Question - if your boiling water for cooking or something do you use bottled water or tapped?

Are you feeling better today. I wish I could say I was but I am still in a really bad place. I can;t believe what a strong reaction I am having - it had to have been the cucumber- Hoe is this possible?

When I react to cucumbers its because of Auxigro. They just ruin everything with that stuff. :angry: I always eat mangos cuz they're safe for me but the last ones I bought had a funny taste and I sort of reacted so I threw them out. The "funny" taste is the same one I've tasted on cucumbers, celery and lettuce. I wasnt paying attn. when I bought the mangos cuz I never have problems with them. I noticed those ones that tasted funny had a different sticker on them though...they came from a different grower. <_<

Went back today and they've still got the same mangos. OMG....I could not believe my eyes when I saw the size of some of these mangos. :blink: I kid you not...some were 3x as big as the ones I usually get...that I dont react to.

I used to get all happy when I saw something so big cuz its still the same price only your getting like 3 times as much for your money. Now I see something like that and it scares the crap outta me. I stared at the mango display for a long time but finally walked away mangoless. :(

Awesome!! I wonder where I might find them though.....my whole foods doesnt seem to have them...I looked tonight. The only FFL tortillas I saw were the brown rice ones.

Robbin, I understand where you are coming from. I have had many "moments" myself. Scared to eat anything, unsure about everything. Everytime I would just regroup and try to work with what I knew was safe and go from there. Hang in there.

Cissie, my naturopath gave me supplements to address the adrenals and cortisol levels. I don't really know much about the cortisol sold on the market out there.

Rachel-are sweet potatoes still a problem for you? Are they high histamine?

I dont have problems with the actual sweet potatoes themselves...as far as I know. They arent high in histamines either. I'm pretty sure I was reacting to Auxigro...so I was having MSG reactions.

Yeah I am very careful about the veggees I buy- it is frightening how huge some of them are you just know that they did not get like that without some sort of chemical added. I only buy my vegees from certain places. Cuccumbers are one of my safe foods so I am angry that it was that that I think I reacted to. The corn tortillas are hard to find I never saw them at whoole foods before. I found them at 2 different smaller health food stores. I hope you can find them and some normal mangoes!!

Today I was trying to get lunch together and was so frustrated because I am afraid to eat anything. I got so frustrated I had a little "moment" :( .

Rachel-I hope everything is ok with the ultrasound. You lucky girl with the ice cream. I am going to try to make some with Almond milk.

All of you have a wonderful night and you are all in my prayers. Lightening is getting way too close--I hate to be on during storms. :blink:

Everyone is entitled to having down days. Do you have definate safe foods you can eat. I forget, were you the one posted about the tea?

Can you eat cashews? I posted some ice cream recipes a few to 10 pages back (I think).

I always use my filtered water to cook with.

oh, ghee is butter with the milk solids removed, so its the fat part that is left over. And I guess it is simmered to slowly release all of the moisture so it can be stored for a long time.

I don't think there is fermentation involved at all. Ghee never set well with me, not sure why.

I just peeked at the lists it lloks like I pretty much already avoid most of the forbidden foods but I do eat spinach and seem to be alright with it. All the other foods they say to avoid are ones that bother me- so maybe I do have a histamine problem. I'm tryoing to figure out what else I can cut out though because I seem to still be missing some key piece in figuring out whats bothering me

If you are boiling tap water in cooking you could be causing the chemicals (chlorine, insecticides & etc) to be enhanced & stronger and that may be causing problems. In any agriculture area there is a lot of insecticides & pesticides in any water from a lake, river or underground aquifer. One reason my Dr. told me 15 years ago to get a GOOD water filter. Mine has coconut charcoal but have never had problems with it.

Just thought I would pass this on in case some had not thought of this possibility. Keep on keeping on!!

Celia....that kind of behavior just isnt tolerated here in Rachelville...hostility doesnt exist at the paradise gluten free cult farm. This is our "safe" place. :D

this sounds really good, Julie. How do you steam tortillas? I usually saute in a pan with butter, but don't always want to....

