  1. so it would be ok to put the "all purpse mix" in the fridge? I put the required 1/4 cup oil and 1/4 cup water (added more water) that the recipe on the back of the mix called for - didn't sound like much to me especially with the 2 cups of flour, but the only other liquid was 1/4 c. honey and 1 egg (I used egg substitute - almost 1/2 cup ended up in there...
  2. Does anyone else have eyelashes that hurt? I know this sounds funny, but my eyelashes (the point where they grow out of my eye lids) hurt and I pull them out all the time. I am almost to the point of having no eyelashes b/c I pull on them so much! I was just wondering if this could be a celiac thing. I was just diagnosed so have only been on a gluten...
  3. I always get sick when I eat gyro meat (prior to being dx'd - I don't eat gyro anymore!).
  4. I have been using my lotions as long as they don't have an obvious gluten ingredient in them. But I'm new to this so not sure if I'm doing things right
  5. I bought some all purpose gluten-free baking mix and also some pancake mix and was wondering if it needs to be stored in the fridge or freezer - does anyone know? Right now I have them both in the fridge, but tried to make muffins last night and they were REALLY dry - even after I added extra egg substitute and water! I've read that some of the flours ...
  6. How can she have gluten in moderation? I thought that if you had celiac, it never went away. Does she really have celiac or just gluten intollerance? I'm new to this, so if there is hope out there that I can once again enjoy my baked goods (normal baked goods that actually taste good!) that would make me so happy!
  7. This website (celiac.com) has a great list of food ingredients that are forbidden - I have to take it to the grocery store with me and read labels (takes a long time to shop) since I am new to this, but I think you'll get used to it and just know what to look for. The main things I've been looking for in the ingredients (to avoid) is anything with malt ...
  8. Did you use a "regular" recipe and just substitute the gluten-free flour mix for the regular flour, or do you have a specific recipy you used? I am new to this too and I love to bake - just bought the gluten-free all purpose flour and was going to try some baking soon, but not sure if I can use my normal recipes. Would you still add baking soda/powder per...
  9. does this then substitute cup for cup in your old recipes for all purpose flour?
  10. I have Aunt Jamima and the ingredient list looks ok. I was planning on having some gluten free pancakes tomorrow with it - I hope it's ok!
  11. I'm new to this gluten free thing and unfortunatly I love to bake - is there a good substitute for the regular flour in my cookies/cakes/brownie recipes? I've seen potato and rice flour, as well as these "all purpose" and "feather light" mixes - does anyone know what works best and what brands? Any baking tips would be appreciated - I don't want to give...
  12. I just tried the Envirokids peanutbutter crisp rice bars and they are crispy - kind of like a pnutbutter rice krispy treat! Not bad - they are at Whole Foods. Toasting rice cakes (on low and watch carefully - they burn quickly!) really does make them taste better - I read that here on a different string.
  13. Thanks so much - this really helps. I've shown your response to a few people already and they have a new found appreciation for what I am (and will be) going through. It helps so much to hear so many people that do it successfully!
  14. Thanks for all the info. I've had a very hard time explaining to people that a miniscule crumb can do damage - everyone just laughs and says surely that isn't true. How do you get the point across to people that this is serious?! Is there a medical site or something that I can quote what you said about it taking 10-14 days again to heal, etc.? Also...
  15. I was just diagnosed with celiac and have a few questions that my dr. can't answer: 1. I do not get sick immediately - mine is more I have a lot of d and ocassional vomitting (all of this just started since I had a baby 19 months ago - had other symptoms before that but NEVER had vomitted since I was a little child, so the vomitting is what made me go to...
  16. Thanks. I will talk to her pediatrician about it and definitely watch her. I've read something else about waiting until they are 3 to have them tested - I'm thinking I'd definitely like to have her tested then if not sooner so I know if she has the tendency to ever get this condition.
  17. regarding the hypothyroid issues - I was just diagnosed with celiac but have had hypothyroid (been on levoxyl) since I got pregnant 2 /12 years ago. Will a gluten free diet fix my thyroid problem and allow me to stop the medication?
  18. that would be great! I have just been diagnosed and am having a very hard time figuring out what to eat, especially what I can take to work for lunch, and what I can eat for breakfast (eggs make my stomache hurt and I don't like sausage or bacon).
  19. I was recently diagnosed with celiac (through biopsy and blood tests from 2 different doctors) and have a 19 month old daughter. I was wondering if she needs to be tested and is so, when (what age)? She is not malnurished (she is in the 90th % for height and 50% for weight) and she only gets sick (vomitting) occasionally - nothing more than the average...
  20. So is it just accidental ingestion that you need to worry about, or can these products (hair gels/lotions) be absorbed through the skin? I am also new to this (just confirmed diagnosis today) so am getting overwhelmed reading all this (separate dishes/toasters/bowls, etc.!)!
  21. Is Fruity Pebbles really gluten free? I thought all cereal had gluten in it. What other cereals are safe (so far I don't have any other allergies that I know of yet - just gluten)?
  22. I have just been diagnosed with celiac (just confirmed this morning!) but have had dizzy spells and fainting all my life. Dr.s always attributed it to my severe anemia (low iron), but even on 3 iron pills a day I still had the dizzyness. I have read that it is a symptom of celiac, so I'm hoping it goes away once I change my diet.
  23. good - thanks!
  24. That's good to know - I see a lot of items that just have "vinegar" in them!
  25. I was noticing that whey is an ingredient in a lot of food. I am new to this label reading and was wondering if this is ok to have? It sounds kind of like wheat.....
