I Just Made The Best Corn Muffins!

These were better than the real thing! My family couldn't get enough of them.

Sour Cream Corn Muffins

1 cup Pamela's gluten free baking mix

1 cup cornmeal

2/3 cup sugar

1 teaspoon baking powder

1 teaspoon baking soda

1/2 cup sour cream

1/2 cup buttermilk

1 TBS oil

1 egg

Mix all ingredients and divide among 12 greased muffin cups (I sprayed with Pam). Bake at 375 degrees for 20 minutes.

Sounds good. I used to make Jiffy corn muffins all the time. You don't realize most corn muffins/corn bread is mostly wheat flour until - well you know.

It's funny--my husband was saying the same thing..."they're corn muffins, why would they taste any different?" You really DON'T think about it until you start thinking about it!

I have a french bread recipe that I'll post for you tomorrow, lm--you seem to be quite the baker. I'm on the wrong computer tonight, but again, my family loved it. Tasted just like the real thing!

Have you tried coconut milk/cream? Also, I've found nut meals/flours to work very well in place of dairy in baking. You can also grind your own nuts with a little water until they form a fine paste, or whatever thickness you need. Then use it just like butter or milk. Of course you'll need to adjust the liquids, but it can work well.

Thank you so much for the recipe! I'm new at gluten-free baking, and last night was my first attempt to make corn bread. It was too fluffy and kind of bland. A good recipe is much appreciated. :)

      Hi everyone  This has been a crazy year so far... How many people actually get entire sensory overload from gluten or something similar ?  My jaw is going nuts ..and that nerve is affecting my upper back and so on ...  Bones even hurt.  Brain fog. Etc  I had eggs seemed fine.   Then my aid cooked a chicken stir fry in the microwave because my food order shorted a couple key items .   I was so hungry but I noticed light breading and some ingredients with SOY !!! Why are we suffering with soy ? This triggered a sensitivity to bananas and gluten-free yogurt it seems like it's a cycle that it goes on.  The tiniest amount of something gets me I'm guessing the tiny bit of breading that I took one tiny nibble of ...yikes ..im cringing from it .. Feels like my stomach is going to explode yet still very hungry 😔  How long does this last?! Thank you so much

      I have had orthodontic work done. The 3M invisalign material was no problem. BUT my retainers are another matter. They seemed okay for a few months. Now, however, they cause a burning sensation on my tongue, gums and insides of my lips. The burning sensation is now spreading to my throat. I notice it when I breathe. This is annoying and interferes with my enjoyment of eating. I am visiting with my provider tomorrow. We'll see where this goes from here.

      Exactly which blood tests were done? There are a few different ones and some docs don't do them all. Also, your results and reference ranges for each?
