    Fruity, Nutty Gluten-free Granola

    Reviewed and edited by a celiac disease expert.

    Celiac.com 11/03/2015 - If you like granola, but find store-bought versions too sweet, this home-made gluten-free granola is just the ticket.

    • 2½ cups gluten-free rolled oats
    • ½ cup raw almond meal
    • ½ cup flax seed
    • ½ cup pumpkin seeds
    • ⅓ cup sesame seeds
    • ½ cup blanched cashews, chopped
    • ⅓ cup slivered almonds, loosely chopped
    • ⅓ cup canola oil
    • 4 tablespoons honey
    • 4 tablespoons molasses
    • ⅓ cup mixed dried fruit
    • ⅓ cup raisins
    • ⅓ cup dried coconut
    • ¼ teaspoon kosher salt
    • dash of cinnamon

    Directions:
    Heat oven to 300°F.

    Combine all dry ingredients in a large bowl and mix well.

    Add the canola oil, honey, and molasses in that order; this helps the honey and molasses pour more easily.

    Stir until well combined and all the dry ingredients are coated.

    Spread the granola on a baking sheet with a spatula

    Pack more tightly for granola with clusters

    Keep baking and stir every 10 minutes until the granola is golden brown—about 30–35 minutes.

    Remove the pan from the oven and stir in the dried fruit and raisins.

    Allow the granola to cool. Store in an airtight container for up to 2 weeks.

    1 package small marshmallows
    ¼ cup butter
    6 cups gluten-free cereal
    ½ teaspoon gluten-free vanilla
    ¾ cup peanut butter
    ¾ cup chocolate Carnation Instant Breakfast
    Melt marshmallows and butter. Add instant breakfast and peanut butter. Stir in cereal and vanilla. Press into 9" x 13" pan. Sprinkle mini chocolate bits on top and press in. Let cool.

    This is one of my favorite desserts to make; it’s so fun to cook and serve. The sauce becomes incredibly aromatic as it cooks down. As simple, yet exotic desserts go, it’s a perfect way to top off a meal with flair. I usually poach peaches or pears in wine, but the rosemary in this recipe does something magical with the peach, I didn’t want to hide it behind the wine.
    Ingredients:
    2 pounds firm, ripe peaches
    ½ cup sugar
    ¼ cup water
    2 tablespoons honey
    2 strips lemon rind
    2 tablespoon lemon juice
    2 sprigs fresh rosemary
    Directions:
    Cut unpeeled peaches into 1-inch slices and sprinkle with 1 tablespoon of lemon juice.

    If you want a tasty, healthy treat that's cheap, super simple to make and delivers big flavor, try this recipe for homemade applesauce. It's one of those dishes that kids can help you make, and which will leave smiles all around.
    Ingredients:
    4 apples - peeled, cored and chopped ¾ cup water ¼ cup white sugar ½-¾ teaspoon ground cinnamon, to taste Directions:
    In a saucepan, combine apples, water, sugar, and cinnamon.
    Cover, and cook over medium heat until apples are soft, about 15 to 20 minutes.
    Allow to cool, then put them in a blender and blend until smooth. If you don't have a blender, then you can mash them with a fork or potato masher.
    Serve alone, or over ice cream or frozen yogurt.
