Bread Without Xanthum Gum, Is It Possible

I am looking for a bread/roll recipe that doesn't use xanthum gum and can use some the flours and such I've already purchased. Is there such a critter? I feel so discouraged when I find out I am missing one more ingredient and the place to shop is not close by.

I'm no expert on this stuff (yet), but you will need something in your bread to do the binding/structure job of gluten. Xanthan gum seems to be the most commonly used binder, but I've been reading that guar gum does the the same thing in the same basic proportions, and costs a bit less. I've seen some recipes that call for flax seed meal or chia seed meal for binders, but I do not know how (or if you can) substitute those meals for the gums by some conversion formula. Other places I have read that you can use gelatin in many recipes as a binder, following the general rule of putting in twice as much gelatin as xanthan gum. I have not tested this out, however, so don't take it as gospel. So far all I have personally used in no-wheat baking has been xanthan gum.

This recipe is quick, good and doesn't require xanthan gum. Alas, you don't seem to have all of the ingredients, but maybe for future use... This is not my recipe. I got it from the celiac newsgroup. I usually add a tiny bit of olive oil to it. Makes it richer.

Microwave Rice Bread

1/2 cup rice flour

1 heaping teaspoon glutenous rice flour (also called sticky rice flour

and yes it glutten is free even though the name implies

otherwise)

1/4 to 1/2 tsp salt (according to taste)

1 tbsp baking powder

1/2 cup soda water ot carbonated spring water

If I am baking this in the bigger bowl I just put dry ingredients in

the bowl and mix them then I mix in the carbonated water and put it in

the mocrowave immediately for 3 minutes and in a total of 5 minutes

or less I have a soft delicious loaf of bread. This is best eaten

fresh but it is so simple I don't mind baking one whenever I am hungry

for bread. It also makes a delicious hamburger bun it you bake it in

two rice bowls instead.

I have also addapted this recipe to a strawberry shortcake by adding a

bit of sugar (about 1 tbsp) and vanilla. It can also take a bit of

margarine added to it to make it richer. I just go a bit heavy on the

flour or a bit light on the water.

If I have to stay in a hotel I just put the dry ingredients for one

recipe in a ziploc bag and when I get there all I have to do is put it

in my bowl and add 1/2 cup of carbonated water. this is so great since

most hotels have a microwave. This also works with plain water but

since rice flour is hard to make rise using carbonated water makes it

lighter.

Just think this is a great one for kids who hate crusts since it is

crust free. Hope you all enjoy the fresh bread as much as I and my

other celiac friends have. Betty

Thiamax (TTFD) plus a B-complex, and if you want benfotiamine, the Life Extension formula covers that at ~100 mg.

      High fiber can definitely cause sudden GI distress especially if it’s a new addition but accidental gluten exposure can feel similar. Keeping a simple food/symptom log and introducing new gluten-free foods one at a time can really help you spot the pattern.       sorry a bit confused so I should take my B complex along with Objective Nutrients Thiamax for TTFD but what about a Benfotiamine to take. The Life extensions contains Benfotiamine and Thiamine together or im confusing myself. I am trying to see if I take Thiamax what should I take for Benfotiamine. Thanks EDITING after further research I see ones water soluble ones fat soluble. So I guess 100MG as you suggested of Life Extension contains Benfotiamine and Thiamine Hydrochloride. and the Objective Nutrients Thiamax contains TTFD.     would work for me.

      I put on over 12kg by eating protein with every meal, 3 to 5 times a day. Eggs, Chicken, Tuna, Turkey etc. I stay away from too much red meat as it can be inflammatory. Scott is correct. I've come across a bunch of Coeliac PT's on Tiktok and Instagram. They all say the same thing, the key is getting enough protein and consistency.
