gluten-free/df Dining @ Disneyworld-looking For Tips/help

So, off to WDW in February. I have read all the posts on here about everyone's experiences dining, and it sounds promising. I'm just worried about what my options are with the gluten-free plus DF combo. Not really interested in eating salads the whole time.

I sent an email to the address listed on the WDW site, and am awaiting a response. Just thought I'd get another opinion or two.

Anyway, if anyone has any experience w/ dining at WDW w/ both of these restrictions, I would be interesed in hearing where you ate, what you ate, what your choices were, and how the experience was.

Also, does anyone have any experience eating at SeaWorld? Last time I was there (like 10 years ago), all I remember eating was chicken nuggets and fries...

While I haven't eaten gluten and dairy free at WDW, I have eaten plenty of gluten-free/vegetarian meals and they have been wonderful. We have been to WDW 4 times since I have been gluten-free and we are heading back in February too. Many of the gluten-free breads/pancakes/waffles at WDW are dairy free as well. Someone at WDW will let you know when you hear back from them. I would make a reservation for all of your sit down meals and when you make the reservation, let them know your dietary restrictions. Almost every chef has gone out of his/her way for me to create a custom meal. If you are not eating at a lot of table service restaurants, you may be eating quite a lot of salads, burgers etc. The dining plan is pretty great at WDW. Have a great trip.

I also haven't done DF, but had an excellent gluten-free experience. If you have kids, I recommend the Crystal Palace for breakfast/bruch buffet. the chef came out and took me on a tour of the buffet, pointing out safe and unsafe foots. made me a waffle--gluten-free. really knowledgable and helpful. (pooh characters make the rounds during the meals--great for young kids). I didn't have as great of an experience at the norwegian place for lunch (princess lunch)--at epcot. Most all were really good, and there are guides/blogs you can find by googleing disneyworld gluten free with great recommendations

It was fun for my daughter. the food was pretty mediocre in general, and the servers and staff were way less knowledgeable about gluten free. I felt very much more on my own there than anywhere else. I was glad that I was the only gluten free one. (My daugher was not diagnosed yet). Remember, though, that norwegian food in general is pretty blah. (I live in MN). there were some kids options, which emma liked--but not sure about kid gluten free options. I would just make sure you call ahead. Most places at disney were very responsive to that--we didn't call that one before personally, though the reservations stated I was gluten free.

      As Plumbago mentioned, bleeding in the upper end of the GI track tends not to show up as bright red in color because it gets acted upon by the digestion process and more thoroughly mixed in with food residues that are passing through the intestines.

      @Bronwyn W Working with your medical provider, you could do a complete blood count test. If you were bleeding say from an ulcer in the stomach (and let's hope not), your red blood cells could be low and your hemoglobin low as well. Your stools may show up as the proverbial "dark and tarry," indicative of a bleeding site further away from the anus. Basically, you may be anemic. Your heart may be beating extra fast as a way to compensate for the decreased number of blood cells, your oxygen saturation may be lower than normal on a pulse oximeter, and so on. But talk to your doctor.

      Thank you for this insight. I have had rectal bleeding after glutening and subsequent constipation (+ IBS-C) and always attributed it to internal hemorrhoids (diagnosed). What I wasn't aware of is the possibility of bleeding further up the digestive tract. Please can you elaborate on the causes and symptoms to watch for?

      Be sure to be eating gluten daily until all of your celiac disease tests are completed (at least 2 slices worth of wheat bread per day for at least 6-8 weeks before any blood tests, and 2 weeks before an endoscopy).

      @maylynn, No, I took over the counter thiamine supplements, thiamine hydrochloride, Benfotiamine, and TTFD (tetrahydrofurfuryl disulfide).  My doctors were not very knowledgeable about nutrition and vitamins, and they missed my symptoms being connected to vitamin deficiencies.  I studied nutrition before earning a degree in Microbiology because I wanted to know what vitamins were doing inside the body.  My doctors just prescribed pharmaceuticals to cover the symptoms of poor health due to malabsorption of nutrients. We need more thiamine when we're physically ill, physically active, emotionally stressed and work outside in hot weather.  Thiamine works in concert with the other B vitamins, so all should be supplemented together.  Vitamin D needs to be activated by thiamine.  Vitamin D helps regulate the immune system.   Don't take Thiamine Mononitrate because it is not bioavailable.  The body has difficulty absorbing and utilizing it.   Do keep us posted on your progress!
