Good! I'm not the only one, I appreciate all the honesty....Besides your kidding yourself if you say there isn't one thing you miss eating, thats just not the same made gluten-free.... :P I'm letting the kids have a pizza night, I will be making my first gluten-free pizza tonight, wish me luck....

Hey. Im New

I miss bread. However the last few years ( I was diagnosed at 6 and am now 19) I have been bad. I dont get sick unless I eat a lot, however I have been trying very hard lately to be good as I dont want end with problems later.

I live in Australia.

When I go to Mcdonalds I have started asking them to make me a burger without the bun. They put in one of the pancake containers for me. The patties here are 100% beef, so it is only the bun that is bad. When I go to subway I get one of there salads.

Even Though I can eat more than most people without feeling ill, It still annoys me that I can't have a (decent) sanwich for lunch everyday if I want it.

The other thing that really annoys is that the food seems to be more expensive :angry:

I have to agree with you...The food is expensive. I was only diagnosed 3 weeks ago but I've spent double what I would normally spend on food just in the last 3 weeks! I know that buying things off the internet by the case will be less expensive but I'm still in the stages of deciding what I like and don't like. It's crazy......

Nancy, I've seen frozen gluten-free nuggets at Wild Oats, I can't remember who makes them, but I can find out for you if you can't find them.

Ian's makes some chicken nuggets that tasted normal (or would have if my Mom hadn't screwed up the time on the microwave) I got some fish sticks from them and they were good too. I made them in the oven but they have directions for both microwave and oven. :) Kendra

Yes!!! I forgot about those. There's nothing that comes close to that in texture and ease of use. I like the Food for Life ones quite a bit for flavor, but they're hard to work with. I end up just taking the pieces and putting a bit of whatever filling I'm using on each piece and rolling and eating as I go. Works okay, but not the same.

Oh! me too, there is a place here in town called los baez, they make fresh tortillas like no other, I've been eating them since I was a kid. :( (Oh and pretzels and beer) :P

I have been gluten-free for over 2 1/2 years and I only miss 2 things. Spuds Fish and Chips in Seattle and all the gluten filled appetisers that PF Changs has on their menu. According to Lynne (tiredofdoctors), I can NEVER cheat because of the gluten ataxia that I have. When she first told me this, I still had some hopes that maybe down the line I could go to PF Changs for those appetisers just one more time. Then a couple of months ago, I took one pill that had gluten in it (was suppose to be gluten-free) and I now have some neuro problems in both legs. So, I will just dream. Maybe a few more years and I won't even miss those two things. Life is made up of choices and not all of them are what we desire.

I miss all bread items most especially. Bread, pasta, you name it. Mostly missing the normal way of heating pasta up. And missing toast. Especailly missing Annie's Soft Pretzels, been craving one for months!!!!! Anyone have a recipe for Soft pretzels????

I miss Krispy Kreme doughnuts . . . at night, when they're hot, right off the conveyor belt. Mmmm....... I also REALLY miss my mom's homemade apple pie. She makes the best pie crust I've ever tasted. Nothing compares. And potstickers. They're REALLY good!

Ugh! I just remembered several of my mom's recipes I can't have now. Now thats something you can't buy in a store or a fast food chain. Maybe I will get together with her and we will revise some things just for me...

This is one thing I definately don't miss... nearly every tortilla dish tastes better and has a better texture (to me) with pure corn tortillas.

If you want them bendier and can't be bothered making them then they can be brushed with water and stuck in a micro on low heat for a short time.

  • the convenience of eating whatever I want, wherever I am while shopping, etc
  • the ability to get carry out for supper after a long day (without worrying about CC)
  • being able to sit down and order a meal without having to talk with mgmt and explain gluten and choose carefully and still worry about whether or not I'll get sick

I also miss Pizza Hut pizza crust (Pamela's Amazing Wheat Free Bread Mix makes great pizza crust, but it's not the same as Pizza Hut). I miss the luxury of a good hamburger/hotdog bun that I don't have to make myself. I miss flour tortillas (and haven't found a corn tortilla yet that I can eat...although I can eat all other corn products). I miss being able to walk into a grocery store to buy whatever I want.

I don't miss being sick.

Have you tried real latin american tortillas?

Soaking the maize in lime water is important because it liberates the vitamin niacin and the amino acid tryptophan. When maize was brought back to Europe, Africa and Asia from the New World, people left out this crucial step. People whose diet consisted mostly of corn meal often became sick with the disease pellagra, which was common in Spain, Northern Italy and the southern United States.

But overall isn't it funny we miss junk food? Everything else is mainly WHERE we can eat not what except junk food.

Have you tried Mission corn tortills? I use them for wraps, enchiladas,etc.

I am trying to figure out what food I miss the most. I have never had any problems with eating or food, fortunetly enough. I have always been a very healthy eater, and consider myself fortunate not to have a "picky" problem like my hubby, or an eating disorder of any kind. I've always eaten right, and splurged occasionally....I am having trouble with the freedom I have lost to eat what I want when I want I guess, even though 9 times out of 10 I wouldn't have eaten it anyway! But, I can say I will miss the occasional old fashioned glazed donut, Kentuky Fried Chicken, and anything salty when I felt like splurging before. So what is your most missed? (and how do I make it now?) recipes wanted... :D

Mainly just something convenient to eat on occasion. As far as the thing I miss the most is beer. I wasn't a big drinker but I did enjoy a cold one every now and then. I have tried the "New Grist" and it is not bad. It is just pricey and hard to get. Somehow wine or a cocktail isn't what I would call a good tailgate/golf course beverage. I'm afraid if I poured a glass of wine in front of my golf group then I would probably get hit by the giant "Milwaukee's Best" can.

