  1. My The Food Substitutions Bible by David Joachim recommends equivalent amounts of beer with chicken or beef stock + 2 dashes of Angosura bitters (optional) or red wine or sake. If you need the bubbly parts in a recipe, which probably isn't the case here, I'd recommend club soda, like for beer batters. Totally recommend the above-mentioned book.
