hey everyone

Im posting because i need some ideas for new snacks. I have a mid-morning snack and an afternoon snack. Usually i will have a piece of fruit, rice bar (like a granola bar), or turkey and crackers. I am so0o0 bored of this. I cannot eat nuts, chocolate, or yogurt, so those snack ideas are out. What else can i have? Is there any gluten-free products that makes quick&tasty snacks on the go (since i work with children and cannot sit down to have a luxury snack) Any tips, comments, or advice would be appreciated. Thanks! :)

Bumblebars and Clif Nectar bars are both good. I put almond or peanut butter on them if I'm home.

My favorite snack is frozen blueberries with vanilla kifir over them, but if you can't have yogurt, I don't know whether you could have kifir.

Can you eat popcorn? You could pop it at home, and carry some with you in a zip-lock bag. I was going to also suggest Lara Bars, but noticed you said no nuts. Maybe ham and cheese roll-ups, gluten-free pretzels/cheese, or cut up veggies in place of the fruit sometimes.

Oh, I didn't notice the no nuts ... both those bars have nuts.

I like gluten-free pretzels and Natural Ruffles. Can you have cheese, what putting some grated cheese over chips and melting it in the oven or microwave for some quick nachos?

You might get some ideas in the thread about ideas for wedding hors d'ovres. Proscuitto wrapped cantelope is good, I think it's on that page.

The other day I had some corn tortillas stuffed with avocado, cucumber and mayo.

I like Food For Life sprouted corn tortillas with mayo, natural gluten-free turkey, spinach, one carrot stick, one cucumber stick, salt and pepper rolled up (heat the tortilla first). I make them in the morning and then wrap them in foil to eat later. You could roll the turkey and veggies in green leaf lettuce if you don't want to use a tortilla.

Hummus is great to snack on. You can dip veggies or rice crackers in it. Lundberg rice chips work well here too.

I like to make muffins with apples, carrots, flax meal and stuff like that. Then I freeze them and eat them later.

Last night I made fritattas in a muffin pan. If you can do eggs they work well. I mixed 8 eggs, canadian bacon, spring onions, tomatoes, italian herbs, sea salt and pepper, then poured into muffin tins and baked for about 15 minutes. You can freeze them and easily heat them later if you have access to a microwave. I guess that could be breakfast or a snack (thanks to all the people who have posted that idea in other threads! :) )

Thank guys for you responses....geez i forgot about popcorn- thats a good idea! I also just bought Food For Life sprouted corn tortillas today...also some biscuit-like crackers that has a sweet taste...so thanks for the suggestions,,,sometimes i just get bored of food :angry:

I love avocados and lemon for a snack or spinach with salsa and an egg. If you cook some boiled eggs and keep them in the fridge, it is easy to add protein to a salad in a pinch!

Fruits galore and veggies with dips.

We do eat a lot of nuts in our snacks, but you could sub nuts for coconut for fat/filling-ness.

So, a Wax Orchard fudge mixed with coconut flour on veggies or corn crisps (or quinoa crisps).

Also I eat things like a left over sweet potato or baked potato with lemon for a snack. I just cook extra when Im' making my meal!

I love pickled beets for a snack too!

And making a big batch of cole slaw to snack on is great :)

Glutano's crisp bread is excellent spread with jam... It's actually excellent spread with almost anything. It makes for a great little snack, kind of like a couple of finger sandwiches. They're excellent with cheese spreads as well as well-drained tuna salad. Also, don't forget about easy stuff like cheese cubes, gluten free pretzels, Craisins, gluten free cereals, and rice cakes. Cold chicken and turkey makes a good snack too, especially if you bring a dipping sauce. BBQ is great cold, so is ranch dressing.

Wow, now I'm hungry... :D

I like apple cinnamon (or strawberry when I can find them) rice cakes with cream cheese on them or tortilla chips with hommus, cream cheese mixed with salsa, or homemade spinach dip, or baby food (fruits only, of course) with sot lecithin granules mixed in. The soy bits get squishy like tiny tapioca sort of. My coworkers tease me whenever I eat it, but it's the only one way to have mangoes and papayas for a snack when they're out of season. :P

I can get it at my local grocery store, but it's expensive. I sometimes order it online at shopbydiet.com. It's reasonably priced and you get free shipping if you order over $100.

Do you have a recipe for the apple muffins? I used to make a good one but it is not gluten free - would love to find a gluten-free apple muffin recipe that is good!

This is what I do. I modified the recipe found on the back of the Bob's Red Mill flaxmeal bag. I'm sure you can improvise a bit. I'm really not an expert when it comes to baking, but these turned out great.