I know what you mean about missing posts. I see someone else post and then go, "oh yeah, I wanted to comment on that". Sometimes I still do, other times the person said what I would have and I let it go.

Thanks Vincent. When I gat a chance to sit down with my husband, I'll talk to him about getting a second opinion. We weren't sure on what to do because this is new ground for us. I found out I had AS when my DD got diagnosed and the Dr. said that it wasn't DX-able when I was young enough (?). I value your opinion on the subject. Thanks again.

When I was little my Mom actually got 3 oponions, and then later as an adult I got 2 more. When I was little ADHD was not yet realy regonized so instead of a neat lable I got a big list of lables. As an adult both opinions called me ADHD. But I think AS is a better fit... esply since the ADHD drugs did not help me. :(

Cissie - - you described my childhood exactly - - except that I had three brothers and hung with them quite a bit - - go-carts, minibikes, underground labrynthine tunnels in the field next door (with a track on top for our bikes and go-carts, this would be against the law now, of course), forts/treehouses all the time (one had electricity wired in somehow and we got busted for that one), secret clubs, one had a magic "elixir" in a giant kettle in the back to which we kept adding, God knows what.....we sipped this wicked brew, a viscous, dark fluid and somehow were not poisoned.....and in the summers, in the POOL all day long, literally 12 hours and no adults (at the club, lifeguards of course)....most the month of August up at Shaver Lake or Big Sur, weeds in our hair and barefoot day and night, fishing for crawdads, scrambling up granite outcroppings, surveying our domain.....those were the days. Total freedom and no, kids don't seem to be able to do that any more with all the psychos we have running around now, and structured programs. so sad.

Susan, that is beautifully written. I hope you have had some relief from the meltdown. :)

Donna, thank you for that post about "Inflammation Syndrome", I think I will buy it as arthritic inflammation is a major problem for me.

I have to say, I have been following a histamine restricted diet for about 4 or 5 days now and I haven't had one reaction. I think there really might be something to this for me. I think that since my histamine levels have always been so high that eating something that naturally has histamine, or causes a release of histamine from mast cells, even if I only ate a small amount of it one time a week, was enough to just keep the state of reactivity going. I'm feeling really hopeful!

Celia, I tend to stay at home in Rachelville too :) and mostly through another forum have had the experience you describe. I too really appreciate the kindness and humor here.

Julie and Donna -thank you so much for the information tonight. I was bummed to hear about sauerkraut-was going to try the fresh to get some of the healthy bacteria rinne had posted about yesterday. Are you bothered by it, rinne?

Julie, I am very glad to hear this. I have been paying attention to the more subtle reactions I have and I am seeing a pattern also but I haven't taken the steps of trying the diet yet.

And even after all of this I know I have missed responding to posts I wanted to, Miamia I am so sorry that you are having a hard time.

Today I spent with the "Bag Ladies", we have known eachother for ten years now and our name comes because we all have the same bag. :lol: One of the women travels to Indonesia and she brought us all the same beautiful bags. We talked today about renting a Tuscan Villa, can't you just see five middle aged women all with the same bag walking through the airport? :lol::lol::lol:

Jeny, go with your own instincts. If your child has any issues on the autism spectrum, you are probably far more qualified to understand and deal with those problems than the "experts." You've LIVED it; they've only read about it.

Think of yourself as the translator for your children--you are translating between their world and the world of the "neurotypicals" (some of whom are totally wacko anyway). In Pennsylvania, the only reason for an official diagnosis is to get official help. The people doing the helping are basically going to rely on YOUR opinion for what kind of help is needed and how much of it. The diagnosis is just so the school district has to deal with whatever issues(once the child is school age) --they can't try to get away with saying that your child is lazy and doesn't want to learn, or that your child is dumb, or whatever excuse they try to come up with!

