ARCHIVED Need Help From A gluten-free Veteran
ArtGirl replied to a topic in Coping with Celiac Disease
Everyone's reaction to gluten is different. Some have more severe reactions after a time of being gluten-free, others less. Fortunately, I'm in the second category. Also, fortunately, for most of us, these glutenings are far and few between. If you're careful, you may not have much of a problem with this. By the way, it is so much easier to be safe at... -
ARCHIVED In Tears Preparing Meals For My Gluten Free Family
ArtGirl replied to lailabean's topic in Parents, Friends and Loved Ones of Celiacs
When I first went on the gluten-free diet I was paranoid and only wnated to shop at the health-food store for things that were labeled gluten-free. Also, for some time before that I was eating a lot of organic foods thinking that would help make me well (of course, I know know what was the root problem) and continued buying organic. My food bill was very... -
ARCHIVED Dry Milk Powder Sub
ArtGirl replied to awesomeame's topic in Gluten-Free Recipes & Cooking Tips
I use almond meal to sub for powdered milk. It's non-dairy, and adds the protein that the powdered milk provides. So far it's worked quite well. I'd use Vance's, but it contains corn and that's a no no for me. -
ARCHIVED Please Consider Writing Target
ArtGirl replied to juliela's topic in Gluten-Free Foods, Products, Shopping & Medications
Excellent letter. Please post their reply. -
I have what I suspect is Sjogren's - self diagnosed from reading the list of symptoms and finding that after about 3 months gluten-free some of the symptoms went away. My dry eyes have become much better and don't itch all the time now, unless I've been glutened. My nose didn't bleed all through last winter with the dry air from central heating. However...

Oooo, that biscuit recipe looks good. I am allergic to milk, so would need to use a replacement for the buttermilk. Any suggestions? When I bake I usually use almond milk - would this work, with maybe added vinegar for the acid???

ARCHIVED Sloppy Joe Recipe? Free Of Gluten And Corn.
ArtGirl replied to ArtGirl's topic in Gluten-Free Recipes & Cooking Tips
Thank you, Mawmaw - this recipe looks simple enough to make some minor changes to fit my restrictions (i.e.: I water down tomato paste to make "sauce" and I can just add the herbs and spices that are in ketchup). Maryjk - I know how it is - I don't measure much myself. If you really want to make Sloppy Joes this weekend, then, sure, I'll appreciate the... -
ARCHIVED Sloppy Joe Recipe? Free Of Gluten And Corn.
ArtGirl posted a topic in Gluten-Free Recipes & Cooking Tips
I hope someone can help me. I'd like to make sloppy Joes, but mixes and bottled sauces and most canned goods are out for me because of my corn allergy (corn syrup, citric acid, etc.) Does anyone make sloppy Joes meat sauce from scratch. I can use canned tomato paste because they don't put citric acid in that. And, I am willing to use a gluten-free soy... -
ARCHIVED How Long Was It Until You Noticed A Difference On A Gluten-free Diet?
ArtGirl replied to Luke987's topic in Coping with Celiac Disease
I noticed an improvement in the severity and frequency of the big D within the first few days, and after a few weeks it was greatly improved. However, full recovery of GI issues has been slow, complicated by some other food sensitivities that produce similar symptoms. My energy level has improved at a slow but steady rate with a few ups and downs. Getting... -
ARCHIVED Two Questions...
ArtGirl replied to imsohungry's topic in Gluten-Free Recipes & Cooking Tips
Dextrose is a sugar made from corn, so there's no gluten in it and the dates would be safe. -
ARCHIVED Two Questions...
ArtGirl replied to imsohungry's topic in Gluten-Free Recipes & Cooking Tips
imsohungry - were you able to get through to Sunmaid to ask about the chopped dates. I emailed them asking about the white powdery substance on their chopped dates - and today got a reply. They didn't really answer the question because they only mentioned pitted dates. However, they did say that there are no gluten ingredients in their products from... -
ARCHIVED Cc In Microwave, Stove? Pitch Them?
ArtGirl replied to F.deSales's topic in Gluten-Free Recipes & Cooking Tips
Are you chief cook and bottle washer in your home? If so, it would be better to have a gluten-free kitchen, and relegate all the gluten stuff to the basement kitchenette so you're not having to constantly clean off surfaces when doing meal preparation. (I found that when there was gluten food in the kitchen, those who handled it did NOT wash their hands... -
ARCHIVED Two Questions...
ArtGirl replied to imsohungry's topic in Gluten-Free Recipes & Cooking Tips
Good question. Maybe someone else has asked Sunmaid that question. This won't help for tonight, but I did go to the Sunmaid site and asked about the dates. I'll post the answer... if I get one. Re: Xanthan Gum It helps trap the little bubbles made by leavening so they don't leave the dough but cause it to rise up and stay up until the dough is cooked... -
ARCHIVED Refractory Celiac Disease
ArtGirl replied to Bri's mom's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I'm sorry your daughter is going thru such a bad time. I'd like to offer this in regard to the Crohn's. When I was still trying to find out what was wrong with me and having severe diarrhea I ran across this book. The title was intriguing. I found the book at the library and discovered that it is a very strict diet to help the intestines sort of "rest... -
ARCHIVED Great Berry Cobbler Recipe

