible Symptoms
eKatherine replied to sillyactsue's topic in Parents, Friends and Loved Ones of Celiacs
Are you gluten or casein-free? -
How many hairs are you losing each day? Count the hairs in the brush, comb, and shower. It is normal to lose 50-100 hairs in a day. If your hair is thinning, it may not have anything to do with the celiac.

ARCHIVED Social Behavior -add, Aspergers Etc.
eKatherine replied to gfp's topic in Coping with Celiac Disease
The system is not designed to be flexible. When I teach Spanish in middle schools, most classes have a native Spanish speaker in the class. The other students have no language fluency whatever - and the teaching methods will not change that - while this student is learning nothing from a teacher who speaks the language poorly if at all. At least in the...
