My 1st gluten-free Dinner Party

So I hosted my 1st gluten-free dinner party on Sunday night for my family. Ok truth be told this was my first dinner party period. Not to toot my own horn (lol), but it was awesome!!!

For appetizers I had edamame (i know that doesn't count as cooking), shrimp cocktail (also doesn't count but hey everyone really liked both of these) and deviled eggs.

Then I made a simple but pretty salad.

For the main course I made Texas pork chops, gluten-free lasagna, sweet potatoes and green beans.

And for desert I made cheesecake with a crust using the graham crackers from the grainless baker. My stepmom actually said her crust was her favorite part of the cake!

All the food was incredible, and totally gluten free!

Way to go girl!!! I love it when we celiacs accomplish something (esp.Food) and it turns out to be good....it all sounded good to me....

I got my order from Joan, I haven't tried the E. muffins yet but I love the bagels & the nut bread..I made a breakfast sandwich with the bagel.Thanks so much for your help & recommending her stuff....

So you like the grainless baker graham crackers? I have tried many things from them but not the grahams...

Congrats! It really seems to amaze people to serve them a full gluten free meal, but it really can be so simple.

I was actually just about to email you and see if you liked the bagels. I actually tried her english muffins (both the plain and cinnamon raisin) at a Westchester Celiac meeting that she was at, an if I didn't know they were gluten free I don't think there would be any way I would know. They were so incredible. You're going to love them. I definately am going to get them the next time I get her bagels.

I love the bagels either with tuna (makes a great lunch or quick, lazy dinner), or with veggie cream cheese. Mmmmm!!!

The graham crackers from the grainless baker are awesome. I don't buy that many gluten free cookies or sweets (I'm more of a cake person than a cookie person, and I bake a lot now), but these graham crackers have become a quick staple. They're cinnamon graham crackers so they satisy that sweet craving when you need it. So good!!

Alright and despite me saying I'm not a big cookie person, I also love they're butterfly cookies. They're like a linzer tarte cookie, but in a different shape. Delicious!

      Hi Everyone,  I do appreciate your replies to my original post.   Here is where I am now in this journey.  I am currently seeing a Naturopath.  One thing I did not post before is that I take Esomeprazole for GERD.  My Naturopath believes that the decrease in the gastric acid has allowed the yeast to grow.    She has put me on some digestive enzymes.  She also put me on Zinc, Selenium, B 12, as she felt that I was not absorbing my vitamins. I am about 5 weeks into this treatment, and I am feeling better. I did not have any trouble taking the Fluconazole.

      I'm sure it's chemically perfect. Most of them taste lousy!

      Hi @JulieRe.  I just found your post.  It seems that I am also experiencing thrush, and my doctor believes that I have fungal overgrowth in my gut, which is most likely candida.  I'm seeing my GI doctor next week, so I'm hoping she can diagnose and confirm this and then give me an antifungal treatment.  In the meantime, I have been working with a functional medicine doctor, doing a candida cleanse and taking vitamins. It's already helping to make me feel better (with some ups and downs, of course), so I do think the yeast is definitely a problem for me on top of my celiac disease and I'm hoping my GI doctor can look into this a bit further.  So, how about you?  Did the candida come back, or is it still gone following your fluconazole treatment?  Also, was it awful to take fluconazole?  I understand that taking an antifungal can cause a reaction that sometimes makes people feel sick while they're taking it.  I hope you're doing better still !

      I'm so sorry you're going through this—the "gluten challenge" is notoriously brutal, and it's awful to deliberately make yourself sick when you've already found the answer. For the joint pain, many people find that over-the-counter anti-inflammatories like ibuprofen can help take the edge off, and using heating pads or warm baths can provide some direct relief for the aches. For the digestive misery, stick to simple, easy-to-digest foods (like plain rice, bananas, and bone broth) and drink plenty of water and electrolytes to stay hydrated. It feels like the longest month ever, but you are doing the right thing to get a clear diagnosis, which can be crucial for your long-term health and getting the proper care.
