Crock Pot Or Time Bake Recipes?

Does anyone else have a busy schedule and need to get dinner made in the morning before work or ready the night before? I need some new recipes that are gluten-free, dairy free and soy free. Does anyone have anything they'd like to share?

Here's what I already do:

Time bake: Roast chicken and potatoes, chicken in curry sauce and rice, chicken with a sort of "teriyaki" sauce and rice, various kinds of meatballs in sauce

Crock pot: stew, chicken and vegetables, meat in barbecue sauce, porcupine meatballs

I also try to make some things ahead (like meatloaf, meatballs) and put them in the freezer raw so I just have to thaw and bake.

I hope some of you are more creative than I am. I know I used to make more, but I can't seem to find my old recipe file and I'm in a rut.

I "borrowed" this recipe from a friend, but I consider to be mine as well now, because I make it so much. It's the easiest recipe ever. Put boneless chicken breasts in a crock pot, pour in a jar of salsa (or two) and cook on low for 6 or so hours. When you're ready for dinner, shred the chicken and you have intstant filling for chicken tacos. My kids LOVE this. ( I used Green Mountain Gringo Salsa, the roasted garlic flavor - it has a great flavor and no large "chunks", which my kids object to.)

My friend also does a variation of this to make chicken chili. She adds a jar of salsa, a can of diced tomatoes with juice, black beans and corn. That's also *very* yummy!

I use my crock pot all the time and am looking for new recipes too! :)

A favorite here is Italian Potroast: Brown a chuck roast on both sides with a little garlic salt and worchestshire sauce. Put in the crockpot with either a large jar (I use Classico) of spaghetti sauce or stewed tomatos and your favorite italian herbs. Cook an low all day long. Serve on your favorite gluten-free pasta.

You may already use a version of this receipe but I'll post anyway.

1 roast ( I use tri-tip)

Baby Carrots

Peeled and sliced Potatoes

Salt, Pepper, All Purpose Spice and Garlic Powder to taste

1/2 cup water

Put ingredients in crock pot. Cook on low 9 to 10 hours.

I discovered that if you take a london broil, put in one can of cream of anything (which you can sometimes find with only rice flour added, Health valley makes some good soups, or maybe you could add a few tablespoons of milk alternative) and then enough tomatoe soup to cover the meat, wow is it tender and not dry at all, the way pot roast can be. Just cook on low in the crock pot for 8-10 hours. Oh, and I add a bunch of seasoning, lemon pepper, oregano, salt, parsley and garlic. The sauce is really good for dipping the Whole Foods gluten free bakehouse cream biscuits!

Either Health Valley in the can, I like the garden veggie one cuz it's tomato soup and has veggies which add a nice flavor (still check labels) or the boxed ones in the health food section at Stop & Shop, which is my New England grocery. Pacific and Imagine are the boxed brands. The straight tomato soup you use can't have rice flour though, so you might have to stick with the canned tomato, and then add the boxed tomato for the 'cream' soup. I've found that as long as it's got rice flour added it acts like the cream of anything soup you need for the recipe, but I don't have dairy issues so I just use cream soups. The original recipe called for cream of mushroom but I hate mushrooms, so celery or broccoli is what I usually do. But ALL the mainstream tomato soups have gluten, trust me, I've checked....... Only some of the 'health food' ones are safe.

I have a great crock pot cookbook. It is not specifically gluten-free, but many, many of the recipes have no gluten in them. For most recipes, there are no substitutions needed or I can simply substitute a gluten free soup or other ingredient without affecting the taste!

Crock pots are God's gift to the busy cook! :)

Pork - country spareribs or tenderloin or chops - just dump in crockpot with sauerkraut to cover, let cook on low all day. Serve with mashed potatoes. Might be an acquired taste if you weren't raised on Pennsylvania Dutch or German cooking.

Also works well: pork with barbecue sauce.

Hey, I'm hoping this may help you. I know that this is Gluten free, but I'm not certain about the Soy or the Dairy. I get the Banquet brand Crock Pot Classics (herb chicken and rice flavor) in the freezer section. They have all the ingredients in them. All you add is a little water and let them cook all day. Here is a list of the ingredients on the side of the bag...

Chicken thigh meat, carrots, cooked rice, onions, sauce pouch (water, herb seasoning, [autolyzed yeast extract, modified cornstarch, onion powder, garlic powder, natural flavor (contains yeast extract), dehydrated parsley, spices including turmeric, monosodium glutamate, dextrose and less than 2% polysorbate 80 as a processing aid], salt), green peppers.

Like I said, it's SUPER easy, SUPER cheap, and SUPER good! I hope you can use this...let me know!

Wow, I never thought to check the ingredients of the Banquet crock pot dinners--I always assumed they had gluten! I learn something every day here....:)

We make sure to use gluten-free beef broth, we do add the liquid smoke (if you read the comments on the recipe you'll see that suggestion), and of course gluten-free BBQ sauce--Sweet Baby Rays is AWESOME.

Our family loves pulled pork SO much and it's not even bothersome to just eat it without a bun.

We also make the same cut of meat mexican style with some gluten-free taco seasonings (we like Ortega). You can toss it in a taco shell or corn tortilla when ready to serve.

We are a very busy family and especially in the fall and winter we use our crock pot at LEAST once a week.

Chili is another thing you could pull off gluten-free/CF/SF if you needed to. We do brisket in the crock pot a bit, too. Add potatoes, gluten-free beef broth (we used to use beer, might try some gluten-free beer instead of broth this winter), carrots, onions, celery, Heinz chili sauce, and lotsa lotsa garlic. It's SOOOO nice to come home to a nice already cooked hot meal on a cold day!

I'm going to check out those Banquet meals! Those would be awesome in a pinch and it is REAL FOOD!!!

