  1. Just thought I'd let you all know that we'll be doing another gluten-free cooking class at the Provo Macey's on Thursday, May 15th. We'll be doing brunch foods - crustless quiche, a fresh apple cake, and some other things. It starts at 7 pm, and the class is free. Just call their customer service desk to let them know you are coming so we provide enough...
  2. larry mac - We're still working on the second book - I don't think we'll publish it until around November this year.
  3. Jo Ann - The substitution of potato starch for corn starch shouldn't make a difference - I've done that in the featherlight mix before, and haven't had a problem. It might be the baking powder - but if it's working okay in your other recipes, then it ought to work just fine here, too. Hmmm . .. Did you make any other modifications to the recipe? ...
  4. Hey, there, melannen! I got on the deseret news site and found this recipe. It came from the gfutah people, as I suspected. Here you go! Ingredients 1 cup white rice flour 3/4 cup potato starch 1/2 cup tapioca starch 1 tablespoon sugar 1 teaspoon salt 1/4 teaspoon xanthan gum 1/2 cup shortening 4 ounces cream cheese 1 egg plus 2 egg yolks...
  5. I can't believe that anyone would say that medication is the only option for a young child. OCD meds are almost always SSRIs like prozac and paxil, and almost all of the recent research says that giving these meds to children (under 18) dangerously increases the risk of suicide. Now, I haven't heard of many 5 year olds who have committed suicide, but...
  6. You might also consider having your gall bladder checked. Someone correct me if I'm wrong, but I believe that it's on the left side. My friend thought she was lactose intolerant for years before finding out it was her gall bladder - and she could also eat cheese, but not milk or ice cream. Gall bladder problems are actually problems with fats, so I've...
  7. Try using mace instead of nutmeg. (you only need 1/2 as much mace, though). It's FABULOUS.
  8. Costco's vitamins say "no yeast or gluten" right on the label (ususally on one of the upper corners of the label). Congratulations!
  9. The Utah County GIG meets at 7 pm on the first Thursday of every month (but not this December). They used to meet at Timpanogos hospital in Orem, but due to construction had to move them to UVRMC in Provo. At the last meeting, the branch manager told me that they aren't sure yet where they will be meeting in January because UVRMC hasn't gotten back to them...
  10. My daughter's diarhea went away after 3 days when we went off of gluten - I think that the younger they are, the faster they recover. One thing to watch for, though, is the soy or rice milk that you are giving her. Rice Dream and Soy Dream contain gluten from barley. (At least they did the last time I looked at them.) That might be a contributing...
  11. Haven't been on the forum for a while, but I thought I'd just drop a line and let everyone know that we've got another free gluten-free class coming up next week. We'll be holding the class at the Provo Macey's on Thursday, November 15th at 7 pm in the Little Theater. Please call the store and sign up (356-3216) so we know how much food to have available...
  12. Hello, all! Haven't been on in a while, but just wanted to announce that we are doing another FREE gluten free cooking class at the Provo Macey's grocery store tonight at 7 pm. We're going to be doing an oven fried chicken recipe and a pasta salad. The classes are held in the little theater (down the hallway by the bank, at the front of the store)...
  13. I breast-fed my fraternal twins for 11 months, and only one of them has celiac. So I would guess breast-feeding can contribute to a later onset, but isn't by any means the only factor.
  14. Just wanted to let all you utahn's (what a weird word!) know that we'll be teaching another gluten free cooking class at the Provo Macey's in March. (I forget the exact date right now, but I'll try to post it later). We're going to be making gluten free Oreo's. It shocks me how close they are to the original! I haven't made them into gluten free cookies...
  15. Dan - Celiac is definitely a possibiblity. If I were you I'd visit the NIH (National Institute of Health) website and print up some articles on celiac. I'm not sure if they've got a list of the necessary tests, or not, but tell your doctor that the Gliadin antibody tests are not very sensitive or specific, and that the endomysial and tissue-trans-glutaminase...

    ARCHIVED Er Doctor

Not that this would really solve the problem, but I'd be so tempted just to pack the whole diaper up, take it to the ER, give it to the doctor and say: "I was sure you were right and that there couldn't be anything in there. After all, doctors are never wrong. But my son disagreed with me, so could you please explain to him again how he really didn't have...
  17. Rice Crispy treats made with Cocoa Pebbles and 1/2 to 1 c. of coconut added after melting the marshmallows taste an AWFUL lot like samoa's. I've never actually drizzled them with caramel, but I bet they'd taste even better that way!
  18. Just wanted to add another vote for the "Taking Charge of Your Fertility" book. It talks about anovulatory cycles and some of the reasons behind why our cycles can go cukoo. Sometimes women spot when they are ovulating . . . and you MIGHT be ovulating 14 days after your period started . . . I never do, but then I've never had 28 day cycles. Reading...
  19. Peta - Best of wishes as you continue to research . . . I hope you soon find the answers that will help your son heal.
  20. One thing you may want to be aware of is that gluten does pass through breast milk . . . so you will need to be gluten free as well while you are nursing him. Welcome! Oops! She beat me to the comment!
  21. Mourning is all right. Because, yes, this is a life changing diagnosis. BUT . . . almost everything can be made gluten free! I make gluten free crepes all the time, and no one can tell the difference. I make gluten free cookies and the neighbor kids beg for more. I made gluten free Oreo's Sunday night, and made one of my non-celiac children cry by telling...
  22. The carrot cake recipe is in the desserts section of www.eatingglutenfree.com. Just don't try to make cupcakes out of it . . . they end up looking like Mt. St. Helen's after the explosion . .. mostly crater! Of course, that way you get to use a LOT of cream cheese frosting on the top . . . which is delicious!
  23. Bette Hagman's Italian Cream Cake recipe is a great "Special occasion" cake - but you need to like nuts and coconut! There are other's who have been married with gluten free cakes - sometimes you can make your own cake (or at least the layer the two of you will be eating from) and then have someone else frost and decorate it (but make sure you okay the...
  24. Speaking of banana bread, I think I'm going to have to make some banana bread this morning . . . it's B day at preschool!
  25. You can find a link to the newbie kit on nini's member page. Welcome!