Being fairly new the gluten-free (and CF, SF, EF) diet, I miss LOTS...especially since I haven't had enough time to find new things yet. But what's most surprising is that I'm not really *craving* those things...how is that possible??? Every diet I've ever been on has required loads of will power. Now I'm on the most restrictive diet EVER, for the rest of my life no less, and I'm not absolutely insane with deprivation...COOL!!! I just hope that lasts...

That being said, the one thing I do miss is the convenience...eating out, shopping, traveling, cooking, etc. Hopefully with time, patience, practice, and especially improved mental function :wacko: those things will get a little easier.

New to diet and still in a bit of the 'it's not fair phase' and miss most things, but learning to deal with it. I miss sandwiches and my bagels the most. I am starting to acquire a taste for the gluten free pastas that I have found as well as my brown rice wraps, but wow, do I miss REAL bread.....spelt bread, french bread....*sigh*

And of course there is always my Grandma's baked goods : pies, squares, homemade cheese bread, stuffing etc.

mmmm... stuffing! Thanksgiving not far off....does anyone have a good recipe for gluten free stuffing??

I wasn't eating a lot of the gluten-y things beforehand because they aren't healthy, but I pretty much only miss my wife's homemade sub sandwich rolls. They are almost worth getting sick over. Pretty much everything else that I really like, I have found a suitable replacement for.

The thought of a donut now grosses me out. :blink:

I do miss the freedom in eating while traveling. And also not being the "high maintenance" one at family get-togethers.

I'm with Lynne on this one but in fairness my DH told me to stop telling everyone I miss KK doughnuts since I ate about 1 per year and he thinks it's silly to say I miss 1 doughnut a year......guess he's right.

But there is something I had at least three times a year that I miss - Captain D's fish-n-chips meal. It must be one of the worst things on the planet (health wise) for you which is why I very rarely had it. I'm going to have a fish fry (outside) later this month when it's cooler and attempt making fish, fries and hushpupies.....mmm.....sounds good. Now let's just hope it's edible. I have Zataran's coating which we used on shrimp and it was great.

All_About_March - we have always made cornbread dressing, if you make the cornbread from scratch, you don't need flour so it's naturally gluten free. Also, reg. Swanson's chicken broth is gluten-free (not all are) and we use that in the dressing. If you want some fantastic recipes go to www.epicurious.com and you'll find anything you can think of, and several variations of every recipe to choose from. I could not live without that site to keep our meals interesting. I found the best crab cake recipe ever on there.

The two things I miss the most are beer/ale and pizza. I tried gluten free versions of both and they just aren't the same. I ate pretty healthy before going gluten free, but I still miss my occasional junk food. And one thing that I would love to have is a cheeseburger with a regular bun. I made a patty melt recently with gluten free bread. It was good but just not the same.

I can't eat much, so I miss a lot of things but the only food that I really, really miss are tortilla chips (they have too much fat for me to digest).

Regarding the flipping of the ravioli......I am honestly not sure WHY I do that.......it may not be necessary. I just wanted to make sure both sides were good and cooked. The first few times I made them they were very messy, falling apart and all, but I have found the right thickness now and they are a bit thicker than old ravioli, but they are trully delicious.

I use one whole chicken cooked and shredded and run through the food processor. A jar of cheese sauce, I like one with sun dried tomatoes, can't think of the brand right now. and parmesan (fresh is obviously best, but the can is fine). Mix that all together and spoon onto the ravioli rounds. Make sure you pinch the ends closed really well and lay them out singly, do not stack, they will stick. I have used the Chebe plain mix and the flavored, just don't put in any baking powder....

Real tortilla chips are just cornmeal (treated with an alkaline), water and salt.

6% fat is very low.... so I can't see how it could be the fat.

      He is not just a psychiatrist.  He is also a neuroscientist.  And yes, I have already read those studies.   I agree with benfotiamine.  This is short term while glutened/inflammation occurs.  As I had already mentioned, these symptoms no longer exist when this phase passes.  And yes, I know that celiac is a disease of malnutrition.  We are working with a naturopath.

      Thanks for your response.  Everything you mentioned he is and has been doing.  Tobacco is not the same as nicotine.  Nicotine, in the form of a patch, does not cause gastrointestinal irritation.  Smoking does. He is not smoking.  Please do your research before stating false information. Dr. Paul Newhouse has been doing research on nicotine the last 40 years at Vanderbilt University Medical Center.

      Im so frustrated and still getting the run around trying to reprove my celiac disease which my past primary ignored for 25 years.I understand that theres a ray of medical that doctors are limited too but not listening and telling the patient ( me) that im not as sensitive as I think and NOT celiac!Correction Mr white coat its not what I think but for cause and affect and past test that are not sticking in my medical records.I get sick violently with foods consumed, not eating the foods will show Im fabulous. After many blood draws and going through doctors I have the HLA- DQ2 positive which I read in a study that Iran conducted that the severity in celiac is in that gene.Im glutenfree and dealing with related issues which core issue of celiac isn't addressed. My skin, right eye, left leg diagestive issues affected. I have high blood pressure because im in pain.Im waisting my time on trying to reprove that Im celiac which is not a disease I want, but unfortunately have.It  has taken over my life personally and professionally. How do I stop getting medically gaslight and get the help needed to bounce back if I ever do bounce back to normal? I thought I was in good care with " celiac specialist " but in her eyes Im good.Im NOT.Sibo positive, IBS, Chronic Fatigue just to name a few and its all related to what I like to call a ghost disease ( celiac) since doctors don't seem to take it seriously.
