Fajita Tacos & Broiled Potatoes

Yesterday we decided to grill fajita meat outside and it was a great idea, instead of the usual rice to accompany the tacos I decided to cook some potatoes, so here's how to get them crunchy, browned and they don't stick to the pan. First line the bottom of the baking pan with aluminum foil, then cover the bottom with oil [i use vegetable oil] don't be scared to put in some more oil if needed, chop the potatoes up in similar sized pieces, drop them in the baking pan, sprinkle salt and roll the potatoes around the oil [use your hands to make it easier] bake at 400F for approximately 35-40minutes, move them around after they've been cooking for about 20mins, once they've cooked for 35-40mins turn on the broiler for 5mins, take the potatoes out, turn them over [you'll need patience to turn them one by one] broil for another 5mins, chop some carrots in it if desired and I also steamed some broccoli to go with it.

For the tacos simply use corn tortillas, chop cilantro or parsley to sprinkle on top, lettuce, tomatoes and lime juice.

And to go with it we found a gluten free beer-like drink called K Draft Cider which is made from apples, it has a slight bitter taste which makes it taste a little bit like beer, my husband even tried it and said it was quite good and it has a higher alcohol percentage than beer [it has 6.9% by Vol.]. I found it at a place called World Market here in Houston, I am sure it can be found elsewhere.

Never would of thought of having potatoes with fajitas, but we used to have breakfast tacos at a little Mexican restaurant, and one of the options was potatoes with scrambled eggs and they were great.

Can't wait to try that 7% alcohol cider, we have World Markets here too. Thanks for the ideas!

i bake potato wedges a lot, but never thought to turn the broiler on the last few minutes. i bet that makes them so much better!