I am feeling better tonight thank goodness, that was awful but it doesn't appear to be lasting as long as before. I think I may of just tried something new that didn't say gluten-free, not a bright idea

OMG!!!

I've turned into an ice cream FREAK!!! I just cannot stop....up to about a quart a day. Is this normal? :unsure:

BTW...Vincent it tastes great w/out the vanilla....just plain base is good. :)

You really need to lay low on the ice cream for awhile. I know you want to gain weight, but sheesh. :lol: If you can't limit it to just a cup to a pint....it's best to let it go. I can't imagine that that much dairy is good for you.

Gotta get the baby to sleep and hand over the computer for awhile.

Cissie, I would have gladly given you my three brothers. When I was 5, my brothers were 4, 3, and 2 years old, and I was deemed 'responsible' for them. :lol: We did have fun together sometimes but more often we had battles.

I recall my mother telling me once, probably having caught us fighting, that someday my brothers would be bigger than me, I tended to win the fights, :ph34r:. I was about 10, and I replied with, "yes, but I'll be a girl by then". :lol:

My friend wants to do this and I think it will be fun...never done it before. Its indoor so probably wont really get scraped up or anything....not the treacherous rock climbing you had on your avavtar (before the dingos took over)...but still I'll be climbing rocks. :P

I know the feeling! My mother used to put me in charge of my baby sister (9 1/2 years younger than I), and I hated it! We adore each other now, and laugh a lot about those days. Once, when I was about 11 or 12, I was helping mother paint the kitchen, blue and yellow, and I was doing the yellow. My little sister was aggravating me because she wanted to paint too. So I did what was sure to make her mad: I curtsied and said, "Yes, your Majesty." She grabbed my paint brush and smacked me in the nose with yellow paint! It's been our private joke all these years. When I think she needs to be cheered up (She's very ill.), I send her a note, and draw a frowning face with a yellow nose under my signature.

We have military healthcare also and my DH and I were wondering how they can come up with a diagnosis based on two or three sessions with the kids. Our daughter was referred by her first grade teacher because she thought DD had ADD. The psychiatrist thought she was on the cusp of Asperger's and had ADHD and depression. I think that she might, but how do they know when they don't know her. Do you wonder this? They aren't treating the ADHD so to speak. They're trying to work on her behavior. We're thinking of getting a second opinion, but I don't know. Any thoughts ya'll?

We got a second opinion as well, and they both say the same thing. However, the new meds seem to be taking effect now, and we have had no more incindents since Tuesday...He's a good kid...I just think he may have been over tired from all the travelling.

Vincent, he also plays hockey during the winter (goalie) and in the summer he is ALWAYS on his bike, or using his creative energies to build something...which is much better than the rest of the kids his age in this town. They just kind of hang out in front of Subway and do nothing all day but take up space.

To those who were not feeling well, hope and pray you are all better soon.

Donna: Thanks so much for your "book report", I printed that off. Lots of information I can use there and seems when I try to read a book or?? I find myself later waking up from a nap, as if that is what I intended or what I needed?? I am also glad for the 'sugar quote', have been using more maple syup & stevia even if having problem liking the stevia, leaves me with an aftertaste if use too much. It is very sweet!! What is agave?

Posting prematurely, lol, as Susan would say, so if someone already addressed this I'll find out in a few minutes. :lol: I feel the same about Stevia...I've been trying it more lately too and find I actually like it as long as I don't put too much. I've just wondered if it might contribute to the histamine thing for me since I'm allergic to grasses and trees and this is an herb. Same for the Agave. Agave is a plant, I think in the cactus family or related to it. It is almost like honey but not as strong (to me anyway). I find I don't need much.

You're welcome...I'm still confused about what is high and what isn't high in histamine, but I am pretty sure yesterday was a high histamine day, lol. By the time I went to bed my leg were unbearably itchy!