ARCHIVED Help! Almond Meal As A Substitute For Dry Milk?
ArtGirl replied to dawnas's topic in Gluten-Free Recipes & Cooking Tips
I am dairy sensitive and use almond meal in all my baked goods, especially if the recipe calls for powdered milk (in which case I use measure for measure). I believe it's the protein in powdered milk that is being introduced into the flour mix, and almond meal adds that. I also use Almond Breeze in place of milk and don't find I need to adjust the amount... -
After spending a little over a year on this board and reading many people's responses - some scientific, most just relating experiences, it is my personal opinion that all who react to gluten are Gluten Intolerant, even though there are many contributing factors that result in this condition. Those who have been diagnosed with villi damage (with the associated...

It's hard to get treated because there is no treatment except eating gluten-free. There are no pills to take, to therapy sessions, nothing other than diet. Keep visiting this board, ask questions, read past threads, and educate yourself. I spent three weeks absorbed in reading threads when I first found this forum. My head was spinning, but I learned...

ARCHIVED Anybody Ever Made A Gluten Free, Egg Free Birthday Cake?
ArtGirl replied to NewGFMom's topic in Gluten-Free Recipes & Cooking Tips
With any gluten-free flour mix, you would need to add xanthan or guar gum to replace the gluten. I think it's 1 tsp. xanthan gum to 2 cups flour. Not sure the ratio for guar gum. If you are able to make this cake successfully, please post it with your alterations. -
Several things can be used to make a milk-like product. Soybeans, rice, nuts. They are made by grinding up and soaking in water for a time and then straining out the solids. They don't taste like cow's milk, but can be used as a beverage, over cereal and in baking. Almond Breeze is made by Blue Diamond and is made from almonds. I use it because I try...

ARCHIVED Anybody Ever Made A Gluten Free, Egg Free Birthday Cake?
ArtGirl replied to NewGFMom's topic in Gluten-Free Recipes & Cooking Tips
Cakes without egg are a real challenge. I am currently using banana to replace the egg. It works better than other egg replacers I've tried and keeps the product moist. Here is my all-purpose quick-bread recipe. You could add more sugar and double the vanilla to make it taste sweet and more like a cake. Also, you could replace the flax meal with another... -
I have used almond milk to make a shake in the blender. I like strawberry/blueberry best, and sometimes I add some banana, too. Just put frozen fruit in the blender, add a few teaspoons of sugar and enough almond milk to nearly cover the fruit. Begin blending and as the fruit begins to freeze the milk, if it gets too thick, you can add more almond milk...

ARCHIVED To Freeze, Refrigerate, Or Store At Room Temp!
ArtGirl replied to swrdsrfg's topic in Gluten-Free Recipes & Cooking Tips
I did a quick Google search and found a site that had this information. I store bean flours in the refigerator - learned this from a cookbook but don't now remember which one. I would expect that any cookbook that has recipes for breads and baked goods would have a chart about storage. -
ARCHIVED Want To Start Up A gluten-free Bakery
ArtGirl replied to Sweetfudge's topic in Gluten-Free Recipes & Cooking Tips
Good for you. I wish you much success in your bakery business. Re: the business side of your venture... As far as city/state regulations, you need to check with them for any laws pertaining to a home business or any small business. I had a secretarial business in my home and my city's laws were specific about that - no more than 6 customers a day and... -
ARCHIVED Request #3
ArtGirl replied to BamBam's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
So true. I am "only" gluten intolerant. I did have a blood panel for food sensitivities 10 years ago which showed up gliadin, wheat and gluten - but the doctor didn't even see that as a red flag, and I, of course, didn't understand the significance. After finding this forum I did finally go thru Enterolab and found that I have two genes for "intolerance...
