Saturday: Grilled chicken with barbecue sauce (Kraft), a green salad, corn on the cob. We'll grill extra chicken to use on Monday.

Sunday: Grilled burgers (Lipton Onion soup and and Worcestershire sauce in the meat), fruit salad, green salad, home fries (toss cut potatoes, skin on, with olive oil and sea salt. Bake until crispy). Oreo Cake for dessert! (recipe will follow)

Monday: Left over grilled chicken sandwiches. Grilled chicken, barbecue sauce, lettuce and pickle on a bun. Gluten free macaroni salad and fruit salad.

Tuesday: Pasta salad with summer sausage, feta cheese, olives, green and red pepper, red onions, corn, and tomatoes. Steamed artichokes on the side.

Wednesday: Tuna fish salad, lettuce, red onion, and cucumber wrapped in a rice flour tortilla. Watermelon.

Thursday: Chicken Parmesan with marinara sauce over noodles, green salad (roll chicken tenders in mayo, then coat. To make the crumb and cheese mixture: pulse one gluten-free hamburger bun in the food processor, add 1 cup Parmesan cheese, a dash of garlic powder, a dash of oregano and basil and pulse again. Bake chicken strips at 350 until brown and crispy, serve on a bed of noodles with sauce over everything).

Friday: Big salad with lots of greens, grilled chicken, cucumber, dark red kidney beans, olives, red onion, blue cheese, bacon bits, and Ranch dressing. Gluten free corn bread with butter.

Most of my dinners are dairy free, but some of them are not. You can just use a dairy free cheese substitute for the parmisan and feta in the two recipes that do have dairy...we use sheep cheese (mizethra) instead of parmisan and goat feta, which my son and I can handle better than cow's milk. The Oreo cake is sort of expensive to do dairy free, because the cream cheese substitute (Tofutti) is expensive...when I post the recipe I'll do dairy free substitutions if you like!

We like Kinnikinnik buns the best. Their hamburger buns or the English muffins (same exact product as far as I can tell!) are both good. I also discovered that Ener-G dinner rolls are pretty good as hamburger buns!! I like them because they hold together well (my only gripe about Kinnikinnik is that the top layer is sort of flakey...tastes good but makes a mess). They are a little smaller, but that works well for us because our burgers end up being sort of small anyway. One note on the Ener-G buns, though...don't let them dry out! They turn rock hard really fast.

Pasta Salad...I make my own dressing. I use balsamic vinegar, olive oil, pressed garlic, sea salt, a bit of basil and dill, and some brown mustard. I never measure (I'm working on that one!) but I'd say about 1/3 oil, 2/3 vinegar and 2 tbs. brown mustard.

Forgot to add...I will often make things and take out part of it before serving it for the people in my family who are allergic...for example, I'll toss the salad first, take out my son's portion and my hubby's, and then add the blue cheese and tomatoes. Then hubby can add cheese to his and son can add tomatoes to his, and neither of them have to pick something out and risk getting sick. It's a pain, and I often choose to avoid the problem foods all together...but sometimes it's worth it!

Thank you so much for posting your menus, RissaRoo. You have no idea what a big help this is. Planning what to make for dinner each night was never my favorite job! And then when I was diagnosed 3 months ago, it really became a problem for me. You have made my life that much easier. You're a doll!

Thank you for saying that, Puddy! I was honestly wondering if they were helpful, so it makes me feel good :o)

I remember those first few months, I think I ate pretty much cooked chicken breast and carrot sticks and nothing else. Even if a menu just gives you some ideas, it can help get your brain going as to what to eat. I promise...it WILL get easier!!! At first, I was afraid to eat anything and it made me nervous trying to shop and cook. Within a few months, you'll be a pro and within a year or so you'll find that you don't miss it too much. In fact, our whole family is eating so much healthier than we used to that I sort of consider the whole thing a blessing in a way.

      In response to your questions regarding probiotics.  I have had Celiac for 40 years.  Stomach issues: digestion, IBS to chronic constipation, bloat after eating anything.  I was unable to eat a healthy variety of foods, tried probiotics supplements - some made me worse, others made no difference.  After reading about people with Crones, IBS, etc, who made their own probiotics I started making Milk Kefir: not water Kefir. There are 10 probiotics in milk KEFIR. After 3 weeks I was able to eat more, no gas, no IBS.  If you have a computer just ask for videos on making milk Kefir. I branched out and make my own Kombucha for even more probiotics. I do not make my yogurt because there are only about four probiotics in that. I started this when I was 82 and I still make my own Kefir and Kombucha. My stomach issues were fixed with the Milk Kefir alone. If you decide to try making it, make certain you order MILK GRAINS. The finished product tastes a bit like Buttermilk. I hope this helps in your journey to good health.

      Help me out here. Lauren Dam gluten-free beer from Spain is listed as gluten free. Yet its made from Barley Malt. I thought barley and any form had gluten. Anybody have any more information about it?

      Ferritin levels.  And see what your hemoglobin looks like too, that will tell you if you are anemic?  You can have 'low normal' levels that will not be flagged by blood tests.  I had 'low normal' levels, my lab reading was. c12, just over what was considered normal, but I had small benign lesion on my tongue, and sometimes a sore mouth, and a consultant maxillofacial ordered an iron infusion for me as he felt my levels were too low and if he  raised them to 40, it would help.   Because you are not feeling 100% it might be worth looking at your levels, then discussing with your doctor if they are low normal.  But I stress, don't supplement iron without your levels being monitored, too much is dangerous.

      Hi Katht -  I sympathize with your struggles in following a gluten-free diet and lifestyle. I found out that I had Celiac Disease a few months before I turned 70. I just turned 89 and it has taken me almost 20 years to attain a fairly normal intestinal  function. I also lost a lot of weight, down to 100 lb. down from about 140 lb. What Trents wrote you was very true for me. I am still elimination foods from my diet. One person suggested you keep a food diary and that is a good idea but it is probably best just to do an elimination diet. There are several ne and maybe one for celiacs. I used one for a while and started with plain rice and zucchini and then added back other foods to see if I reacted or not. That helped a great deal but what I did not realise that it would only very small amounts of some foods to cause inflammation in my intestine. Within the last few years I have stopped eating any trace amounts of hot peppers, corn and soy(mostly in supplements) and nuts, (the corn in Tylenol was giving me stomach aches and the nuts were causing foot pains). Starting an elimination diet with white rice is better than brown rice that has some natural toxins. In addition it is very important to drink sufficient plain water. You can find out how much to drink for your height and weight online. I do have difficulty drinking 48 ounces of water but just recently have found an electrolyte supplement that helps me stay well hydrated, Adding the water and electrolytes may reduce muscle cramps and gag spams you wrote about. . Also buy some anti-gluten enzyme capsules to take with meals. I use GliadinX advertised here. These are a lot of things to do at one time as they reflect my 20 years of experience. I hope you do what you can manage to do over time. Good luck and take care.
