So my cousin is gluten intolerant, and her birthday is comming up next month. I wanted to surprise her and make her either a gluten free cake or brownies (I have seen the gluten free mixes at the store, so im not too concerned with that)-- i am concerned about the toppers for either. I wanted to either spell out "happy birthday" and her name-- in either icing or those little candies that are in the shapes of letters that are meant to top cakes-- Does anybody know if these products are gluten free? If not, does anyone have any gluten free cake/brownie decorating ideas for me?

Any help would be greatly appreciate ;)

Guhlia (Angie) is the Queen of Baked Goods. I am sure that she will fill you in.

What a wonderful effort you are making. :)

Wilton is VERY good about letting you know what has gluten in it. Figure out what you would like to use, and call Wilton. They are GREAT about disclosing information.

Some types of Cherrybrook Icing is gluten free - it says it on the box.

Just be VERY careful about cross contamination.

Don't use wooden spoons or nonstick pans which have been in contact with gluten.

Make sure there are no crumbs lying around before you start baking.

Check your pan spray, some contain flour.

It would be a shame to go through all the trouble of making a wonderful gluten free surprise, only to have it make her sick from accidental cross contamination.

A friend of mine went to all the trouble to do a gluten-free cake for me, there was also a regular cake for the regular folk. Luckily I physically grabbed her hand before the cake cutter went from the Gluten -full cake into the gluten-free! She couldn't believe she would do that, but it is SOOOO easy to cross contaminate when you don't have to watch for it everyday. And those little folded corners in the square cakepans, or the handy dandy little rotating bars in the bottom of older round cake pans, hold onto crumbs and may put them into your gluten-free masterpiece.

Chocolate can be melted in a baggie, the corner cut off to make a small piping bag, and you can write your message. Hershey is gluten-free and readily available. Ghiradelli is gluten-free and better...

You can use candies to decorate, esp. if they don't have any other intolerances (soy, dairy, corn, et cetera). Skittles are gluten-free and casein free. M&Ms are gluten-free.

If you are making brownies, you can melt chocolate bars as a topping.

And you're really, really nice. :)

This treatment looks promising. Its aim is to provoke immune tolerance of gluten, possibly curing the disease. It passed the phase 2 trial with flying colours, and I came across a post on Reddit by one of the study volunteers. Apparently, the results were good enough that the company is applying for fast track approval.  Anokion Announces Positive Symptom Data from its Phase 2 Trial Evaluating KAN-101 for the Treatment of Celiac Disease https://www.reddit.com/r/Celiac/comments/1krx2wh/kan_101_trial_put_on_hold/

Hi everyone  This has been a crazy year so far... How many people actually get entire sensory overload from gluten or something similar ?  My jaw is going nuts ..and that nerve is affecting my upper back and so on ...  Bones even hurt.  Brain fog. Etc  I had eggs seemed fine.   Then my aid cooked a chicken stir fry in the microwave because my food order shorted a couple key items .   I was so hungry but I noticed light breading and some ingredients with SOY !!! Why are we suffering with soy ? This triggered a sensitivity to bananas and gluten-free yogurt it seems like it's a cycle that it goes on.  The tiniest amount of something gets me I'm guessing the tiny bit of breading that I took one tiny nibble of ...yikes ..im cringing from it .. Feels like my stomach is going to explode yet still very hungry 😔  How long does this last?! Thank you so much

I have had orthodontic work done. The 3M invisalign material was no problem. BUT my retainers are another matter. They seemed okay for a few months. Now, however, they cause a burning sensation on my tongue, gums and insides of my lips. The burning sensation is now spreading to my throat. I notice it when I breathe. This is annoying and interferes with my enjoyment of eating. I am visiting with my provider tomorrow. We'll see where this goes from here.
