    Southwestern-Style Black Bean Soup (Gluten-Free)

    Celiac.com 03/24/2016 - Good black bean soup is a tasty treat on a rainy day. Since we've had a few rainy days lately, I recommend this recipe for a smoky, spicy, flavor-packed southwestern-style vegetarian black bean soup that is a perfect hearty pick for cold, blustery days.

    • 1 can black beans
    • 1 can refried black beans
    • 2 cups vegetable broth
    • 1 tablespoon olive oil
    • 1 medium onion, chopped
    • 1 green bell pepper, seeded and chopped
    • 1 tablespoon chopped chipotle in adobo sauce
    • 1 tablespoon dried epazote (aka Mexican tea), chopped
    • 1 avocado
    • ½ cup refrigerated fresh salsa
    • ¼ cup sour cream or plain yogurt
    • fresh cilantro
    • kosher salt
    • pepper

    Directions:
    Heat the oil in a large stock pot over medium heat. Add the onion and green pepper, season with ¼ teaspoon each salt and pepper and cook, covered, stirring occasionally, for 5 minutes. Stir in the chipotle and adobo.

    Stir in the beans, refried beans, epazote, and vegetable broth and bring to a boil. Reduce heat and simmer for 20-30 minutes.

    Divide the soup into bowls, and top with the avocado, salsa, sour cream, and cilantro, if desired.

    Can anything be substituted for Epazote if you are unable to find it?

    1 - 2 large onions, chopped
    1 tablespoon oil
    2 cloves minced garlic
    1 4-oz can chopped green chilis (Old El Paso brabd is gluten-free)
    1 teaspoon salt
    1 teaspoon pepper
    ½ teaspoon ground cumin
    ¼ teaspoon cayenne
    ¼ teaspoon ground cloves
    2 cans gluten-free chicken broth
    3 - 4 cans great northern beans (Green Giant is a good brand)
    Simmer 4 chicken breasts in water and seasonings until tender. or simmer in homemade chicken broth. Cool and cut or shred into large pieces.

    When I was in Guanajuato, Mexico, years back, the woman who cooked at the house where I was a guest prepared the most delicious chicken tortilla soup.
    Pieces of juicy chicken, corn, hominy and, of course, tortillas, came together in a creamy, rich, tomatoey, cumin-laced broth. The soup was so good, I remember going back for seconds and more. I found myself counting the days until she would make it again. So began my love affair with this satisfying Mexican delicacy.
    Later, I was please to find a Yucatan-style Mexican restaurant in my San Francisco neighborhood that could satisfy my regular cravings. Sadly, the restaurant is no more. But, my cravings for tortilla soup endure. Thus began my quest for a good, easy, reliable recipe that I could turn to when my chicken tortilla soup craving...

    These tacos come together so wonderfully in part because of the vibrant, contrasting colors of the salsa and shrimp. The jalapeños and chili powder transform otherwise simple shrimp tacos.
    You can easily control the heat by removing the seeds from the peppers or omitting a pepper, and reducing the amount of chili powder. I tend towards the spicier side, but the shrimp is equally intriguing with a sweet peppadew salsa.
