Nini, My mother would be another one that would say this diet is not necessary and we are overreacting due to this article if she saw it. My children and I have no obvious symptoms (yet). Good point. I had allergy testing done and found out I had an allergic reaction (IgG) to wheat, spelt, rye, gluten and gliadin for the gluten products. I was o.k. for barley and oats. Enterolab says I am intolerant to gluten. Soy allergic and intolerant. Dairy I have allergic reaction but am not intolerant. I didn't understand the difference until... -

Interesting article. I know that my infant son is extremely sensitive to ANY gluten that I ingest. He will break out with eczema. He's been eczema free since I cut out Rice Dream milk. I still have to do away with the gluten shampoo's ecetera. I plan on having him go through enterolab when he's old enough to get a sample from. I would be curious... -

Have you tried Almond, Hazelnut or Rice milks? I was using Rice Dream until we got our enterolab results. Since we are gluten intolerant I have quit drinking it. I don't like the Pacific Rice very well personally but many other do. Wait a month and try adding back in small quanitities of milk and see if he can tolerate it. It's challenging to find... -

Carla, You might want to try just Cheddar Cheese. With the aging process it goes through it does something to the cheese. Don't remember if it's the lactose or the casein though. Just looked that up...it's the lactose that's easier to handle. That makes things really difficult. We went of dairy and went on to soy. Since soy is as bad as gluten...

Julie, You could always get a grain mill to grind your own flours. I have an inexpensive one that goes with my champion juicer but it doesn't do well with beans (which between my hubby and I, we are allergic to 4). I need to consider whether to get a better on. As far as protein...can you do nuts? What about beef jerky or something like that. I haven't eaten those for quite a long time and don't remember what goes into them. You probably could eat any veggie raw, we just aren't used to it. I would think any veggie except lettuce would last unrefrigerated for a week. Buy avocados green, carrots, celery, turnips, kohlrabi, broccoli, cauliflower. Most of this stuff is usually cold. Look for the stuff that's in the middle of the produce section. Did the doctor think there had been any healing at all? I know this takes time. Also, does he eat any soy products? I have read that soy damages the intestines as much as gluten. Just a thought. A lot of people have problems with dairy until their intestines have healed also. If he eats soy give that up and see if his occasional problems go away.... -

Matilda, I love your picture of your kitties! They don't have fresh baked bread. They do carry Enjoy Life, Food for Life and Ener-G breads that I saw. The have lots of mixes for bread and treats.
