Gluten Challenge Update

I hope you fit in some of Paula Deen's creations those last 2 weeks for good measure, since the rest of us can't, take one for the team :lol:

Can you even stand it, how Paula eats the food at the end of her shows - esp. the dessets - and you could just DIE from how good she makes it look??? I no longer have expanded cable, so I haven't seen her show since removing gluten...I think it would be a particularly heinous form of torture now...

Eat up, Chelsea.....

Great picture, Julie!

Aw, c'mon, can't we do fried mozzarella sticks if we "bread" them with Potato Buds instead of bread crumbs?

Hang in there, ChelsE!!! You're a tough girl making it this far. I made it 45 days on my gluten challenge and gave up. I almost threw up in public with no warning and that was the end for me. I gave up gluten for good. I wanted a real diagnosis, just like you, but it ended up not being worth it for me. Good luck!

I know, she is so good at that. She enjoys her food so thoroughly, makes my mouth water. It's better you don't have to suffer through that any longer.

That is until Chelse gets her own show on the network and makes us all glorious gluten-free goodies ala Paula, you'll need your cable back for when that day comes.

I only made it for 7 days and started coughing up blood. I figured that it was time to stop.

LOL!!!

Someone's been getting into my dreams again!

Better make sure you get up, cause mine will be one of those random unpopular shows on at 6:30 in the morning

I must say, so far, I'm pretty good at gluten-free southern food. It's in my genes, just like the celiac :)

Haves some Mu Shu Pork w/those pancake tortilla things for me! (Hope you don't get too many tummy problems from this challenge!)

OMG...I love those things. I always ordered those whenever I had Chinese. I can taste it right now...with that sauce on the tortilla. OMG..I had never once thought about those since going gluten-free.

Thanks alot Fiddle-Faddle!!

Just kidding...but I will be thinking about them the rest of the day. ;)

ChelsE...eat some for me too!! :D

Hmmm....maybe I should do a challenge myself. :lol::lol:

The gluten challenge sounds horrific, I'm sorry you're having such a rought time.

I'm scheduled for a biopsy July 18th and though I haven't deliberatley cut out gluten I do eat low carb, so I don't get alot of gluten in my diet. Do you think a week of the gluten challenge would help the biopsy show if it's gluten intolerance?

Biopsies are hit and miss. If it comes back negative you have the choice of going gluten free or not. I recommend gluten-free though. We were tested by enterolab, which is expensive but more sensitive than the blood test and can catch an intolerance before it does a lot of damage. www.enterolab.com if you want to check it out.

I think you need to eat the equivalent of three slices of bread everyday for three months in order for the biopsy to be accurate, but I could be wrong...I've never had one...

Thank you for your input. If I ate that much bread for that long I shudder to think what I would weigh as I don't have the weight loss with this, (whatever it is) like most those who have celiac. But, I think I'll make sure I get gluten for the next week, just in case. Thanks again.

loradatadine prevents hives my niece takes it daily per allergy doctor. She had unexplained hives every day, and she takes one a day, and they have'nt returned. unless ofcourse she skips a dose. It is generic carried at all stores, walmart, meijer ect... in allergy section

One week either way will not make a difference.

Chels.... I dont think that sounds like much fun :( hope you get a nice pretty answer at the end to remove all your doubts!

Hello, I was very stick,  with flu like symptoms, but my virus panel came back negative and we couldn’t figure out what’s going on. The doctor then added a celiac panel.  Has anyone ever had such a dramatic change?  What are the odds this is true celiac I am going to have an endoscopy, but it’s expensive and I just feel like why can’t the labs be enough?

Eating out in general is full of risks, but this article may help:

This kind of question is always difficult to give a definitive answer to because of so many variables. One such variable is the sensitivity of the individual celiac to small amounts of gluten cross contamination. An amount that causes a reaction in one celiac many not in another, or at least not be discernable which, of course, does not exactly equate to being "safe".

I don't live in the US, but based on this thread, I wouldn't risk it:   https://www.reddit.com/r/glutenfree/comments/1n2ehw8/cracker_barrel/   This app is helpful: https://www.findmeglutenfree.com/

I see that Cracker Barrel restaurants have a gluten free menu (not all locations, but one confirmed that they do). I was wondering if it is safe for my 5 year old son with celiac disease?
