  2. Sue, It certainly sounds like you have gluten intolerance. All the diseases you listed tie back to gluten. Doesn't mean gluten necessarily causes it, but is exacerbates it.   3. Carolyn, I am also gluten, soy and dairy free. It is hard to begin with, but entirely doable. Mango04 has been free from all three for awhile, you could always pm her for ideas if need be. I have recipes for cashew cheese and also a butter recipe that primarily uses coconut oil, carrot juice and regular oil.

  11. Just because you don't have the genes for celiac doesn't mean that you don't have what has been labeled non celiac gluten sensitivity. They have also labeled genes that tend toward that.

  13. You could still have a gluten sensitivity. Enterolab is much more sensitive than blood draws as the intestines produce the antibodies and I assume after so much damage go to the bloodstream. Enterolab tests for celiac as well as gluten sensitive genes. I would hate to see you not worry about getting glutened when you go out or start eating it occasionally...

  21. Try cutting back on the liquid or adding more flour. You want it to be thick. I'll look up annalise's recipe if you'd like and see what her liquid/dry works out to. I make 4 loaves at a time......it's 8 cups flour mix with 3 1/2 cups milk, 8 eggs and 3/4 cup oil for four loaves. Of course you also have the rest of the ingredients.

  24. In the annalise roberts cookbook she says to bake for 10 minutes, cover with foil and bake for another 40-45 minutes. I forget the temp....between 350-400. Do you cover yours with foil? That will allow you to cook it without it burning.
  25. If the blood test was borderline positive then he would need to be gluten free for life. The antibodies in the blood come up after the antibodies in the intestine.
