Sinful Cherry Chip Cupcakes

Gluten, Soy & Dairy Free

cupcakes:

1 cup brown rice flour

1 cup white rice flour

1 cup white sugar

1 ts xantham gum

1 ts baking soda

3 ts gluten free baking powder

3 large organic eggs

1 cup carageenan-free rice milk

1/2 cup oil

1/2 cup chopped dried cherries

1 ts PURE almond extract (or oil)

frosting:

confectioner's sugar

1/4 cup carageenan-free rice milk

1 ts pure almond extract

1/2 chopped dried cherries

Preheat oven to 350F.

Spray or line a cupcake tin (makes 12).

In a mixing bowl, add dry ingredients (all but white sugar). Set aside.

In your stand mixer (or using a hand mixer) cream together, eggs, sugar, almond extract,

rice milk, and 1/2 cup of the chopped dried cherries. Blend well, then add dry ingredients.

Mix thoroughly.

Spoon batter (to about 1/2-in from top) equally in tin. Bake for 12-15 minutes.

Cupcakes will spring back when done.

While cupcakes cool, make frosting.

In a medium mixing bowl, add 1/4 cup rice milk, almond extract, chopped dried cherries

and start by adding 1/2 cup confectioner's sugar. Keep adding, then mixing together more

sugar until you get a thick, semi-fluffy consistency. You want it to not run off the sides

of the cupcakes.

After cupcakes are cooled, frost them.

      The Lindt (Lindor) dairy-free oat milk truffles are definitely gluten-free, and (last time I checked) so are the white chocolate truffles and the mint chocolate truffles.

      Yarrow Pom works really well with the skin issues I found out.I had to stop so my doterra because dealing with medical celiac circus. I had shingles in Feb 2023. Prayers for healing
