  1. Ya' know, I have been torturing myself lately with the rice cooker question and the answer that I have (just for today) is that stovetop has never led me astray and that rice that's overcooked and with a crust is called kateh and is quite yummy although rice that's been smoked by negligience can be remedied by purchasing a timer. That said, does anyone...
  2. Wow, thanks for the info! Meant to add...best of luck to you Ashley, in your endeavors! It sounds like a huge task to be surrounded by so many non-celiacs and not be able to take complete charge of your diet but, everything needs a first. I'm going back into the denial-mode about this being a disability now.
  3. Cassidy, I'm sorry that you're having trouble eating, but your post made me laugh. If I ever get a recipe for human pellets, I'll be sure to post. You know that saying, "some eat to live, some live to eat", well I used to be the latter for the longest time and since then, I am sometimes more in the former camp. Is it something that maybe the pregnancy...
  4. I am not what you would call the typical patriotic type (think waaay left), but after seeing "The View" yesterday because we had the day off from work, and watching Elizabeth Hasselbeck have her co-host taste all of the turkey stuffings, I keep wondering how the celiac troops are doing with their dietary needs. Does anyone have first- or second-hand knowledge...
  5. When I first went gluten-free, I went out and bought Bette Hagman’s “The Gluten-Free Gourmet Bakes Bread” (which, to tell the truth was a little bit over my head at first, but which I now adore) and Marjorie Hurt Jones’ “The Allergy Self-Help Cookbook” (revised). After that I got Rozanne Gold’s “Cooking 1*2*3” to go with her “Healthy 1*2*3” that I alrea...
  6. Hi, I make my own tortillas and they taste so great. I'm allergic to corn, so I can't do it a lot, but they keep really well in the freezer. Sometimes locating the masa harina is a little tricky and it really helps to have a tortilla press, but basically its just the masa and water in your food processor and you end up with a dough that is delightfully...
  7. I'm in the US, eat mostly US food and I think that MSG is just the devil. I don't think any countries are responsible about it labelling-wise, but that's just from personal experience. Whole, preferbaly organic foods forever! (Yes, I have a bad Cheetos habit that I need to overcome. )
  8. Oats. *sigh* I love oats, unfortunately, oats don't love me. Back in the day, I would eat them a lot but they were one of the ingredients that really, really told me that I needed to go gluten-free. I miss them more than wheat, barley, rye and corn combined. My most excellent award-winning cookbook "The Food Substitutions Bible" by David Joachim recommends...
  9. Mmmkay, I need to apologize for my netiquette on that last post. I'm on lo-fi version here at home and need to post replies to those folks in the middle of a thread at work. So, sorry about that, my reply to Helena was just the last paragraph.
  10. QUOTE Yes, there is greater sensitivity to gluten after being gluten-free for a while. See, gluten is an allergen to us, so all the time we were regularly exposing ourselves to it, we were making antibodies to the allergen. But now that we're gluten-free, we don't need to make the antibodies anymore, so when we're exposed to gluten now, we have no antibodies...
  11. Geez, that's too bad... I've had kind of the reverse effect. Never much for dinner parties, but have always liked eating out in restaurants and since people have heard more about my situation, I get asked out to eat a lot more than before. Which makes it that much easier to get accidental glutenings, so on an off day, or after an accidental, I'll wonder...
  12. Liz, I almost cried when I read your about your experience, too. My vegetarian boss is the cousin-in-law of the governor of our humble state and she has unflaggingly brought gluten-free food to office events since I've worked there. I just think it's so cool when people of privilege also remember.
  13. Dear miles2go, I thought the Z-Pak had gluten. According to one of the lists I read, it was not allowed. Maybe it was outdated? It is wonderful if it is safe. It is gentler on your system than most of them. Sincerely, NoGluGirl Hi NoGluGirl, The last time I had to take antibiotics was about a year ago and also when I was changing from the...
  14. Hi Brizzo! Funny, but when I got the wheat allergy dx in April one of my very first thoughts was about Thanksgiving and how difficult it was going to be. That was last year and Thanksgiving ended up being really pretty easy, although I should say it was only three of us. I brought breadcrumbs for the stuffing and my own gluten-free flour for the gravy,...
  15. Ever since going gluten-free and maybe the allergy-meds I've been on for the last year, I've been free from sinus infections for about the same time, but previously had them all my life! Hope you get the same results. As for the UTI's, my sympathies, I had one and it was not fun.
  16. This is really good and easy if you're feeling punk and can tolerate eggs. Garlic Soup (Sopa de Ajo) from The Vegetarian Epicure Book II by Anna Thomas, circa 1978 Hope I'm not stomping on someone's copyright! per serving 4 small cloves garlic 1 T. olive oil 1 t. paprika 1/2 t. salt 1 1/2 to 2 c. water dash of Tabasco sauce (optional...
  17. I'm allergic to all of the 'cillins and Keflex - nasty stuff with full body rash. I rarely use antibiotics, but when I have to, I ask for the Z-pak because it's only 5 days worth. It doesn't seem to trash out my stomach as much and usually knocks out the bug. Other than that, garlic works wonders if you catch the infection quickly enough. Lavender works...
  18. Yes, yes, yes! And welcome, glad you found this wonderful place. I've never had a confirmed dx, only a high degree of atopy with wheat being a very big culprit and no endoscopy because I'd been so wheat-light for many years. I didn't know what to do with that so was wheat-free, but not gluten-free for a number of months. Since the beginning of 2006, I...
  19. Couldn't agree more. It's a harsh world out there!
  20. i sat there with chocolate bicuits and garlic breads and all sorts of poop Aha, Taz, you got that down just right!
  21. I have trouble even being near the bread aisle in a grocery store, but everyone's different. It seems the more you stay away from the rat-poison, the more your bod will recognize it as such although it has taken my mind a while to comprehend that. Oy!
  22. Oh, heh, I didn't even think of the rhyming aspect of it, I just thought they were still stuck on the idea of my veggie gd being just in front of me. I had an earlier experience with a server in a restaurant who was surprised that bread had wheat in it and I have had some luck by saying flour before I mention wheat, so maybe that's a somewhat circuitous...
  23. Everyone means well and when your god-daughter who's vegetarian is in front of you in line at the food fare and you ask if the food is wheat-free and they reply that it's vegan, there's not a whole lot of education going on. Likes or dislikes about Rachel Ray or David Letterman aside, I'm just glad that they're giving some air-time to the issue. It's not...
  24. Oh Courtney, you are so not a moron. I've been ranting to the coworkers about the cheese-flavored Doritos for months (?) now. Who'd a thunk it? I'll bet you won't forget next time. Hope you're feeling better soon! Insidious big box bidnesses...
  25. Keep in mind though, that not all of us have been conclusively dx'd with celiac disease and are still in the questioning phase of the process, whether from financial constraints, doctors who aren't thorough enough, or in my case, from gradual phasing out of gluten from alternative medicinal approaches such that the more traditional standards can't be accurately...