2 cups Bob's Red Mill gluten-free Flour

3/4 cup flax meal

2 teaspoons cinnamon

1 teaspoon xantham gum

2 teaspoons baking soda

1 teaspoon baking powder

1/2 cup raw sugar (the original recipe calls for a cup. I like less)

1 teaspoon vanilla

2 large carrots shredded

2 apples peeled and chopped

3/4 cup "milk"

2 eggs

chopped walnuts and raisins can be added as well

mix dry ingredients

stir in apples and carrots

mix wet ingredients

mix it all together

pour into muffin pan and bake at 350 for about 15-20 minutes.

      @Jane02, I hear you about the kale and collard greens.  I don't do dairy and must eat green leafies, too, to get sufficient calcium.  I must be very careful because some calcium supplements are made from ground up crustacean shells.  When I was deficient in Vitamin D, I took high doses of Vitamin D to correct the deficiency quickly.  This is safe and nontoxic.  Vitamin D level should be above 70 nmol/L.  Lifeguards and indigenous Pacific Islanders typically have levels between 80-100 nmol/L.   Levels lower than this are based on amount needed to prevent disease like rickets and osteomalacia. We need more thiamine when we're physically ill, emotionally and mentally stressed, and if we exercise like an athlete or laborer.  We need more thiamine if we eat a diet high in simple carbohydrates.  For every 500 kcal of carbohydrates, we need 500-1000 mg more of thiamine to process the carbs into energy.  If there's insufficient thiamine the carbs get stored as fat.  Again, recommended levels set for thiamine are based on minimum amounts needed to prevent disease.  This is often not adequate for optimum health, nor sufficient for people with absorption problems such as Celiac disease.  Gluten free processed foods are not enriched with vitamins like their gluten containing counterparts.  Adding a B Complex and additional thiamine improves health for Celiacs.  Thiamine is safe and nontoxic even in high doses.  Thiamine helps the mitochondria in cells to function.  Thiamine interacts with each of the other B vitamins.  They are all water soluble and easily excreted if not needed.       Thank you so much @knitty kitty for this insightful information! I would have never considered fractionated coconut oil to be a potential source of GI upset. I will consider all the info you shared. Very interesting about the Thiamine deficiency.  I've tracked daily averages of my intake in a nutrition software. The only nutrient I can't consistently meet from my diet is vitamin D. Calcium is a hit and miss as I rely on vegetables, dark leafy greens as a major source, for my calcium intake. I'm able to meet it when I either eat or juice a bundle of kale or collard greens daily haha. My thiamine intake is roughly 120% of my needs, although I do recognize that I may not be absorbing all of these nutrients consistently with intermittent unintentional exposures to gluten.  My vitamin A intake is roughly 900% (~6400 mcg/d) of my needs as I eat a lot of sweet potato, although since it's plant-derived vitamin A (beta-carotene) apparently it's not likely to cause toxicity.  Thanks again!

      Hello, @Jane02,  I take Naturewise D 3.  It contains olive oil.   Some Vitamin D supplements, like D Drops, are made with fractionated coconut oil which can cause digestive upsets.  Fractionated coconut oil is not the same as coconut oil used for cooking.  Fractionated coconut oil has been treated for longer shelf life, so it won't go bad in the jar, and thus may be irritating to the digestive system. I avoid supplements made with soy because many people with Celiac Disease also react to soy.  Mixed tocopherols, an ingredient in Thornes Vitamin D, may be sourced from soy oil.  Kirkland's has soy on its ingredient list. I avoid things that might contain or be exposed to crustaceans, like Metagenics says on its label.  I have a crustacean/shellfish/fish allergy.  I like Life Extension Bioactive Complete B Complex.  I take additional Thiamine B 1 in the form Benfotiamine which helps the intestines heal, Life Extension MegaBenfotiamine. Thiamine is needed to activate Vitamin D.   Low thiamine can make one feel like they are getting glutened after a meal containing lots of simple carbohydrates like white rice, or processed gluten free foods like cookies and pasta.   It's rare to have a single vitamin deficiency.  The water soluble B Complex vitamins should be supplemented together with additional Thiamine in the form Benfotiamine and Thiamine TTFD (tetrahydrofurfuryl disulfide) to correct subclinical deficiencies that don't show up on blood tests.  These are subclinical deficiencies within organs and tissues.  Blood is a transportation system.  The body will deplete tissues and organs in order to keep a supply of thiamine in the bloodstream going to the brain and heart.   If you're low in Vitamin D, you may well be low in other fat soluble vitamins like Vitamin A and Vitamin K. Have you seen a dietician?

      I do not know this, but since they are labelled gluten-free, and are not really a product that could easily be contaminated when making them (there would be not flour in the air of such a facility, for example), I don't really see contamination as something to be concerned about for this type of product.