I've been told that Heinz Tomato Soup is gluten-free, but haven't found any in our stores to check the ingredients. Progresso makes a gluten-free Cream of Mushroom, but you have to like mushrooms because there are a lot of them!

I make Carne Guisada in the crock pot and it's so easy. You can cut up the beef into small chunks or just throw it in whole and shred with a fork after it cooks.

Take a roast and throw it in the crock pot. I do use a boneless one. Cut up an onion and a bell pepper into small chunks and put on top of the meat. Mince up a clove of garlic and add that. Put a can of Rotel mexicali tomatoes (yes they are gluten free) in a bowl and add a crumbled up Knoor bullion cube (beef or chicken) (Yes they are gluten free) and a couple of tablespoons of what ever thickner you use. I used to use cornstarch until I developed a sensetivity to corn now I use tapioca. Mix this up and dump it on top of the veggies and cook on low for 8 hours. If you plan on being gone longer add 1/2 a cup of water. Stir to combine before serving. Serve with corn tortillias or eat it plain. I usually add some refried beans and guacamole to serve with this.

      He is. Which makes everything even more difficult. I’m not a believer in “staying for the kids” but I have nowhere to go and it’s not just me, it’s me plus my babies. We live in a beautiful place, lots of land in the country and me and the kids love the place we’ve called home for their entire lives. But Im seeing that he’ll never change, that my kids deserve a happy healthy Momma, and that staying in this as is will be the early death of me. Then I look at the scars covering my entire body…this disease and the chronic stress I’ve been enduring for years that tell me I’m no longer beautiful and no one will ever look at me with interest again. I try self care, try to give myself grace so I can just start loving myself enough to gain strength but the slightest sparkle in my eye and skip in my step attracts his wrath and it all comes crashing ten fold. Life is just absolutely railing me from every single direction leaving me wanting to wave that white flag bc I don’t feel like there’s much hope no matter what happens.

      Hi, I was recently diagnosed with Celiac and dermatitis herpetiformis after years of suffering without answers. I lost my mind. I lost my job. I lost so much time. I lost Me. Conventional doctors are opulent come near me and the one who did sat across the room, misdiagnosed me, pumped me full of steroids which collapsed my entire hip for 6 months. So without answers I began my holistic journey. Fast forward a couple of years and still struggling with a mysterious whole body itchy, crawling “skin hell”, perfect teeth now deteriorating, thick hair now thinning rapidly and no more than a day or 2 at most relief….An acquaintance opened up a functional medicine practice. Cash only, I found a way. Within a month tests clearly showing my off the charts gluten allergy/sensitivity as well as the depletion of vital nutrients due to leaky gut and intestinal damage. dermatitis herpetiformis was more than likely what I was experiencing with my skin. I was happy. I thought this is easy, eat healthy Whole Foods, follow the diet restrictions and I finally get to heal and feel confident and like myself again very soon! 😔 Supplements are very pricey but I got them and began my healing. Which leads to the other major issue: not working, stay at home Mom of young kids, entirely financially dependent on my man of 7 plus years. He’s never been supportive of anything I’ve ever done or been thru. He controls everything. I’m not given much money ever at a time and when he does leave money it’s only enough to possibly get gas. His excuse is that I’ll spend it on other things. So my “allowance” is inconsistent and has conditions. He withholds money from me as punishment for anything he wants. Since being diagnosed, he’s gained a new control tactic to use as punishment. He now is in control of when I get to eat. He asked for proof of my diagnosis and diet bc he said I made it up just to be able to eat expensive organic foods. Then after I sent him my file from my doctor he then said she wasn’t a real doctor. 😡. I go days upon days starving, sometimes breaking down and eating things I shouldn’t bc I’m so sick then I pay horribly while he gets annoyed and angry bc I’m not keeping up with all the duties I’m supposed to be doing. His abuse turns full on when I’m down and it’s in these desperate times when I need his support and care the most that I’m punished with silence, being starved, ignored, belittled. He will create more of a mess just bc I’m unable to get up and clean so that when I am better, I’m so overwhelmed with chores to catch up that the stress causes me to go right back into a flare from hell and the cycle repeats. I’m punished for being sick. I’m belittled for starving and asking for healthy clean water. I’m purposely left out of his life. He won’t even tell me he’s going to the grocery or to get dinner bc he doesn’t want me to ask him for anything. I have no one. I have nothing. Im not better. My supplements ran out and I desperately need Vitamin D3 and a methylated B complex at the very minimal just to function….he stares at me blankly…no, a slight smirk, no words. He’s happiest when im miserable and I am miserable.  this is so long and im condensing as much as I can but this situation is so complicated and disgusting. And it’s currently my life. The “IT” girl, the healthy, beautiful, perfect skin, perfect teeth, thick and curly locks for days, creative and talented IT girl….now I won’t even leave this house bc Im ashamed of what this has dont to my body, my skin. Im disgusted. The stress is keeping me from healing and I think he knows that and that’s why he continues to keep me in that state. He doesn’t want me confident or successful. He doesn’t want me healed and healthy bc then how would he put the blame of all his problems on me? This journey has been hell and I’ve been in Hell before. I’ve been killed by an ex, I’ve been raped, robbed, held hostage, abused beyond nightmares but the cruelty I’ve experienced from him bc of this disease is the coldest I’ve ever experienced. I’ve wanted to give up. Starving and in tears, desperate…I found a local food pantry in our small town so I reached out just saying I had Celiac and was on hard times. This woman is blessing me daily with prepared gluten free meals, donations, educational info, people who know this disease and how they manage life and the blessings just keep coming. But it’s overwhelming and I feel like I don’t deserve it at all. He just glared and I know he’s going to sabotage it somehow. I don’t even know what to do anymore. I’m so broken and just want peace and healing.