      So, essentially all of the nutrition in the food we eat is absorbed through the villous lining of the small bowel. This is the section of the intestinal track that is damaged by celiac disease. This villous lining is composed of billions of finger-like projections that create a huge amount of surface area for absorbing nutrients. For the celiac person, when gluten is consumed, it triggers an autoimmune reaction in this area which, of course, generates inflammation. The antibodies connected with this inflammation is what the celiac blood tests are designed to detect but this inflammation, over time, wears down the finger-like projections of the villous lining. Of course, when this proceeds for an extended period of time, greatly reduces the absorption efficiency of the villous lining and often results in many and various nutrient deficiency-related health issues. Classic examples would be osteoporosis and iron deficiency. But there are many more. Low D3 levels is a well-known celiac-caused nutritional deficiency. So is low B12. All the B vitamins in fact. Magnesium, zinc, etc.  Celiac disease can also cause liver inflammation. You mention elevated ALP levels. Elevated liver enzymes over a period of 13 years was what led to my celiac diagnosis. Within three months of going gluten free my liver enzymes normalized. I had elevated AST and ALT. The development of sensitivities to other food proteins is very common in the celiac population. Most common cross reactive foods are dairy and oats but eggs, soy and corn are also relatively common offenders. Lactose intolerance is also common in the celiac population because of damage to the SB lining.  Eggs when they are scrambled or fried give me a gut ache. But when I poach them, they do not. The steam and heat of poaching causes a hydrolysis process that alters the protein in the egg. They don't bother me in baked goods either so I assume the same process is at work. I bought a plastic poacher on Amazon to make poaching very easy. All this to say that many of the issues you describe could be caused by celiac disease.

      thank you so much for your detailed and extremely helpful reply!! I can say with absolute certainty that the less gluten containing products I've eaten over the past several years, the better I've felt.   I wasn't avoiding gluten, I was avoiding refined grains (and most processed foods) as well as anything that made me feel bad when I ate it. It's the same reason I gave up dairy and eggs- they make me feel ill.  I do have a bit of a sugar addiction lol so a lot of times I wasn't sure if it was the refined grains that I was eating - or the sugar. So from time to time I might have a cookie or something but I've learned how to make wonderful cookies and golden brownies with BEANS!! and no refined sugar - I use date paste instead. Pizza made me so ill- but I thought it was probably the cheese. I gave up pizza and haven't missed it. the one time I tried a slice I felt so bad I knew I'd never touch it again. I stopped eating wheat pasta at least 3 yrs ago- just didn't feel well after eating it. I tried chick pea pasta and a few others and discovered I like the brown rice pasta. I still don't eat a lot of pasta but it's nice for a change when I want something easy. TBH over the years I've wondered sometimes if I might be gluten intolerant but really believed it was not possible for me to have celiac disease. NOW I need to know for sure- because I'm in the middle of a long process of trying to find out why I have a high parathyroid level (NOT the thyroid- but rather the 4 glands that control the calcium balance in your body) I have had a hard time getting my vit D level up, my serum calcium has run on the low side of normal for many years... and now I am losing calcium from my bones and excreting it in my urine (some sort of renal calcium leak) Also have a high ALP since 2014. And now rapidly worsening bone density.  I still do not have a firm diagnosis. Could be secondary HPT (but secondary to what? we need to know) It could be early primary HPT. I am spilling calcium in my urine but is that caused by the high parathyroid hormone or is it the reason my PTH is high>? there are multiple feedback loops for this condition.    so I will keep eating the bread and some wheat germ that does not seem to bother me too much (it hasn't got enough gluten to use just wheat germ)    but I'm curious- if you don't have a strong reaction to a product- like me and wheat germ- does that mean it's ok to eat or is it still causing harm even if you don't have any obvious symptoms? I guess what you are saying about silent celiac makes it likely that you can have no symptoms and still have the harm... but geez! you'd think they'd come up with a way to test for this that didn't require you to consume something that makes you sick! I worry about the complications I've been reading about- different kinds of cancers etc. also wondering- are there degrees of celiac disease?  is there any correlation between symptoms and the amnt of damage to your intestines? I also need a firm diagnosis because I have an identical twin sister ... so if I have celiac, she has it too- or at least the genetic make up for having it. I did have a VERY major stress to my body in 2014-2016 time frame .. lost 50lbs in a short period of time and had severe symptoms from acute protracted withdrawal off an SSRI drug (that I'd been given an unethically high dose of, by a dr who has since lost his license)  Going off the drug was a good thing and in many ways my health improved dramatically- just losing 50lbs was helpful but I also went  off almost a dozen different medications, totally changed my diet and have been doing pretty well except for the past 3-4 yrs when the symptoms related to the parathyroid issue cropped up. It is likely that I had low vit D for some time and that caused me a lot of symptoms. The endo now tells me that low vit D can be caused by celiac disease so I need to know for sure! thank you for all that great and useful information!!!

