Need help in finding a gluten-free cheese to use for mac & cheese receipe.

Brand I used no longer has a Gluten Free label on it.

That was Applegate Farm brand

I like cabot products and have never had a problem with them.

I buy Kraft. They will clearly put "wheat" on the label if their products contain it. I'm sure there are other brands that are Ok but this it is just easier for me to stick to one company that I'm comfortable with.

I use Tinkyada noodles and the powder mix from Kraft Mac N Cheese (throw out the noodles)

yep, I've yet to hear of a whole cheese (with the exception of blue cheese where the molds are grown on bread) that was not gluten free.

The question when I started this diet was the annato. So white cheeses were safe. Yellow were suspect. I don't know the current status of "annato" on our hit list.

At our most recent support group meeting we were told that annato was no longer an issue but I haven't checked on it personally so I'm still being cautious.

Funny you mention annato...I noticed it was in Lactaid brand cheese and looked it up in CSA's gluten-free product list/guide and they say that it's OK - Consistent with a gluten free diet at this time.

They state: "vegetable dye. Maybe labeled as an extract. Often used to color margarine, sausage casing and is used as an ink for marking food products. Coloring agent, bixin, and the alcohol used with annato, however, may be irritants."

Annato is safe for Celiacs.

CSA seems to have been the one to start this annatto thing. It is not and never was as problem as far as gluten.

I don't know, if WalMart (great value) makes cheeses for Mac'N Cheese, but most of their other cheeses say "gluten-free" on the back. I'd give that a try.

:( Our Wal Mart doesn't carry their full line of foods. The people who live around Wal Mart protested the size of their proposed building and Wal Mart agreed to keep the building smaller and not stocking everything that they sell.

Wal Mart is on a highway here in NJ; the area behind the stores on the highway are upper middle income residential area and they have a lot of say-so about what gets built new on the highway. It is also a social issue as it's their way of keeping poor people out of driving thru their neighborhoods to get to the highway stores. Some of the enclaves have installed gates blocking you from getting to the highway stores. That's going to work against them if they ever have a fire and need help from the engine companies from the neighboring towns. Some have made the streets "dead-ends" for the same reason.

There's also a really big A&P close to the Wal Mart and the residents obviously do not have to eat gluten free so what do they care if a Wal Mart carries all their products or not.....

By the way, the highway & the highway stores were here first, so those people buying and building those homes knew that there'd be traffic in and around their streets. The highway is the infamous Route 22 in Union and anyone who's ever lived in NJ will know what I am talking about.

A lot of people do not like driving on Rt. 22 as it's full of crazy drivers - always has been since it was first traveled on. The residents of the area are unrealistic if they think that limiting the size of a mega store will hold traffic down: so far it has not worked because next to the Wal Mart is a new Home Depot.

Rt. 22 is actually miles and miles of stores running east to west with a center island in the Union Township portion which has stores on the center island as well.

The stores on Rt. 22 have been around since before I was born. There used to be a store on the center island in the shape of a steamship; for years it was a dinner/club then a men's clothing store, then an electronics store; it was a place to go just to look at it like an attraction. It was torn down 10 years ago & rebuilt as a ship again.

So those people who live off of Rt. 22 get all that traffic despite trying to limit it. I can understand not wanting the extra traffic but it's unrealistic as this area of the state/country is very over congested and overpopulated anyway. Their efforts are like trying to take water out of the ocean drop by drop.

      Cold/flu or gluten poisoning? Hello. I've had another similar episode. I find it very difficult to differentiate between the symptoms of a cold or flu and those caused by gluten poisoning. In fact, I don't know if my current worsening is due to having eaten something that disagreed with me or if the cold I have has caused my body, which is hypersensitive, to produce symptoms similar to those of gluten poisoning.

      I'm no longer dealing with constipation. I got my liver test last month and it was in normal range. Two years ago I did have a vitamin D deficiency but I'm know taking vitamin D3 pills. Last month I got my vitamin D checked and it was in normal range. I don't believe I've had my choline checked. However, I do drink almond milk eat Greek yogurt on a daily basis.

      Non-Celiac Gluten Sensitivity (NCGS) can be associated with low ferritin and iron deficiency. Once Celiac Disease (1% of the population affected) has been ruled out by tests the next step is to check for Non Celiac Gluten Sensitivity (10% of the population affected) by eliminating gluten for a trial period, then re-introduce Gluten Challange. Have you been supplementing Iron? How are your liver enzymes? Low levels of ferritin indicate iron deficiency, while  59% transferrin saturation indicates high iron levels.  Possibly indicating Fatty Liver Disease.  Choline is crucial for liver health, and deficiency is a known trigger for Non-Alcoholic Fatty Liver.  Some experts say that less than 10% eat the the Food and Nutrition Board established Adequate Intake that are based on the prevention of liver damage. Severe constipation and hemorrhoids may be linked to a bile or choline deficiency.  "Ninety-five percent of phospholipids (PLs) in bile is secreted as phosphatidylcholine or lecithin."  Fatty acid composition of phospholipids in bile in man   Deficiency of these bile salts causes the bile to get thick. Some people with Celiac Disease are misdiagnosed with Gall Bladder bile issues.  Removal of the gallbladder provides only temporary relief. Whether or not celiac disease or NCGS are your issues you need to look at your vitamin D blood level.

      If you have hemorrhoids 1x weekly I don't see how you have time to heal from one episode before you experience another one, unless each one is a very minor event. Have you consulted a physician about your hemorrhoid issue? It's not normal to be having an episode every week unless it is really one episode that is not completely healing between weekly flareups.
