I use the Pamela's Baking Mix and make the muffins in the recipe on the side of the bag. Delish!

Betty: My mom has the best banana bread recipe. She makes it in big batches for me and puts them in my freeezer :) I'll ask her for the recipe and see if it would be suitable for you.

We love the banana bread recipe from Carol Fenster. I use the 3T. water/3T. canola oil/2 tsp. baking powder or 1/2c. applesauce to sub for the eggs.

This is the recipe we use. My girls and non-Celiac husband love it! If you want to use egg, the original recipe calls for 2. Just omit the flax meal, and Ener-G. Also, you can substitute a dairy free margarine for the Crisco. That's just what we use. Hope you enjoy!

I have a good recipe that has 2 tbsp milk. I suppose you could substitute that small amount. (Couldn't you?)

I think this has been modified enough to be called mine! It is soooo good we make it every week and often bake it in muffin tins for a really yummy breakfast treat. Here it is:

1/2c brown rice flour

1/2c white rice flour

1/2c tapioca flour

1/4c potato starch flour

2/3c sugar

2t baking powder

2t baking soda

1t xanthum gum

1/4t salt

1/3c shortening

2 tablespoons almond milk

2 eggs

1c mashed bananas (about 2 or 3 banans)

1/2c chocolate chips

mix dry ingredients together then cut in the shortening. add the liquid ingredients to the dry alternating between the almond milk/egg mix and the banana. Beat batter for several minutes on medium speed. Add choc. chips. Pour into greased loaf pan or lined muffin tins. Bake at 375F for 50-60 minutes for a loaf or for about 20 minutes for muffins. Enjoy!!

just wanted to let you know that my original recipe is with lactaid and Fleischmann's unsalted margarine which is lactose free.

I use the regular betty crocker recipe, subbing apple sauce for most of the butter, almond milk for the milk, and a combination of sweet rice flour, sorgum, quinoa or amaranth, and possibly montina.

why didn't i think of that? need to dig out my old cookbook..i use applesause instead of butter and oil in just about everything...the flours i have are white and brown rice, potato flower and potato starch flour...will those work in some way?

I vaguely recall that's there's one of those potato flours you might not want to use - or be careful of the ratio - but I don't use potato for baking, so I'm not particularly helpful there.

I forget who posted it, but the banana peanut butter muffins w/ chocolate chips are so darn YUMMY!! Esp. when warm out of the oven (or microwave)... mmm.. drooling, will have to make some soon. :lol:

I just made your banana muffins last night & they came out great! I had used eggs & milk, and I placed chopped walnuts on top, delicious! Thanks for sharing the recipe!

Also, I had used my "Tom Sawyer's" gluten-free flour for the first time, so I think it's good - anyone else use it? I got a HUGE bag for xmas this year...

Sorry it took me so long to get this to you. It is adapted from my mom's "normal" banana bread recipe (everything in our house is pretty much "adapted")

Banana Bread

2 tsp vanilla

3/4 c sugar

1 1/2 mashed bananas (very ripe, 3-4 bananas)

3/4 c veg. oil

2 eggs, beaten with a fork

2 c "flour" of choice

1 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt

1/2 tsp xanthan gum *can vary thsi depending on results

1/2 c chopped nuts----optional

In a large bowl, mix eggs, banans, oil, vanilla, and sugar. Stir in dry ingredients. Grease mini loaf pans and fill 2/3. Makes 2-3. (Actually, its probably about 3 and one muffin).

Bake 35-40 min.

Cool in pan only a few minutes. Remove from pan and cool completely before slicing.

Note: Bananas can be mashed and mesaured into ziplock bags and frozen. Or, freeze whole in peel and thaw in microwave.

      @Trish G,  I like dates, they have lots if fiber as well.  But what I found helped most was taking Thiamine (in the form Benfotiamine which helps promote intestinal healing), Pyridoxine B 6, Riboflavin B 2, and magnesium, and Omega Three fats. The absorption of nutrients is affected by Celiac disease which damages the intestinal lining of the small intestines where our nutrients are absorbed.  If you have constipation, where your body is rather pushing your food away and not interacting with it, the nutrients in the food are not being released and absorbed.  You can develop deficiencies in all the vitamins and minerals necessary for the body to function properly.   The B vitamins cannot be stored for long, so they must be replenished daily.  Thiamine B 1 stores can run out in as little as three days.  Constipation (or diarrhea or alternating) is one of the first symptoms of thiamine deficiency.  Thiamine needs magnesium, Pyridoxine B 6, and Riboflavin B 2 to make the intestinal tract function.  Thiamine and Niacin make digestive enzymes.  Thiamine provides the energy for nerve impulses to carry messages to the brain and back about digestion.  Thiamine provides the energy for the muscle contractions which move your food through the digestive tract. High calorie meals containing lots of starches and sugars can deplete thiamine stores quickly because more thiamine is required to turn them into energy.   Are you taking any vitamin and mineral supplements?  Correction of malnutrition is very important in Celiac disease.  Thiamine, the other B vitamins and magnesium will help with constipation better than adding more fiber.  What did your nutritionist recommend you take, besides just the fiber?       @kpf, Were you eating ten grams or more of gluten daily in the month preceding your antibody blood tests? TTg IgA antibodies are made in the intestines.  Ten grams of gluten per day for several weeks before testing is required to provoke sufficient antibody production for the antibodies to leave the intestines and enter the blood stream and be measured in blood tests. If you had already gone gluten free or if you had lowered your consumption of gluten before testing, your results will be inaccurate and inconclusive.   See link below on gluten challenge guidelines. Have you had any genetic testing done to see if you carry genes for Celiac disease?  If you don't have genes for Celiac, look elsewhere for a diagnosis.  But if you have Celiac genes, you cannot rule out Celiac disease. You mentioned in another post that you are vegetarian.  Have you been checked for nutritional deficiencies?  The best sources of the eight essential B vitamins are found in meats.  Do you supplement any of the B vitamins as a vegetarian? Deficiency in Thiamine Vitamin B 1 is strongly associated with anemia which can cause false negatives on antibody tests.  Fatigue, numbness or tingling in extremities, difficulty with coordination, headaches and anemia are strongly associated with thiamine deficiency.  Other B vitamins that contribute to those symptoms are Riboflavin B 2, Pyridoxine B 6, Folate B 9 and B12 Cobalamine.  The eight B vitamins all work together with minerals like magnesium and iron.  So your symptoms are indicative of B vitamin deficiencies.  You can develop vitamin and mineral deficiencies just being a vegetarian and not eating good sources of B vitamins like meat.  B vitamin deficiencies are found in Celiac due to the malabsorption of nutrients because the lining of the intestines gets damaged by the antibodies produced in response to gluten.

      Thanks, I'm not a big fan of prunes but did add them back after stopping the Benefiber. Hoping for the best while I wait to hear back from Nutritionist for a different fiber supplement.  Thanks again

      If you were wondering why milk protein bothers you with Celiac Disease.  Commercial dairies supplement the cow feed with wheat, which becomes incorporated in the milk protein. Milk omega 6 to omega 3 ratio: Commercial Dairies: 5:1 Organic Milk: 3:1 Grass fed milk: 1:1

      My TMJ ended when I lost a middle lower molar.  I had an amalgam filling from youth (1960s) that failed and the tooth broke.  I had what was left pulled and did not bother to replace it.  My bite shifted and the TMJ went away.  I just had to be careful eating M&M Peanuts because they would get stuck in the hole.
