I Just Made A Chocolate Cake !

I have just made my first gluten-free chocolate cake and it worked ! It was a bit crumbly yesterday but overnight it improved ( thanks pantry fairies) and today its yummy. My frosting mix was made from wheat so yesterday I didn't ice it - but did today with a gluten-free icing mix and ....yummo !

The recipe is on an Australian gluten-free bake mix ( flour ) packet. Can I post that here ? The bake mix could be substituted for an American one.

Congratulations on your first not only edible, but delicious chocolate cake! You must be very pleased.

Moist Chocolate Cake

1 3/4 cups gluten-free Baking Mix Flour ( Australian Healtheries Simple Baking mix)

1/4 cup gluten-free cocoa

1 1/4 cups sugar

1 1/2 teaspoons gluten-free baking soda

1/2 teaspoon gluten-free baking powder

3/4 cup oil

2 eggs

1 cup water

1 1/2 teaspoon gluten-free vinegar

Mix all wet ingredients together and whisk to combine.

Mix all dry ingredients together and stir to combine.

Combine wet and dry ingredients and beat for several minutes to give a smooth batter.

Pour batter into greased and paper lined tin.

Bake for 1 1/2 hours at 160C.

Cake is ready when skewer test comes out clean. Leave in tin for 10 mins and remove slowly.

The baking mix has rice flour, maize starch, tapioca starch, sugar, raising agent (450, 500), vegetable gum ( xanthan gum )

I didn't have gluten-free vinegar on hand so used rum instead :P . And I used a ring tin, and baked for 50 mins only.

Georgie, I did enjoy. That is exactly the same cake I cooked for my first gluten free attempt. We get Simple flour here as well in NZ. I like it because it has no soy or dairy in it.

I made a slice today, and it was not a success so I won't pass on the recipe! Too much butter in it! I am also in the throes of making a Simple loaf of bread, in the breadmaker and that always comes out never fail. I use the one with the egg, again it is on the packet.

My favourite recipe on the baking mix packet, which I keep coming back to is the berry muffins, which I put blueberries in. Yummy, and there is hardly any fat in them. They are good to freeze. Actually as I am the only gluten-free in the family, I tend to freeze the bread as well.

I would love the slice recipe but I am dairy free at the moment :( I tried the bread mix in my bread maker but it didn't work. My hubbie has made up a new recipe now. I must try those muffins - they sound good !

Georgie you could always replace the butter with margarine. That doesn't have dairy does it?

The slice is so bad, I will have to try it again and modify it before I would even give out the recipe. As it was I cut down from 150g of butter to 100grams and it was still too oily! It wasn't a Healtheries one, so that is good.

I've just found a double chocolate brownie (dairy free)

It uses simple flour.

Double Chocolate Brownie

2 cups caster sugar

1 cup healtheries simple baking mix

2/3rds cup of cocoa powder

125g dairy-free dark chocolate bits

4 eggs beaten

1 cup flavourless oil, eg rice bran

2 teaspoons vanilla essence

To serve

dairy free ice cream

50g dairy-free chocolae bits, melted.

Preheal the oven to 160 celcius. Line a 27fm by 18cm brownie pan or 22cm square cake pan with baking paper.

Combine the sugar, sifted baking mix and cocoa and chocolate bits in a bowl.

Add the beaten eggs, oil and vanilla and fold in until evenly combined.

Pour mixture into the pan and bake for 40-45 minutes

Do not over cook - the brownie should still be fudgy in the centre. Cool in pan.

It sounds devine, but I still have some horrible brownie left, so I will have to make it another day.

      Thank you so very much Scott.  Just having someone understand my situation is so very helpful.  If I have one more family member ask me how my little itchy skin thing is going and can't you just take a pill and it will go away and just a little bit of gluten can't hurt you!!!! I think I will scream!!

For a more specific direction, connecting with a dedicated celiac support group (online or locally) can be invaluable, as members exchange the most current, real-world tips for avoiding cross-contamination that you simply won't find in a pamphlet. You have already done the hardest part by getting a correct diagnosis. Now, the community can help you navigate the rest. If you have DH you will likely also want to avoid iodine, which is common in seafoods and dairy products, as it can exacerbate symptoms in some people.
