Gluten-fried cheesecake sounds pretty darned good to me, too, and I'm not . . . . ;)

Nothing wrong with getting off-track . . . . seems as though every thread we're on gets that way eventually!

Karen is right about the wintergreen . . . .

Oh, and Wintergreen is the way to go!

Bleck! Reminds me too much of Pepto!

Im so gald to see that we all have learned how to stay on topic on this forum. Cause it would be realy tough to follow this thread if the topics coverd things like hair, poop, and altiods....

...and gluten fried cheesecakes!

Fried anything sounds good ... in fact, anything that's considered garbage sounds good ... doc has me eating very pure right now ... I think I'm treating myself to a bite of a gluten-free donut and a cup of coffee Sunday.

What was the topic anyway? Steve, where are you, this is your thread!

(Homer Simpson pops head in) ..."Mmmmm donuts"

What kind are you having?

I just ordered a case (really 3 boxes) of Kinnikinnick Chocolate glazed donuts from my co-op...they come in on Monday..."Mmmmm chocolate donuts"

Take it easy, don't fall off the wagon. I've never been able to eat just one donut!

We have kind of hijacked this thread (sorry!).

How about this.

The top 10 nice things we can say about Steve's hair.

I'll start.

10) Great color.

9) still thick

I won't fall off too far, I've got too many people who live in my house who are bigger than me ... they won't let me have more than about 1/4 of a donut, if I can talk them into that. It will be a Kinnikinnick with white frosting.

I have a coffee story that's way funnier than the Altoids thread ever was .... I just can't tell you all for a gazillion people to see ... let's just say, it's been a LONG time since I've had a cup of coffee and I'm very distracted by the thought of it ... my husband knows this fact ... and starts talking about it at the funniest times ... and no, nothing to do with Altoids ...

I hope it's going to be a good cup of coffee (fresh ground, quality beans, clean coffee maker, etc.). Would you care if it wasn't at this point?

Wow, I thought it was pretty descriptive!!! Okay, when he was whispering sweet nothings in my ear when ... ummm, well, he was trying to be romantic ... he was talking about coffee, lattes, etc. in a real seductive tone. All due to another day when I was completely distracted by having a cup of coffee. It was hysterical ... I was totally cracking up!:lol: Is that a little clearer?

Ah, missed this one, went back to see what 8 was.

Yes!!! I am a total coffee snob! I'm going to go buy some fresh coffee on Saturday (I was eyeing some arabica beans at Wild Oats, don't tell my husband, don't want him to get jealous of the competition!!! ), some more Vance's Dari-free, and make it in my clean French press!! Is there another way to make coffee???? See why I miss it so much??? Where we used to live they know my name, my kids names, and they'd give me the employee discount at Starbucks!!!!

5) Probably looks cool on a motorcycle @ 60 mph

It doesn't seem like you've put very much thought into this... ;)

Will you be putting it in a travel mug, and heading over to Starbucks to complete the experience?

(cue Cheers theme song) :P

No ... if I wanted a cup of Starbucks, I'd go there!! I'm going to put it in my big, rounded Starbucks mug at home!!! I've been planning this for a week!

In fact, I had thought about doing it last week, but since I was feeling so much better, I chickened out. That could happen again this week. I might just be a lot of talk!

What's that?

Single Serve Machine. It brews coffee using pressure and heat (not like a drip machine), more like how a real espresso machine at a real coffee joint works (with out hte bruning that starbucks does!)

This is the one I got : Open Original Shared Link

I got it free via a specail offer, and Im hooked! :D Draws alot more flavor out of the beans then drip does though so you realy need to use a better bean with it or you will not be happy.

Oh, no, another coffee gadget I don't have!!! I've had an espresso machine since before I ever heard of Starbucks. Mine's a Krup. Is that basically what yours is, or does it make coffee not espresso shots?

4) No roots

I can't get past the thought of a chocolate donut...not sure where I'll go from there...probably another chocolate donut...if I could only locate some gluten-free beer locally I might get crazy...and...and... show up late for work or something

Oh, and Morgan was here last night. This morning before she left, she emptied my freezer of coffee. My hubby asked me later if she had a french press in her dorm room ... I said, "Of course, and I gave her that thing you never use that heats up the water!"

I  notice a reaction to tea bags, possibly due to gluten or other substances. Is this recognizable?
    • trents
The blood tests you had done are not the main ones. The two main ones are the "Total IGA" (to check for IGA deficiency) and the "TTG-IGA". Current guidelines for the "gluten challenge" when people have been gluten free for a significant time period are the daily consumption of at least10g of gluten (about the amount in 4-6 slices of wheat bread) for at least two weeks leading up to the day of the blood draw. That should give you some perspective.

Thank you, really.  I took a test for DGP-IgA and DGP-IgG. Effectively, it is not enough to discard Celiac Disease. I was consuming gluten until then, I only started gluten-free some days ago, when the symptoms became horrible and now I feel considerably better, which is a second confirmation that gluten is the main problem. It's been more than 4 years I have the same suspect, when I first thought gluten was causing me problems, I made a gluten-free diet for a year, I felt really good as never before. However, neither I or my parents were well informed about Celiac disease, so none of us tried to make further exams. My father suffer digestive problems and other members of my family as well. Unfortunately, no one have ever been tested for Celiac disease. I'll have to restart eating gluten in the next weeks, so I can make a serious blood test in laboratory, hopefully between two or three months.

As Scott said, in order for celiac disease testing to be valid, you need to be eating generous amounts of gluten on a regular basis for weeks or months before the blood draw. The blood tests are designed to detect antibodies that the immune system produces in response to the ingestion of gluten. It takes time for them to build up in the blood to detectable levels.

Based on what you've described, it is absolutely crucial that you pursue further medical exams for Celiac Disease and related conditions with a gastroenterologist. Your symptoms—especially the worsening fatigue, loss of muscle mass, neurological symptoms like migraines, and palpitations, coupled with being underweight—are significant red flags that extend beyond typical IBS. The negative home test is not reliable, particularly given your concern about sample contamination and the fact that you were likely not consuming sufficient gluten at the time for the test to be accurate, which is a common issue. While probiotics like Bifidobacterium Infantis can support gut health, they cannot resolve an autoimmune response to gluten or heal intestinal damage caused by Celiac Disease. Your declining blood test results, even if still "in range," further indicate a trend that needs a doctor's investigation. Please do not hesitate to seek a specialist; a formal diagnosis is the first step toward getting the correct treatment, allowing your body to heal, and finally addressing your weight and overall health concerns. This article might be helpful. It breaks down each type of test, and what a positive results means in terms of the probability that you might have celiac disease. One test that always needs to be done is the IgA Levels/Deficiency Test (often called "Total IGA") because some people are naturally IGA deficient, and if this is the case, then certain blood tests for celiac disease might be false-negative, and other types of tests need to be done to make an accurate diagnosis. The article includes the "Mayo Clinic Protocol," which is the best overall protocol for results to be ~98% accurate.
