  1. You could just need more calories. If dairy is a large part of your diet, giving it up is like skipping a meal each day.
  2. When it comes to this disease, doctors forget that the oath they took says, "First, do no harm."
  3. CFS is one of those "symptom" diagnoses, like IBS. It doesn't say anything about what the person has, just that the doctor gave up looking after running all the obvious tests. A lot of people with chronic fatigue syndrome find it goes away completely on a gluten-free diet.
  4. The safest spices are the ones you buy singly, in bulk or in jars, with no additives. Make your own blends and you won't have to worry about anonymous ingredients glutening you.   6. I have a Open Original Shared Link that I've used a few times. Do your research before buying a soymilk maker. The cheaper ones don't cost that much less, but they break within a month and get terrible reviews. I would be worried about buying an appliance off a website that has nothing but a brief uninformative commercial clip and a "buy now" button.

  8. Knowing that I love goat cheese, I did a goat's milk challenge about a month ago in the hope that I might be able to use it for general purposes. Unfortunately I determined that I dislike it so much I'd rather go without milk than use goat's milk. Such is life.
  9. There are two kinds of coconut oil. The purified kind is flavorless, and a good substitute for butter in baking. I get it at Walmart - LouAna brand. Virgin coconut oil has coconut flavor, so you can't use it for everything. You can give a child rice milk, but it is a beverage, not a food with a similar nutritional profile to milk.

  11. I've found from working with Asian rice noodles that if you soak them in warm water until flexible prior to ,boiling, they not only cook quicker but have a bouncier texture when cooked. Some of the noodlle I find in the Asian markets are very thick, like spaghetti or long Italian macaroni, and they get doughy and make a sticky mess when boiled for 20 minutes...

  14. Casein is the main protein in cow's milk. Lactose is milk sugar. While you can have a dairy product with no lactose - like a hard, aged cheese - or with no casein - clarified butter - generally they have both in them. Give dairy up for a week to see how you feel. Even if you have yourself tested and come up negative, you may still find heath improvements...
  15. Hydrogenated coconut oil has a higher melting point than unhydrogenated coconut oil, so it will be solid year round no matter where you live. Actually, being doctors means they have spent many years working such long hours that they have no choice but to eat the sorts of foods available in vending machines, fast food joints, and hospital coffeeshops. They probably have no idea what the lifestyle of a person who consumes whole foods, freshly prepared might be. They can't even imagine it being possible...
  17. To what extent and for how long was your daughter gluten-free? From what you've been saying it sounds like you're still working out the particulars of a gluten-free diet. Sometimes they get really upset when people take the initiative and try to improve their lives. They think if they keep you in the dark you'll stay the course.
  18. You can make good bread gluten-free, but it's not going to be like wonder bread, nor like a crusty artisan loaf. It will be moister and a bit heavier.