      Welcome, @catnapt! The most recent guidelines are the daily consumption of a minimum of 10g of gluten (about the amount found in 4-6 slices of wheat bread) for a minimum of two weeks. But if possible stretching that out even more would enhance the chances of getting valid test results. These guidelines are for those who have been eating gluten free for a significant amount of time. It's called the "gluten challenge".  Yes, you can develop celiac disease at any stage of life. There is a genetic component but also a stress trigger that is needed to activate the celiac genes. About 30-40% of the general population possesses the genetic potential to develop celiac disease but only about 1% of the general population actually develop celiac disease. For most with the potential, the triggering stress event doesn't happen. It can be many things but often it is a viral infection. Having said that, it is also the case that many, many people who eventually are diagnosed with celiac disease probably experienced the actual onset years before. Many celiacs are of the "silent" type, meaning that symptoms are largely missing or very minor and get overlooked until damage to the small bowel lining becomes advanced or they develop iron deficiency anemia or some other medical problem associated with celiac disease. Many, many are never diagnosed or are diagnosed later in life because they did not experience classic symptoms. And many physicians are only looking for classic symptoms. We now know that there are over 200 symptoms/medical problems associated with celiac disease but many docs are only looking for things like boating, gas, diarrhea. I certainly understand your concerns about not wanting to damage your body by taking on a gluten challenge. Your other option is to totally commit to gluten free eating and see if your symptoms improve. It can take two years or more for complete healing of the small bowel lining once going gluten free but usually people experience significant improvement well before then. If their is significant improvement in your symptoms when going seriously gluten free, then you likely have your answer. You would either have celiac disease or NCGS (Non Celiac Gluten Sensitivity).

      after several years of issues with a para-gland issue, my endo has decided it's a good idea for me to be tested for celiac disease. I am 70 yrs old and stunned to learn that you can get celiac this late in life. I have just gradually stopped eating most foods that contain gluten over the past several years- they just make me feel ill- although I attributed it to other things like bread spiking blood sugar- or to the things I ate *with* the bread or crackers etc   I went to a party in Nov and ate a LOT of a vegan roast made with vital wheat gluten- as well as stuffing, rolls and pie crust... and OMG I was so sick! the pain, the bloating, the gas, the nausea... I didn't think it would ever end (but it did) and I was ready to go the ER but it finally subsided.   I mentioned this to my endo and now she wants me to be tested for celiac after 2 weeks of being on gluten foods. She has kind of flip flopped on how much gluten I should eat, telling me that if the symptoms are severe I can stop. I am eating 2-3 thin slices of bread per day (or english muffins) and wow- it does make me feel awful. But not as bad as when I ate that massive amnt of vital wheat gluten. so I will continue on if I have to... but what bothers me is - if it IS celiac, it seems stupid for lack of a better word, to intentionally cause more damage to my body... but I am also worried, on the other hand, that this is not a long enough challenge to make the blood work results valid.   can you give me any insight into this please?   thank you

      The biopsy looks for damage to the mucosal lining of the small bowel from the inflammation caused by celiac disease when gluten is ingested. Once you remove gluten from the diet, inflammation subsides and the mucosal lining begins to heal.
